Nutritious, satisfying & easy to make? Save this because this Dal Tadka with chickpeas is perfect for weeknight dinners !! It’s not only packed with flavor but a good source of fiber & protein !! Recipe below: FOR THE DAL: In a pot combine 1 cup of rinsed red lentils (split Masoor dal) with 1/2 tsp turmeric powder, 1 can of drained & rinsed chickpeas, 4 cups water & 2 tsp of salt. Bring to a boil, then reduce heat, place a lid on the pot and simmer on low for about 30 minutes. Occasionally stirring in between. FOR THE TADKA: 3 tbsp ghee 6 cloves garlic thinly sliced or finely chopped 1 tsp ginger grated 1/2 tsp cumin powder 1/2 tsp coriander powder 1 tsp red chili powder 2 dried red chilis Pinch of hing 8 curry leaves Heat the ghee in a small saucepan over medium heat until it’s hot and carefully add the rest of the ingredients & cook while gently stirring for about 20 seconds (being careful not to brown too deeply). Once the dal has cooked, toss in 5 oz of roughly chopped spinach, 1/4 tsp garam masala, handful of finely chopped cilantro and the tadka. You can serve it with rice & a simple cucumber, tomato, onion salad ! Green Pea Stew with Smoked Tofu by @dragana_dzajevic (Ready in about 40 minutes / Serves 4) Ingredients 1 medium leek, chopped 1 large carrot, sliced 1 parsnip, sliced 2 garlic cloves, minced 2 cups vegetable broth 1 cup tomato sauce 1 pound green peas 4 ounces smoked tofu, cubed Directions Preheat a stockpot over medium-high heat. Once hot, sauté the leek, carrot, and parsnip for about 4 minutes, adding a few tablespoons of water and stirring continuously. Then, sauté the garlic for about 30 seconds, until aromatic. Add the broth to the pot and bring it to a boil; add the tomato sauce and green peas and turn the heat to a simmer. Let it simmer, partially covered, for about 30 minutes. Ladle green pea stew into serving bowls and top them with smoked tofu. What recipe do you like the most? by @Herbifoods 1️⃣ Sticky Cauliflower Wings 🔥 no chicks were harmed in the process! ⠀ Whether you eat them crispy right out of the oven or coat them in the sticky sauce, this is another delicious way to serve the glorious cauliflower! ⠀ RECIPE - 1/2 head of cauliflower - 2 tbsp oil ⠀ Batter: - 1/4 cup flour of choice - splash of plant milk - 1/2 tsp garlic powder - 1 tsp smoked paprika - 2 tbsp nutritional yeast - salt & pepper ⠀ - 1 cup bread crumbs (I used panko) Sticky sesame sauce: - 1 tbsp sesame oil - 2 scallions - 2 garlic cloves - small piece ginger - 2 tbsp toasted sesame seeds - 3 tbsp soy sauce - 1 tbsp brown sugar - 1 tbsp rice vinegar - 1 tbsp cornstarch (dissolved in water) ❶ Cut the cauliflower into medium sized florets. ❷ Prepare 2 bowls, one with the batter and one with the breadcrumbs. ❸ Coat the cauliflower in the batter, then in breadcrumbs and place on a large baking tray. ❹ Drizzle with oil, then bake at 200°C for 20-30 minutes, until crispy and golden. ❺ For the sticky sauce, sauté scallions, garlic and ginger in sesame oil for a few minutes. Add the sesame seeds and toast a bit longer, then add the remaining ingredients to the pan and cook until thickened. ❻ Add the crispy cauliflower to the pan and stir to coat. ❼ Serve with more sesame seeds, the green part of the scallions and enjoy with rice or however you prefer!

Which  #recipe would you try?👇 🌱 By @That.veganbabe 1️⃣ 🥕🍰 Vegan No Bake Carrot Cake Cups!! 🙌This no bake dessert takes 15 minutes to make, is made completely in a blender & stuffed with a rich cashew icing 🤤 🔖 Make sure to save this recipe for later! ✨INGREDIENTS✨ 1 cup shredded carrot 1 cup walnuts 1+1/4 cup dates 3/4 cups shredded coconut 1/3 cup plant milk 1.5 tsp cinnamon 3/4 tsp nutmeg 1/2 tsp ginger 1/4 cup almond flour - or coconut flour 🧁 For the Cashews Icing 🧁 1 cup soaked cashews 1/2 cup plant milk 4 medjool dates 1 tsp vanilla Pinch of salt 🎉Blend together the ingredients for the carrot cake cups until everything is combined. Add 1 tbsp at a time of plant milk as needed & scrape down the sides while blending but try to add as little liquid as possible! 😋 Divide into 6 or 7 cups and make a small hole in the Center. 𝗦𝗨𝗠𝗔𝗖 𝗥𝗢𝗔𝗦𝗧𝗘𝗗 𝗣𝗢𝗧𝗔𝗧𝗢𝗘𝗦 By theyummyvegan 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: 2 lbs (900 g) of small Gold Potatoes cut in half 1 large Onion sliced and quartered 2 1/2 Tbsp (38ml) of Grape Seed Oil 2 tsp of (10g) of Ground Sumac 1 tsp (5g) of Aleppo Pepper Flakes 1/2 tsp (2.5g) of Smoked Paprika Salt & Pepper to taste 1 tsp (5g) of Baking Soda 𝗟𝗲𝗺𝗼𝗻 𝗖𝗿𝗲𝗮𝗺 𝗦𝗮𝘂𝗰𝗲 (optional to serve with) 1/2 cup (120 ml) Vegan Sour Cream Juice from 1/2 a Lemon 1/2 tsp (2.5g) dried Mint (optional) Salt & Pepper to taste 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀: 1. Bring a large pot of water to boil. Add Salt to taste and 1 tsp of Baking Soda. Add in the Potatoes. 2. Bring back to a boil and let the Potatoes cook for 4-5 minutes or until a fork or knife can pierce them with some resistance. This step will help in browning the Potatoes and forming a crispy layer. 3. Drain the Potatoes carefully and let them sit for a few minutes to dry. 4. Add them to a large bowl along with the Onions and toss with Oil, Sumac, Smoked Paprika, Aleppo Pepper, Salt & Pepper. 5. Spread the Potatoes and Onions out onto 1 or 2 baking sheets making sure not to crowd them. 6. Bake at 400 for 25-35 minutes flipping the Potatoes when there’s about 10 minutes left. Creamy One Pot Lasagna! By @plantbased.traveler Ingredients: 6 lasagna sheets 10 oz vegan mince * 2 heaping tbsp tomato paste 32 oz can crushed tomatoes 32 oz vegetable broth or water (simply use tomato can 👆🏼 to measure) 1 cup unsweetened plant milk (I like extra creamy oat milk) 1 medium sweet onion 3 garlic cloves 1 small carrot 1 celery stalk 1 tbsp olive oil 2 tsp Italian seasoning 1 tsp dried basil 1 tsp paprika 1/2 tsp crushed fennel seeds Salt and pepper to taste Method: Finely dice peeled/washed onion, garlic, carrot and celery. Heat up a small dutch oven (or non stick pot or deep sauté pan), cook vegan mince until browned and crumbled, then set aside. Add olive oil, and sauté diced vegetables for 5-10 minutes until fragrant and softened, then add mince crumbles back to the pot. Add tomato paste, stir for a minute, then add crushed tomatoes, plant milk, broth/water, herbs, and spices. Break lasagna sheets in 2-3 pieces, add them to the pot, and bring everything to a boil. Simmer for 20 minutes, stirring occasionally, or until pasta is al dente. Enjoy! Enjoyed this creamy mushroom and asparagus pasta based on @zardyplants recipe for One Pot Creamy Mushroom pasta. Only changes I made were adding the asparagus and a 1/4 cup of white wine vinegar. It was so good and so simple! Hope everyone is well! We here are just finishing up our first year of homeschooling my eldest. It's been a really special time, and I'm looking forward to next year, when my second oldest will also start schooling. I've also been gearing up for this year's garden. I put in several new beds, and I have been trying to prepare them for my seedlings to get transplanted over Mother's day weekend. I wish my thumb were greener. 🇬🇧🇫🇷 🇬🇧 Today was our @riverford fruit and veg box delivery day so I made the following vegan stuff : Boiled potatoes Carrot lox Steamed broccoli Pan fried tempeh Carob sunflower cookies Cardamom pear tart Tomato pea protein stew Spicy toasted nuts Garlic aquafaba mayonnaise Vinaigrette dressing Red onion pickles Asparagus Water kefir I usually batchcook vegan for 2 adults twice a week to have enough from Tuesday evening to Friday lunch and from Sunday evening to Tuesday lunch. On the weekend, it depends on what we do. You only see what I prepare in advance but not the last minute stuff 🇫🇷Ajd livraison de notre panier bio donc j’ai préparé les trucs vegans suivants: Des pommes de terre à l’eau Des carottes façon saumon fumé Du brocoli vapeur Du tempeh poêlé Des cookies caroube graines de tournesol Une tarte poire cardamome Une sauce tomate protéines de pois Des noix grillées épicées De la mayonnaise à l’ail à l’aquafaba De la vinaigrette Des pickles d’oignons rouges Des asperges Du kéfir de fruits Je cuisine vegan pour 2 adultes, minimum deux fois par semaine, du mardi soir au vendredi midi et du dimanche soir au mardi midi. What recipe do you like the most? by @Plantyou 1️⃣ Chana Masala Inspired Chickpea Coconut Curry Ingredients 1 tbsp olive oil 1 yellow onion, diced 3 cloves garlic, minced 2 tbsp curry powder 1 tsp cumin ½ tsp turmeric ½ tsp paprika ¾ tsp salt 1 can crushed tomatoes, 15 oz 1 can coconut milk, 13.5 oz 1 can chickpeas, drained and rinsed 1 tbsp almond butter, optional 1 handful spinach Instructions In a pan over medium heat, add the onion and olive oil. Stir until fragrant, approximately 3 minutes. Next, add the garlic, curry powder, cumin, turmeric, paprika and salt. Stir until fragrant, approximately 5 minutes. Add the crushed tomatoes, coconut milk, chickpeas and almond butter. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes, until everything is combined and warm. Stir in the spinach until it is wilted. Serve with fresh cilantro and naan bread as desired. 2️⃣ Golden Glow Soup paired with my favorite crackers . 🙏Lends 4 to 6 servings
From start to finish 20 minutes . 1 tbsp olive oil or vegetable broth 1 yellow onion, diced 2 carrots, diced
4 cloves garlic, minced 1 rib celery, diced 1 tsp dried oregano 1/2 tsp black pepper 7 cups vegetable broth 1 can white beans, drained and rinsed 2 lemons, squeezed 1 handful fresh kale 1/4 cup tahini 1 tsp lemon zest 1 cup orzo 1/4 cup fresh dill 1 tsp turmeric . In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes. . Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered. . Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking. Stir in the tahini and turmeric until combined and heated through. Enjoy!

I’m not sure what I did before this. 😅😅 From the most perfect tofu to potatoes in half the time—having an air fryer has helped inspire more homemade cooking because realistically I don’t have hours to set aside to cook every meal, you know? 🤷🏼‍♀️ For dinner last night I had BBQ tofu, sweet carrots, hasselback potato, and rice with creamy dressing + dill —prepped, cooked, and plated in an hour. 🤩 What’s your fave way to use the air fryer? TURKISH PIDE BREAD By @daria_cooks_vegan Ingredients For the dough: •2 cups / 250 g all-purpose flour •1/2 cup + 1 tablespoon / 120 ml + 1 tablespoon water •1 teaspoon salt •1 teaspoon sugar •1 teaspoon olive oil •1 teaspoon active-dry yeast For the toppings: •6 red bell peppers •1/2 can of chickpeas, drained •8 ounces / 230 g vegan cheddar shreds •olives and chopped parsley to garnish Instructions 1️⃣In a bowl combine flour, water, salt, sugar, oil and yeast. Knead until smooth and let rise for about 1.5 hours. 2️⃣Preheat oven to 450 °F / 230 °C. 3️⃣Place bell peppers on a baking tray and bake for about 25 minutes until skin gets black. Allow to cool and then peel off skin. 4️⃣On a flat working surface divide dough into two equal pieces and roll out each into a flat oval piece. Top with vegan cheese, bell peppers, chickpeas and some salt, leaving a border. Fold the sides up and brush with olive oil. 5️⃣Bake for about 20-30 minutes, until golden brown. BLACK OLIVE TAPENADE PASTA🖤 By @terianncarty Ingredients 400 grams gf fusilli 3 tbsp olive oil Pinch chili flakes 1/2 onion diced 2 cloves garlic minced 3 cups cauliflower florets 7 cremini mushrooms 8 brussel sprouts trimmed and halved 1/2 cup chickpeas 1 cup cherry tomatoes 1 cup green olives 3/4 cup tapenade Fistful spinach 1/2 cup pasta water Sea salt and cracked pepper 1/2 cup vegan Parmesan Sprouts (optional) Method Preheat oven to 400. Toss cauliflower and brussels sprouts in olive oil and season with salt and pepper. Spread onto baking sheet and bake for 25 minutes. Set aside. Cook pasta in salted water. Reserve pasta water. Heat olive oil and chili flakes in a large pan. Cook onion until translucent. Add mushrooms and cook until soft. Add garlic, cooked cauliflower and BS, add in spinach tomatoes, olives and cooked pasta. Scoop in tapenade and toss to combine. Add pasta water to create sauce. Season the cheese, salt and pepper. Latin Asian Fusion… Chayote & Tofu Bowl, in white miso & spices, and vegetable & mushroom stock, red pepper strips, Asian greens, and chili sprinkles 🥬🌶️ I love Chayote (often called choko) and bought some fresh from the market on Saturday. It’s a member of the gourd family - fundamentally a marrow. I’ll be roasting some so I’ll photograph a whole raw one before I bake it in a future post. It originates from Mexico and Latin America, and has a high nutrient, antioxidant and fibre content with related benefits. Now it’s grown all over the world. Choko as we called it, was a vegetable I disliked as a child - my mother grew it - so there are fond memories but I really enjoy it now. This soup was a very quick and easy meal, simply slicing the tofu and the chayote and dropping it into the simmering miso and spiced stock with a splash of tamari, and then adding the chopped Asian Spinach and red capsicum strips at the end. I sprinkled some chili spice mix over the soup once served in the bowl. SPICY TOFU LEEK STIR FRY & NOODLE SOUP By @sncxkitchen Recipe➡️ 🔹Main Ingredients 🔸2–2½ tbsp grapeseed oil 🔸½” ginger (finely sliced) 🔸5 dried red chili pepper (soaked & cut to ½” slices) 🔸½ tbsp Sichuan peppercorn 🔸1 tbsp fermented black beans/douchi 🔸2 tbsp Pixian doubanjiang 🔸3 garlic cloves (finely minced) 🔸298 gm/10.5 oz. five spiced tofu (sliced) 🔸1 leek (white part only – sliced diagonally) 🔹Seasoning (whisk until well combined) 🔸¼ cup water 🔸1 tsp cooking wine 🔸1 tsp vegan fish sauce 🔸1 tsp sugar 🔸1 tsp salt or to taste ▪️Steps ▫️In a large skillet/non-stick pan on medium heat, add the oil. Once the oil heats up, add the ginger, dried chili pepper, peppercorn, douche & doubanjiang. Sauté stirring frequently until slightly fragrant. ▫️When it’s slightly fragrant, add the garlic.
