Greek recipe: Pork shoulder, "Kleftiko" style, slow cooked for 4h in oven. This style of cooking involves lamb shoulder predominantly or pork shoulder as an alternative, wrapped with vegetables and spices in a parchment paper and slow cooked in oven. The simplest of all recipes results in the meat falling of the bone melting...so soft you can cut it with a spoon. The meat cooks in its own juice and in a humid "environment" created by the vegetables. "Kleftiko" is the dish of the "kleftes" who were bandits in what is today Greece during the Ottoman occupation from the 14th to the beg. of the 19th century. They stole goats & sheeps and to cook undetected without creating smoke they prepared the food in a pot in the ground covered with charcoal. For 2 adults and 2 children: 1kg of boneless pork shoulder, vegetables of your choices (green, yellow, red peppers in this case), garlic, onions, olive oil and oregano. After roasting the meat on the pan for 2 minutes all around, place the vegetables and roast them for 1 minute to collect the meat juice. Then add meat, vegetables, spices in the paper, wrap well around and place in closed pot. Pot goes into preheated oven at 140C, then 3-4h in there, dropping the temperature by 10 every hour. Orange and Rosemary Lamb Serves 4 ⏰ 3hrs (hands on 30mins) In fact, I was going to make my favorite orange and rosemary chicken casserole. But as I stood in front of the meat section, I thought - why not try lamb this time? Obviously it will work! And it totally did, and was beautiful. Sweet, sour and mildly acidic orange enlivens rich and savory lamb shanks, making it a great option for warmer weather. Allow the meat to braise for long enough to start falling off the bone, and in the end reduce the sauce to a sticky, glossy, delicious glaze. 2 lamb shanks, bone in 200ml orange juice 200ml chicken stock A splash of red wine vinegar 6-8 garlic cloves, bruised 1-2 fresh rosemary sprigs 2-3 tomatoes, quartered 1 tsp salt Fresh orange, tomato and rosemary for garnish Oil for frying In a medium iron cast casserole, heat oil to high and brown the shanks from all sides. Transfer to a plate. Deglaze the casserole with chicken stock and scrape the brown bits off the sides. Add orange juice, garlic, tomatoes and rosemary and bring to simmer. Season with salt. Return the shanks to the sauce. Cover and cook on minimal heat for about 2.5 or until the shanks fall apart. Check a couple of times that there’s still enough liquid. I usually keep the casserole on stove top, but you can also send it to the oven at 160C. Once the shanks are done, remove the lid, turn the heat up and simmer until the sauce reduces to a thick glaze. Move the shanks around to coat from all sides. To serve, decorate with slices of orange and tomatoes and a sprig of rosemary.
