The dish I most associate with slow cookers is lamb shanks in a red wine or port sauce. So I had to try it! 😆 I even seared the shanks and pre-cooked the veges instead of throwing it all in the pot! It was supposed to be 8 hours on low but I started late so did 2 hours on high and then 4 hours on low. 🤷🏻‍♀️ I served the lamb shank with cauliflower mash (I had no potatoes left!), a side of spinach and cauliflower leaves stir fried in some of the sauce, and a quick garlic bread (toast with butter, garlic flakes and mixed herbs). 😊 And I have so much sauce left in think I’ll turn it into a soup. 🤔🥣

NIKKI'S EASY-PEASY CHICKEN TACO SOUP......(and Mexican Seasoning mix) Serves 10⁣ 1 point per serve Over on my Facebook page today, I did a cooking demo, making my Mexican seasoning mix and popular Easy Peasy Chicken Taco Soup. Mexican seasoning mix: 1tsp paprika 1tsp smoked paprika 1tsp cumin 1tsp coriander 1tsp dried oregano ¼tsp chilli powder/cayenne ½tsp garlic powder ½tsp onion powder Combine and store in a small airtight jar, or a clean empty spice jar. (Multiply these quantities to fill your container 😍) Taco Soup: 2 onions, chopped ⁣ 2 cans chopped tomatoes ⁣ 2 cans Mexican style tomatoes, I used Wattie’s 2 cans corn kernels, drained⁣ 2 cans kidney beans, drained ⁣ 2 chicken stock cubes⁣ 2 cups water⁣ 2 large chicken breasts ⁣ 2 Tbs Mexican/taco seasoning⁣ 1/2 tsp salt⁣ 1 cup red lentils, if you like a thicker soup ⁣ Saute onions for a few minutes, then add all ingredients to slow cooker stirring to combine. Place chicken breasts on top. Slow-Cook for 6-8 hours, or pressure cook for 20 minutes. Remove chicken breasts and shred. Return chicken to soup, stir, and keep warm until ready to serve. Taste and season to taste. To serve: Top with a little grated cheese, tomato, and avocado. For a crunchy garnish, slice up one tortilla and cook in a dry frypan until crispy. SLOW COOKER LAZY LASAGNE I love lasagne, it’s so cosy and comforting but takes forever. Let me introduce you to Lazy Lasagne. It is so easy and omg, incredibly delicious. Cook little pot cook. Slow cooker ingredients: Serves 4 420 cals 40g protein 500g 5% ground beef 2 minced cloves garlic 1tbsp olive oil 1/2 onion diced 🧅 3tbsp tomato paste 1 tin tomatoes 🍅 Sprinkle of veg stock 500ml water beef stock 1 red diced pepper 1 carrot thinly grated 🥕 1tbsp dried basil 1/2 tbsp dried oregano 1tsp dried thyme Optional 150g light cottage cheese ( I thought this would add some creaminess) To be added later 100g Mozzarella cheese 5 lasagne sheets broken Spinach Toppings Grated Parmesan 1 tbsp ricotta. This makes it 1. I browned the beef and onion first in a pan ( I didn’t know) but apparently, this is not necessary. Thank god, as I thought what is the point when im now standing with a pan cooking before my pot cooks. 2. Add your Oil, beef and onion into slow cooker pot. 3. Add in diced onion and red pepper, add the tomato paste and pour in the crushed tomatoes TIP: I added a little water to the empty tomato carton or tin shook and poured the remaining. 4. Add seasonings. 5. Pour in Beef stock. 6. Cover and cook for roughly 3-4 hours. Note: I cooked on high because I obviously did not read the instructions on my new slow cooker. 7. Break up lasagne sheets or you can use any pasta and stir in. Top with some mozzarella and add ur Optional 150g light cottage cheese. 2 handfuls of spinach . Cover for another 30 min on high. 8. let rest until ready to serve. 9. Spoon into bowls. Top with a tablespoon of ricotta cheese this is necessary for ultimate yum. Grate some parmesan cheese. 10. Add a little basil if you have. Possibly from one of those old plants you bought in Sainsbury’s .. TIP: This tastes even better the next day so perfect for meal prep. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, salt, and pepper. Rub this mixture all over the pork shoulder. Place the seasoned pork on top of the onions in the crockpot.
