“Since I left in 2016, noma has moved locations and undergone a serious overhaul. It is now situated between Christiania and Refshaløen, at the foot of a grassy seventeenth-century rampart, in a stunningly designed restaurant complex inspired by the clustering of outbuildings common to a “saeter,” a traditional Nordic mountain farm. The test kitchen itself is now situated outside the restaurant in a landscaped and biodiverse garden, which is home to 130 planted species and a further 150 species grown in a greenhouse and in plant boxes onsite. Ének Peterson is an American-born winemaker and the manager of Vino Underground. Ének is a relative newcomer to Georgia, but over the last several years she has become Tbilisi’s best source on Georgian natural wines. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ “Vino Underground was set up seven years ago by seven different winemakers. At that point there weren’t really wine bars in Tbilisi, because Georgian wine drinking culture is not really wine bar culture where you go out for a glass of wine and go out for dinner somewhere else. So wine bars didn’t really exist, and natural wine as a concept didn’t really exist. The wine makers who founded the bar were already exporting their wines to London and Italy, but they were having their wines rejected at most places in Tbilisi. There were many ideas and different groups of friends floating around: ‘Let’s set up a bar, let’s set up a shop,’ whatever, and eventually they just decided that instead of having two or three competing shops it would be better to just set up one and put everyone’s resources together.” ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We met up with Ének during Vino Underground’s off-hours. For over one hundred years, the Glyptotek has been a centrepiece of Copenhagen’s art scene and one of Denmark’s finest museums. It is not uncommon to find multiple temporary wooden stalls lining most Kampala streets, browned by the ubiquitous Ugandan dust and painted with the word “rolex” in bright red and blue. It is in these stalls that one of the city’s most beloved snacks is made. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In Uganda, a rolex is a creative combination of a chapati (the Ugandan variation of the South Asian flatbread), a fried egg, and thinly sliced vegetables, rolled into a delicious, warm, and juicy wrap to be eaten on the go. The term “rolex” itself is not in any way associated with the Swiss luxury watch brand. Rather, it’s a play on the words “rolled” and “eggs” that, when said quickly, result in “rolex”. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To talk about Kampala’s street food scene in its entirety and not include rolex is to do the city a disservice. Considered by many as the “king of street food,” the rolex has gained popularity as a quick breakfast or hangover option for both Ugandans and non-Ugandans. It’s unique to East Africa, and Uganda specifically in that it reflects the multiple influences on the country’s cuisine. We met in May 2010 in the courtyard ruins of the seventeenth-century Rukhi castle, near the west Georgian city of Zugdidi. Chef Tekuna Gachechiladze stepped out of a kitchen tent in her fighting whites, calm and cool, beaming a toothy smile. You’d never know she had just quelled a kitchen mutiny while preparing an outdoor feast for the President of Georgia and over one-hundred of his VIP guests who were due any moment. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The revolt had been over a recipe. Tekuna wanted to serve elargi balls, her riff on the traditional west Georgian cheesy polenta dish often served with bazhe, a rich walnut-based sauce. In addition to shaping the elargi into balls, she instructed her west Georgian cooks to make the sauce with almonds instead of walnuts. They refused. “It’s not bazhe, not Georgian!” they protested. Tekuna then called the governor of the region, who “persuaded” the cooks to do as the chef ordered. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This kitchen insurrection was an extreme, but not surprising reaction to a chef who was making her mark by leading a personal revolution against Georgia’s established culinary culture. Messing with traditional recipes does not go over well in a country that views its cuisine as sacred as Orthodox Christianity. Like language and homeland, food is part of Georgia’s cultural identity and must be preserved, not altered. Hello instagram world, it’s me, Stefanie Ash, founder and editor of Stay Awhile. I’ve popped on here to introduce you to a series we’ll be running every now and then called ‘Meet Our Makers’. This is our way of introducing the creators - the amazing writers, photographers, designers and brains who’ve contributed to the Stay Awhile world - continuing to make the magazine what it is (and what it’s gearing up to be)! I suppose I should go first, chief buck-stopper ’n all that… I started the Stay Awhile instagram account sometime during COVID, mostly because I was restless and unemployed. Like most people, I spent the majority of my time buying useless crap on Amazon, dancing to stupid TikToks and procrastinating at life. My favourite type of procrastination? Scouring the interwebs for unique airbnbs and small design hotels. I love doing that, always have. Although international travel was always my thing - I’d been a freelance travel writer for the likes of CN Traveler and Travel and Leisure and a brand consultant and content creator in tourism for over a decade - COVID nudged me to narrow my search terms to regional gems, desperately hoping to skip a domestic border or two the moment it was humanly possible! The Stay Awhile account started to resonate with others, and the community grew organically online. The fact remains, when everyone’s wings were clipped, couch-potato-travel was the only way to get a fix. Even after global travel resumed, I found myself drawn to local stays and adventures. I’d amassed a collection of so many genuinely special stays in Australia & NZ and connected with so many creatives, hosts, business owners and likeminded souls doing some really cool and novel things within the travel, lifestyle and design space, that all I yearned for was to stay, touch, taste, feel, experience and share those stories with others in a format more akin to this new slow and authentic way of exploring. Painted prominently atop the bakery walls at Hopia are the words Lyökäämme käsi kätehen, sormet sormien lomahan (“Let us clasp our hands together, tie our fingers together”). They’re rather striking words to adorn a bakery’s walls, but the line—an excerpt from the opening verses of the Kalevala—is a powerful allusion to the shared origins of Finland’s national epic and the bakery’s culinary traditions in the beautiful, highly contentious borderland region known as Karelia. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The jewels of Karelian bakery tradition are the country-wide favourite karjalanpiirakat (Karelian pies). These small, crimped pasties are made from rye dough, and kneaded with the traditional pulikka. Historically the filling was a barley mixture, but since the nineteenth century they’ve become most popular with fillings of rice or mashed potato. The crowning of the karjalanpiirakka, however, is in its topping: a warm, indulgent egg butter (munavoi) that’s spread overtop in a layer often thicker than its base. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Hopia is particulary magical on a winter morning; the streets outside the bakery frozen still. When you enter Hopia you’ll drape your coat on the stand-up rack and cross the room to carry to your table a tray laden with sweet scented buns, or pasties crowned with egg butter. “It’s like playing guitar: you can have someone teach you but the practice is the important part. I was really surprised how much I loved doing it because I absolutely hate being dirty. Never went on a beach as a child, couldn’t get sand between my toes— but I collected pottery from all around the world, from Japan, from Sweden. I was thinking of taking up a craft and the only one that I actually loved was pottery, so I thought I should at least give it a go. I spent three or four years before that watching YouTube channels of how to make pottery, so I knew how to make it despite having never touched clay in my life. When I sat at the wheel for the first time I was like “Ohh, I know how to do this!” Even though I’d never done it before. And I was terrible. I was the worst in my class at it. But there was something in my head that knew how to do it, and I was really excited by just the process of making.” ⠀⠀⠀⠀⠀⠀⠀⠀⠀ @jonosmart is a potter who was based in the Southside of Glasgow before moving to the foothills of the Cairngorms in 2020. When the doors to Bertha’s open at 11am there’s already a long queue of customers—workers on their lunchtime break and tourists making cross city treks. They all patiently pass beside the Charles DeSaussure murals of Bertha, her three daughters, and their extended family, as the lunch line crawls towards the cafeteria-style lunch counter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Established in 1979 by Albertha Grant, Bertha’s is a legendary North Charleston destination, famous for its soul food classics, as well as its Gullah-influenced dishes, like their red rice, garlic crab, or turkey purloo. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bertha’s has a vast array of food on offer, which changes day to day, featuring dishes from fried pork chops to baked mac & cheese, cornbread, turkey legs, red rice, and strawberry bread pudding. The daily lunchtime special, a plate of baked or fried chicken, white rice, and lima beans, remains just $4. Dating back to 1743, the market was established under Swedish rule, and is comprised of a line of fishing boats clustered in the small harbor at Kauppatori. The fishermen have traveled from all across Finland, especially from its furthest reaches—like the autonomous island of Åland. Some 170 years ago, a South Carolina farmer named Nathaniel Napoleon Bradford bred a variety of watermelon with such superlative taste that it helped launch the fruit into mainstream popularity. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Eventually the Bradford watermelon lost out to varieties with thicker skins—varieties more portable and thus more profitable. The Bradford faded into obscurity by the early 1900s, and was believed extinct. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ That is until they were discovered growing on the small family farm of Nat Bradford—namesake of his ancestor—just a short drive from Charleston. Alfama is one of Lisbon’s oldest neighbourhoods, a labyrinth of small cobbled streets, alleys, and staircases that wind up and down the hill from the Rio Tejo to the Sāo Jorge Castle. The district has existed since the city’s Roman origins, but is more associated with its eighth-century period of Islamic rule. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ These days, the pastel-hued Alfama is among Lisbon’s most visited sites, drawing people in who long to lose themselves in a corner of the city that feels as though it’s from a different time. At night, the streetlamps cast a yellow glow, tiny tabernas seem to pop up in even the smallest of alleyways, and you may catch a sorrowful melody on the night air — Alfama is the birthplace of fado, after all.
