Soups, salads, stews - in fact, anything that demands a little extra something - might need a handful of croutons. Obviously you can buy these, but I have to say that not only are handmade croutons so much tastier, they also won’t have the preservatives and flavour enhancers you find in a lot of shop-bought versions. I use garlic and thyme in mine, but you can adapt the herbs to suit the dish or your personal taste. 🧄Gluten-Free Garlic Croutons🧄 Ingredients: 1 loaf of day-old white, gluten-free bread 3 garlic cloves, crushed 1 tbs chopped thyme leaves (optional) 4 tbs olive oil sea salt and freshly ground black pepper Method: 1. Preheat the oven to 200c. 2. Line and large baking tray with greaseproof parchment. 3. Cut the loaf into eight 1cm thick slices. Remove the crusts from the bread and cut into 1cm cubes. 4. Place the bread cubes in a large bowl and sprinkle with garlic and thyme, if using, and pour over the oil. Toss well to coat. 5. Transfer the bread cubes, in a single layer, to the prepared baking tray and season with salt and black pepper. 6.Bake for 10-15 mins, tossing occasionally, or until brown and crisp. Leave to cool on the tray. Me in 2013 heavily pregnant at the hospital vending machine. I posted this the other day and my celiac friend commented on it saying when there was a good variety & I replied when I could actually eat from a vending machine. 11 years later and life, especially food has changed. I put off eating out due to minimal options and feeling uncomfortable. Im going to work on that I think as I loved going out for food. 3 years diagnosed in June! I’m also overly tired currently and will be popping to the doctors to get some blood tests as I have a sneaking suspicion I may need iron tablets again, this is how I feel when they remove me from the meds and then a few months later tell me I’m deficient again. Hopefully then I can start exercising again as my energy levels have been quite low. & healthy eating is back on the cards as I really need to get myself feeling more comfortable in myself. 💃🏻
For a banana themed birthday party our young coeliac decorated a banana cake to look like a giant banana! We used the @howto cakeit GIANT banana tutorial to work out how to assemble and decorate the cake. Cocktail sticks helped us shape the end of the banana (we didn't have any plastic dowel as suggested). We used a vegan GF recipe to ensure all of our guests' dietary needs were included. In the ganache, cream was swapped with @coconutcollab vegan double cream. We'd never used simple syrup to keep cakes moist- it worked so well. This cake was a big hit with the kids & adults as it was really delicious! BTW vanilla essence and edible gold were used to 'age' the banana! @sugardaddysedinburgh 📍 100% gluten free (with dairy free & vegan options) 🍰 This bakery was top of my list for "places to go" in Edinburgh. Who hasn't heard of Sugar Daddys bakery? It is a coeliac's dream. They have an array of sweet and savoury goods. Savoury items include sausage rolls, pizzas, sandwiches, and paninis. There's so many sweet items to choose from: cupcakes, cookie pies, bookies, blondies, cookies, and more. Options may rotate, so you'll often find something new, too. I went here early on a Saturday, and I was lucky to get everything I wanted. They do sell out quickly. I actually nabbed the last two sausage rolls at only 10am, believe it or not. I opted for 4 items in total. 2x sausage rolls, a bookie, and cinnamon roll cookie square. The sausage rolls were the best I think I've ever had. They reminded me of gluten containing pastry. So thick and flaky, with a generous helping of pork inside. I had to restrain myself from scoffing both in one go. The bookies surprised me a lot. I thought I'd try this, despite not really being a brownie fan. I did adore the cookie half more, but the brownie topping with fudgy and indulgent. The added sprinkles made it look super pretty, too. The cinnamon roll square was my favourite of the two sweet options. It had a light tinge of spice without being overpowering. It was like eating a cinnamon roll in a slice. I can see why it is one of their best sellers - I'd certainly buy another. My gluten eating friend opted for a cupcake (contained dairy) and vegan bakewell cookie. She said both of these were gorgeous, and you couldn't tell they were gluten free. We both commented on how generous the portion sizes were, too. 🍽️ Teriyaki salmon parcels, vegetable fried rice, steamed broccoli & crispy nori 🤩 Loved making these parcels using the @bluedragonuk Vietnamese spring roll rice wrappers, and they’d be just as nice (if not nicer) without frying them! I just cooked my salmon fillets and then added them to a bowl with some cooked vermicelli noodles, carrot, cabbage and red onion and made a quick and easy teriyaki sauce. Mixed it all together and popped a couple of spoons of the filling to the softened paper wraps, folded them up and then shallow fried them! Delicious!
