The real wine fair. What. A. Day. So many amazing producers, great talks, delicious food (absolute shout for having raclette there), and everyone I met was super friendly. Absolute highlight was going through the wines of @woodfine.wine and being genuinely lost for words at one point (yes, THAT good). Offbeat wines were absolutely en pointe, @lost_in_a_field pet nats really are next level (and the story behind each wine is mega, go check it out). So quite frankly I should probably just list all the English producers there today, we are making SUCH good wines here. However I also have to shout out the brilliant wines coming from Greece, Slovenia and Slovakia. If I could have a week I still wouldn’t have been able to come close to trying all the wines I wanted to, I didn’t even get round to the Spanish producers 🫠 Amazing day, incredibly inspirational. Hopefully one day you’ll see me pouring rather than tasting!

It’s also known as amber wine and skin-fermented white wine. 🏺 Although orange wine seems new and trendy, it’s actually an ancient style of wine that’s been used for thousands of years to make white wines, often fermented without temperature control for long periods in qvevri (clay vessels or amphorae), in regions such as Georgia and Armenia. 🍷 Modern white winemaking with temperature-controlled fermentation in stainless steel tanks has only been practised for the past 40-50 years. 🌍 Orange wines are produced in Europe, North America, Australia, Chile, South Africa, New Zealand. 🍁 However, Ontario is the first wine region to legislate how orange wine is made – Vintner’s Quality Alliance (VQA) provincial law went into effect July 1, 2017 🍇 Niagara’s Southbrook Vineyards was the first to request this category from the VQA in March 2016, as the winery was already making an orange wine from skin-fermented vidal grapes from vines planted in their Four Mile Creek Vineyard. It’s always good to have company in the vineyard. We have plenty of creepy-crawlies to keep me company, although some bring more benefit than others. The worms keep our soil really healthy, the spiders keep other bugs at bay. A big part of what I believe in is keeping the vineyard healthy and harmonious. What comes from the ground goes back in, everything gets composted so it can go back into the soil in future years. No fertilizers, just compost and well rotted manure. Minimizing or completely avoiding any sort of sprays keeps things in balance, and ensures the soil stays healthy year after year. It also allows the area to become a safe haven for bees and other pollinators. Whilst the recent hail caused a bit of damage, growth has been good and we’ve avoided any frosts. Hopefully we get a bit more sunshine going forward!
🥩 Why are vegetables harder to pair with wine than say a steak❓ 🔗 Link in Bio https://www.nataliemaclean.com/blog/videos/wine-pairing-vegetable-match-salad-guide/ 🍾 With steak, you have protein which loves to dance with the tannin in red wine, that furry mouth feeling you get from eating walnuts. 🥗 Those we have here are terrific. They’re bone dry, with lots of crisp acidity so they don’t end up tasting sweet or awful when you drink them with artichokes or other spring greens. 🌿 Asparagus also has cynarin, though far less of it than artichokes. 🍷Les étudiants de Paris School of Luxury 2 ont eu à leur tour la chance de plonger dans l'univers fascinant de l'œnologie, guidés par l'expertise de Frédéric Woelfflé, chef sommelier renommé du prestigieux Métropole à Monaco. Ce cours a été bien plus qu'une simple dégustation de vins, c'était une véritable expérience sensorielle qui a éveillé tous leurs sens. 🌟 Le programme était riche et varié, avec une exploration approfondie des vins et des spiritueux, leur positionnement sur le marché du luxe et une découverte des terroirs régionaux. Les étudiants ont pu apprendre à déguster les vins, à identifier les différents arômes et saveurs, à comprendre les caractéristiques des différents cépages et à découvrir les secrets des terroirs régionaux. 🌍🍇 Ce voyage olfactif et gustatif a été mené avec professionnalisme et passion par Frédéric Woelfflé, qui a su transmettre son savoir et sa passion à nos étudiants. Jonathan et Jack : un duo franco-malaisien complémentaire 🤝 Jonathan souhaitait se reposer, il s’est dirigé vers Mers-les-Bains. Là, il a découvert l’hôtel restaurant : Le Bellevue 🌊 Il a de suite vu le fort potentiel du bâtiment et a décidé de laisser ses valises sur la côte d’Opale. Pour le restaurant, Jonathan cherchait à s’entourer d’un cuisinier talentueux, c’est là qu’il a fait la rencontre de Jack, un chef malaisien qui a fait ses preuves dans de grands restaurants français. Le projet de L’Itinérance a de suite interpellé le chef qui a décidé lui aussi, de rester à son tour, à Mers-les-Bains.
