For several years it has been mistakenly considered a cross between Cabernet sauvignon x Bronner, but recently it has been established that is a cross between Seyval and Zähringer. Wine releases typical aromas of the variety, it is slightly fruity, mineral, with a good structure. This is a Pet Nat from France. Tasting through a new brand for us this week, @tbcellars is a one man operation. Thomas Bramble is a passionate wine connoisseur who found himself to be an outlier in Utah, where alcohol is often seen as taboo. However, his passion for wine never prevented him from immersing himself into the world of wine and he found his way to California. Through his passion he was able to meet talented winemakers, and after signing a ton of NDAs, he was able to start his own wine label, where he oversees everything from grape to bottle. A true passion project. Otage / Tb Cellars / 2021 / Cabernet Sauvignon / Howell Mountain / Blackberry, currant, oak spice, savory earth, red plum, dark chocolate and tobacco. Plush fruit, nice intensity across the mid palate, tart acidity, and a dusty—earthy undertone finish. Even after 6 hours of decant—the tannins were rather big, so we corked it up and left it to sit and checked it daily. Tannins really started integrating and gave way to a silkier palate on day 3. Definitely give it at least a 12 hour decant on this one, one for the long haul. / 94 points / $125 /
