Every spring I receive questions from newbie fermenters that have experienced explosions. There are many simple tricks to avoid this. One of those has to do with flowers. Adding flowers to your fermented drinks gives surprising floral notes you won't find in storebought sodas. But be aware, fresh flowers may contain an overdose of wild yeasts. You can use these yeasts for ferment, but when you have allready added a culture, for example waterkefir or Kombucha, these wild yeasts may make your ferment flourish like you've never seen before. This often causes explosions. Please do not refrain from using fresh flowers after this warning. Just be aware about what you are doing and take precautions, frequently burp your ferment or be lazy like me and use an airlock when playing around with yeasty flowers. These little plaited baskets may not look like much, but they are woven from an unusual material - Scoby (symbiotic culture of bacteria and yeast). If you're a fan of kombucha you may know that this is the cellulose mat that grows on top of sweetened tea, turning it into kombucha. I'm always up for experimenting with materials, so when @lucyhelton, one of my basketry students (pic 2), said she wanted to try weaving with Scoby as part of her PhD research I offered to help. Fresh out of the incubator, Scoby is unpromising weaving material - a thick gelatinous mat (top left in pic 4). But as it dries out it loses moisture and becomes a thin sheet. If it retains a bit of moisture it's quite flexible. If dried out completely it's brittle (pic 3), but when we sprayed it with water it instantly became more flexible. We also tried making cordage with some of the offcuts. There's potential here to create an openwork basket with Scoby cordage on which more Scoby will grow. Some interesting potential! Laat je verrassen! 😋 Om kombucha te maken, heb je een SCOBY nodig, samen met zwarte of groene thee, suiker en water. Hier is een eenvoudig recept: 🌿Zet een pot sterke thee door theeblaadjes te laten trekken in heet water. 🌿Los suiker op in de hete thee en laat het afkoelen tot kamertemperatuur. 🌿Giet de gezoete thee in een glazen pot en voeg de SCOBY toe. 🌿Bedek de pot met een ademende stof, zoals een koffiefilter of een theedoek, en zet deze op een warme plek weg van direct zonlicht. 🌿Laat de kombucha fermenteren gedurende 7-14 dagen, afhankelijk van de gewenste smaak. 🌿Proef regelmatig om de fermentatietijd naar smaak aan te passen. 🌿Zodra de kombucha de gewenste smaak heeft bereikt, verwijder je de SCOBY en bewaar je een deel van de vloeistof als starter voor een nieuwe batch. 🌿Giet de kombucha in flessen en bewaar ze in de koelkast om af te koelen voordat je ervan geniet!
