Well that weather changed quickly, one minute basking in the sunshine ๐ next minute, running for cover โโโกโ๏ธ๐คฃ We've now got hail stones ๐๐คฃ So bringing some Carribbean sunshine to my plate ๐ Carribbean style chicken curry ๐๐ Served with cauliflower rice ๐ & mixed leaf salad ๐ฅ dressed with balsamic vinegar and cracked black pepper ๐ Of all the curries I've chucked together, this has gotta be up there with one of the best ๐ Curry Prepare all spices and ingredients in advance to make it easier Spray wok with butter fry light and fry 1 chopped onion until soft Add finely chopped red chilli (seeds removed) - I used Tesco frozen If you want real Jamaican heat - use scotch bonnet !! ๐ถ๏ธ๐ถ๏ธ Add spice mix - (mix together in advance) 1 tsp corriander 1 tsp turmeric 1 tsp cumin 1 tsp chilli powder 1 tsp ground fenugreek 1 tsp salt 2 tsp chopped garlic cloves Tesco frozen 1 tsp chopped ginger Tesco frozen 1 tsp cracked black pepper 1/2 tsp thyme 1 tsp paprika 1 tbsp Carribbean curry powder Add diced chicken (I used 3 x large chicken breasts) Fry for a couple of minutes. Our SW consultant set us a challenge of picking a random number and she would message us the recipe from that page in the latest countdown book ๐ I rose to the challenge & I couldn't believe it when I saw the recipe - 2 ingredients that I really don't like ๐๐คฃ - couscous and chickpeas, these are the work of the devil ๐ hahahaha !! Completely off plan yesterday for my daughter's birthday ๐๐น๐น Back on it today with these ๐ Spicy Lebanese style chicken burgers ๐๐ topped with melted cheese (hexA) Served on large flat griddled mushrooms with mixed leaf salad ๐ฅ Deeeeeeelish ๐ Recipe served 3 500g minced chicken 1/2 red onion very finely chopped 1 tsp salt 1 tsp garlic granules 1 tsp cracked black pepper 1 tsp sweet paprika 1 tsp onion granules 1 tsp Lebanese 7 spice 1/2 tsp turmeric 1/2 tsp crushed chillies Combine the chicken with the onions and spices. A favourite classic meal of mine made syn free โค Steak Diane served with SW sweet potato chips ๐ & salad ๐ฅ dressed with balsamic vinegar and garlic pepper ๐๐ Recipe for Diane sauce ๐Fry half a finely sliced onion, a few sliced mushrooms until soft. What a lovely sunny Sunday ๐ With summer around the corner, this recipe is perfect for BBQ's too ๐จ๐ณ Char Sui Chicken ๐จ๐ณ Served With Cauliflower Rice ๐ & @slimmingworld Recipe for soy garlic and ginger stir fry veg ๐๐ 1 per portion ๐ Have to say that this is absolutely delicious, no faff (well not much ๐) but maximum flavour ๐ oh and maybe a little blue smoke created in the kitchen ๐คฃ but trust me, it's so worth it ๐ Recipe served 3 Char Sui Chicken 3 x chicken breasts - butterflied Mix the following in a bowl 1 TBSP honey (2.5 ) 1 TBSP reduced sugar tomato ketchup (0.5) 2 TBSP Oyster sauce 2 TBSP premium dark soy sauce 1 TBSP rice wine vinegar 1/2 tsp Chinese five spice A little red food colouring (optional) Salt and cracked black pepper to taste Marinade the chicken in the above and leave for as long as possible I browned the chicken first on a smoking hot cast iron griddle pan to achieve that charred flavour. place the chicken into a roasting dish, pour over the marinade and cover with foil Bake at 180 for around 30 minutes, removing the foil 10 minutes before the end of cooking. This will definitely warm your cockles on a wet & miserable day ๐ Ready & on the table in under 20 minutes and a great way to use up leftover roast chicken ๐ฅSpicy Chicken Udon Noodles ๐ถ๏ธ๐ถ๏ธ Served with mixed salad ๐ฅ Recipe (serves 2-3) 2 x bundles packs of Udon Noodles - cook and set aside Leftover shredded roast chicken 3 x spring onions - chopped Handful of mushrooms - sliced 1 red pepper finely chopped 1 carrot - grated 100ml chicken stock (I used 1 chicken Oxo cube in 100ml boiling water) Mix the following in a bowl ๐ 5 TBSP reduced salt soy sauce 1 TBSP dark soy sauce 2 TBSP Frank's Hot Sauce (any hot sauce will do) 4 TBSP oyster sauce 1-2 tsp chopped red chillies (I use Tesco's frozen ones for ease) 2 tsp garlic granules 1/2 tsp ground ginger Few twists of black pepper ๐Spray wok with butter fry light and saute the mushrooms until browned. Finally managed to get some work done in the garden ๐บ๐งโ๐พ Didn't fancy a full roast, so a simple chicken dinner with paprika chips ๐ & mixed leaf salad ๐ฅ dressed with balsamic vinegar and cracked black pepper ๐๐ Hot Paprika Chips I find that Maris pipers work the best Microwave with skin on for about 1 minute Cut into chips (I used an apple corer but you need to be careful) Spray tray with fry light and sprinkle with sea salt and cracked black pepper. NOT ME ๐ This was insane ๐๐๐๐ Sizzling Chicken Pepperpot ๐ถ๏ธ๐ถ๏ธ Succulent diced chicken in a rich and fiery sauce ๐ฅ Served with swede chips ๐ & salad ๐ฅ dressed with balsamic vinegar and cracked black pepper ๐๐ Works out around 1 syn per portion ๐๐ Recipe (served 3) 3 X Chicken breasts - diced Marinade for the chicken 3 tbsp dark soy sauce 1 TBSP jerk seasoning (Sainsbury's is syn free, others are 0.5 syn per tsp) 1 TBSP jerk BBQ sauce (1 syn) 1 TBSP honey (2.5 syns) 1 tsp garlic granules Little red colouring (optional) Sauce 1 large onion - sliced 1 tsp chopped ginger (Tesco frozen) 2 tsp chopped garlic cloves (Tesco frozen) 100 ml stock (1 chicken stock cube cube in & 1 spicy tomato stock pot in 100ml boiling water) 400g can cirio chopped tomatoes 1 TBSP Henderson's relish 1 tsp sweet paprika 1/2 tsp crushed chillies 1/2 tsp cracked black pepper 1/2 tsp salt ๐ฅMix together the ingredients for the marinade and toss in the chicken. Cover with cling film and leave for at least an hour ๐ฅSpray pan liberally with butter fry light and saute the onions until soft ๐ฅAdd the garlic and ginger and fry for a few minutes ๐ฅ Add the diced chicken & all the marinade and fry until browned ๐ฅAdd the stock, chopped tomatoes, hendos, spices, salt and pepper. ๐จโญ NEW RECIPE โญ๐จ I have to say, this was deeeeeeelish ๐ Asian BBQ chicken ๐ถ๏ธ Served with crispy wedges ๐ cauliflower rice ๐ and mixed greens ๐๐ Recipe served 4 4 chicken breasts (you could also use thighs) Mix the following in a shallow bowl big enough for the chicken to marinade (I used a pyrex dish) 2 tbsp dark soy sauce 2 tbsp BBQ sauce 1 tsp onion granules 1 tsp garlic granules 1 tsp sweet paprika 1/2 tsp chilli powder 1/2 tsp salt 1/2 tsp black pepper Marinade the chicken in the above for as long as possible, then brown on all sides (I used a smoking hot cast iron griddle pan) and set aside Keep the leftover marinade for the next step Sauce It's best to do this part in a pan that can go from hob to oven 1 onion - finely sliced 2 tsp chopped garlic cloves (Tesco frozen) 1 tsp chopped ginger (Tesco frozen) 300ml passata 3 tbsp dark soy sauce 1 tbsp sweet chilli paste 1 tsp mirin 1/2 tsp crushed chillies 1/2 tsp MSG (optional) 2 spring onions - sliced for garnish ๐ถ๏ธToss the sliced onions into the marinade left in the bowl from the chicken and coat well ๐ถ๏ธ Spray pan liberally with butter fry light and saute the onions until soft ๐ถ๏ธAdd the chilli paste, garlic & ginger and fry for a minute ๐ถ๏ธAdd everything else and stir well. Pop the chicken on top and put the lid on the pan. There's something sooooooo comforting about Greek/Cypriot food from a-maz-ing slow cooked stews and casseroles ๐ to the famous Gyros & Souvlaki kebabs, not to mention the Brandy Sours๐น and Zivania (local fire water ๐คฃ) ๐ท ๐ฌ๐ท๐จ๐พโ๏ธ๐๐ฌ๐ท๐จ๐พโ๏ธ๐๐ฌ๐ท This is one of my favourite recipes & it's super easy to make too ๐ Greek style lemon & herb chicken ๐ ๐ Served with patates lemonates (Greek lemon potatoes) ๐ฅ & tender stem broccoli ๐๐ Lemon and herb chicken ๐ Pre cooked chicken - thinly sliced 1 red pepper - sliced 1 green pepper - sliced 1 red onion - sliced 1 large flat mushroom - sliced 2 tsp chopped garlic cloves (Tesco frozen) Lemon & herb seasoning Salt & cracked black pepper ๐ฌ๐ท Spray pan liberally with butter fry light and saute the onions and mushrooms until browned ๐ฌ๐ทAdd the peppers and garlic and fry for a few minutes ๐ฌ๐ทAdd precooked chicken, sprinkle with the lemon and herb seasoning and fry until piping hot Patates Lemonates๐ 3 x largish Cyprus potatoes cut into wedges or large chunks & spray liberally with sunflower fry light. ๐จ๐ NEW RECIPE ๐๐จ I'm all for minimum fuss, maximum flavour and this was EPIC ๐ Sweet chilli beef noodles ๐ Served with mixed leaf salad ๐ฅ Absolutely deeeeeeelish ๐๐ Works out around 1.5 syns per portion Recipe serves 2 2 noodle nests - cook and set aside 2 x rump steaks - thinly sliced 1 red pepper - sliced 1 green pepper - sliced 4 spring onions - sliced (reserve some for garnish) 2 tsp chopped red chillies (Tesco frozen) 2 tsp chopped garlic cloves (Tesco frozen) 1 tsp chopped ginger (Tesco frozen) Mix the following in a bowl 3 tbsp dark soy sauce 2 tbsp reduced sugar ketchup - 1 syn 2 tbsp blue dragon sweet chilli sauce light - 2 syns 2 tbsp rice vinegar 1 tsp Chinese five spice Spray pan liberally with butter fry light and brown the steak - set aside Spray pan again with butter fry light and saute the peppers until soft Add the garlic, ginger, spring onions and chillies and fry for a couple of minutes Add the sauce and simmer gently until thickened Add the steak and noodles, combine well and heat until piping hot #foodblogger #slimmingworld #weightloss #weightwatchers #lowfat #lowcarb #highprotein #caloriecontrolled #countingcalories #caloriedeficit #homecooking #cookingfromscratch #homemadefood #fakeaway #chillinoodles #skinnybaekitchen

๐จ๐NEW RECIPE ๐๐จ This was so good and really easy to make with just a few ingredients ๐ Spicy Korean style pork steaks ๐ Served with balsamic glazed carrot fries ๐ฅ and salad ๐ฅ dressed with balsamic vinegar and cracked black pepper ๐๐ Worked out around 1 syn per pork steak Recipe 4 pork loin steaks - all visible fat removed 3 tbsp dark soy sauce 1 tbsp rice vinegar 1 tbsp gochujang paste - 1.5 syns 2 tsp honey - 2 syns 1/2 tsp crushed chillies 1/2 tsp garlic granules Marinade the pork in the above for as long as possible Spray liberally with butter fry light and brown on a hot pan - I used a smoking hot cast iron griddle pan to achieve that charcoaled flavour Transfer to an oven proof dish and pour over any remaining marinade Cover with foil and bake in the oven at 180c for around 20 minutes Balsamic glazed carrot 4 carrots - sliced into batons - I used a crinkle cutter Spray liberally with butter fry light and sprinkle with coarse sea salt, onion granules & paprika Chuck in the Actifry for around 20 minutes Add 1 tbsp balsamic vinegar and 1 tsp of mirin and cook for a further 10 minutes #foodblog #slimmingworld #weightwatchers #lowfat #lowcarb #highprotein #caloriecontrolled #caloriedeficit #countingcalories #cookingfromscratch #homecooking #healthylifestyle #foodoptimising #skinnybaekitchen
