Well that weather changed quickly, one minute basking in the sunshine ๐Ÿ˜Ž next minute, running for cover โ˜”โ˜”โšกโ›ˆ๏ธ๐Ÿคฃ We've now got hail stones ๐Ÿ™ˆ๐Ÿคฃ So bringing some Carribbean sunshine to my plate ๐Ÿ’– Carribbean style chicken curry ๐Ÿ’–๐Ÿ‘Œ Served with cauliflower rice ๐Ÿš & mixed leaf salad ๐Ÿฅ— dressed with balsamic vinegar and cracked black pepper ๐Ÿ˜ Of all the curries I've chucked together, this has gotta be up there with one of the best ๐Ÿ˜Š Curry Prepare all spices and ingredients in advance to make it easier Spray wok with butter fry light and fry 1 chopped onion until soft Add finely chopped red chilli (seeds removed) - I used Tesco frozen If you want real Jamaican heat - use scotch bonnet !! ๐ŸŒถ๏ธ๐ŸŒถ๏ธ Add spice mix - (mix together in advance) 1 tsp corriander 1 tsp turmeric 1 tsp cumin 1 tsp chilli powder 1 tsp ground fenugreek 1 tsp salt 2 tsp chopped garlic cloves Tesco frozen 1 tsp chopped ginger Tesco frozen 1 tsp cracked black pepper 1/2 tsp thyme 1 tsp paprika 1 tbsp Carribbean curry powder Add diced chicken (I used 3 x large chicken breasts) Fry for a couple of minutes. So.......... Our SW consultant set us a challenge of picking a random number and she would message us the recipe from that page in the latest countdown book ๐Ÿ˜Š I rose to the challenge & I couldn't believe it when I saw the recipe - 2 ingredients that I really don't like ๐Ÿ™ˆ๐Ÿคฃ - couscous and chickpeas, these are the work of the devil ๐Ÿ˜ˆ hahahaha !! Completely off plan yesterday for my daughter's birthday ๐ŸŽ‚๐Ÿน๐Ÿน Back on it today with these ๐Ÿ˜Š Spicy Lebanese style chicken burgers ๐Ÿ’–๐Ÿ‘Œ topped with melted cheese (hexA) Served on large flat griddled mushrooms with mixed leaf salad ๐Ÿฅ— Deeeeeeelish ๐Ÿ˜‹ Recipe served 3 500g minced chicken 1/2 red onion very finely chopped 1 tsp salt 1 tsp garlic granules 1 tsp cracked black pepper 1 tsp sweet paprika 1 tsp onion granules 1 tsp Lebanese 7 spice 1/2 tsp turmeric 1/2 tsp crushed chillies Combine the chicken with the onions and spices. A favourite classic meal of mine made syn free โค Steak Diane served with SW sweet potato chips ๐ŸŸ & salad ๐Ÿฅ— dressed with balsamic vinegar and garlic pepper ๐Ÿ˜๐Ÿ˜ Recipe for Diane sauce ๐ŸŒŸFry half a finely sliced onion, a few sliced mushrooms until soft. Add chopped garlic cloves and fry for a minute ๐ŸŒŸAdd a mug of beef stock (1 Knorr rich beef stock pot with approx 100ml boiling water), 2 tbsp Henderson's relish or Worcestershire sauce, 1 tsp mustard powder, 1 tsp cracked black pepper, 1/2 tsp salt and simmer until it has reduced a little. ๐ŸŒŸTake off the heat for a couple of minutes and stir in some quark until nice and creamy โค (if you need to warm it up again, place the heat on the lowest setting and gently reheat, stirring constantly but do not let it come to the boil otherwise it will split) I didn't add brandy so it was syn free, and tastes just as good without it xx #foodblogger #foodblog #slimmingworld #weightwatchers #lowfat #lowcarb #highprotein #caloriedeficit #caloriecontrolled #countingcalories #steaknight #cookingfromscratch #homecookedfood #homecooking #healthylifestyle #skinnybaekitchen

What a lovely sunny Sunday ๐Ÿ˜Ž With summer around the corner, this recipe is perfect for BBQ's too ๐Ÿ‡จ๐Ÿ‡ณ Char Sui Chicken ๐Ÿ‡จ๐Ÿ‡ณ Served With Cauliflower Rice ๐Ÿš & @slimmingworld Recipe for soy garlic and ginger stir fry veg ๐Ÿ’–๐Ÿ‘Œ 1 per portion ๐Ÿ™‚ Have to say that this is absolutely delicious, no faff (well not much ๐Ÿ™‚) but maximum flavour ๐Ÿ˜ oh and maybe a little blue smoke created in the kitchen ๐Ÿคฃ but trust me, it's so worth it ๐Ÿ˜Š Recipe served 3 Char Sui Chicken 3 x chicken breasts - butterflied Mix the following in a bowl 1 TBSP honey (2.5 ) 1 TBSP reduced sugar tomato ketchup (0.5) 2 TBSP Oyster sauce 2 TBSP premium dark soy sauce 1 TBSP rice wine vinegar 1/2 tsp Chinese five spice A little red food colouring (optional) Salt and cracked black pepper to taste Marinade the chicken in the above and leave for as long as possible I browned the chicken first on a smoking hot cast iron griddle pan to achieve that charred flavour. place the chicken into a roasting dish, pour over the marinade and cover with foil Bake at 180 for around 30 minutes, removing the foil 10 minutes before the end of cooking. This will definitely warm your cockles on a wet & miserable day ๐Ÿ˜œ Ready & on the table in under 20 minutes and a great way to use up leftover roast chicken ๐Ÿ”ฅSpicy Chicken Udon Noodles ๐ŸŒถ๏ธ๐ŸŒถ๏ธ Served with mixed salad ๐Ÿฅ— Recipe (serves 2-3) 2 x bundles packs of Udon Noodles - cook and set aside Leftover shredded roast chicken 3 x spring onions - chopped Handful of mushrooms - sliced 1 red pepper finely chopped 1 carrot - grated 100ml chicken stock (I used 1 chicken Oxo cube in 100ml boiling water) Mix the following in a bowl ๐Ÿ‘‡ 5 TBSP reduced salt soy sauce 1 TBSP dark soy sauce 2 TBSP Frank's Hot Sauce (any hot sauce will do) 4 TBSP oyster sauce 1-2 tsp chopped red chillies (I use Tesco's frozen ones for ease) 2 tsp garlic granules 1/2 tsp ground ginger Few twists of black pepper ๐ŸŒŸSpray wok with butter fry light and saute the mushrooms until browned. Finally managed to get some work done in the garden ๐ŸŒบ๐Ÿง‘โ€๐ŸŒพ Didn't fancy a full roast, so a simple chicken dinner with paprika chips ๐ŸŸ & mixed leaf salad ๐Ÿฅ— dressed with balsamic vinegar and cracked black pepper ๐Ÿ’–๐Ÿ‘Œ Hot Paprika Chips I find that Maris pipers work the best Microwave with skin on for about 1 minute Cut into chips (I used an apple corer but you need to be careful) Spray tray with fry light and sprinkle with sea salt and cracked black pepper. NOT ME ๐Ÿ˜œ This was insane ๐Ÿ˜๐Ÿ˜๐Ÿ˜๐Ÿ˜ Sizzling Chicken Pepperpot ๐ŸŒถ๏ธ๐ŸŒถ๏ธ Succulent diced chicken in a rich and fiery sauce ๐Ÿ”ฅ Served with swede chips ๐ŸŸ & salad ๐Ÿฅ— dressed with balsamic vinegar and cracked black pepper ๐Ÿ’–๐Ÿ‘Œ Works out around 1 syn per portion ๐Ÿ’–๐Ÿ‘Œ Recipe (served 3) 3 X Chicken breasts - diced Marinade for the chicken 3 tbsp dark soy sauce 1 TBSP jerk seasoning (Sainsbury's is syn free, others are 0.5 syn per tsp) 1 TBSP jerk BBQ sauce (1 syn) 1 TBSP honey (2.5 syns) 1 tsp garlic granules Little red colouring (optional) Sauce 1 large onion - sliced 1 tsp chopped ginger (Tesco frozen) 2 tsp chopped garlic cloves (Tesco frozen) 100 ml stock (1 chicken stock cube cube in & 1 spicy tomato stock pot in 100ml boiling water) 400g can cirio chopped tomatoes 1 TBSP Henderson's relish 1 tsp sweet paprika 1/2 tsp crushed chillies 1/2 tsp cracked black pepper 1/2 tsp salt ๐Ÿ”ฅMix together the ingredients for the marinade and toss in the chicken. Cover with cling film and leave for at least an hour ๐Ÿ”ฅSpray pan liberally with butter fry light and saute the onions until soft ๐Ÿ”ฅAdd the garlic and ginger and fry for a few minutes ๐Ÿ”ฅ Add the diced chicken & all the marinade and fry until browned ๐Ÿ”ฅAdd the stock, chopped tomatoes, hendos, spices, salt and pepper. ๐Ÿšจโญ NEW RECIPE โญ๐Ÿšจ I have to say, this was deeeeeeelish ๐Ÿ˜ Asian BBQ chicken ๐ŸŒถ๏ธ Served with crispy wedges ๐ŸŸ cauliflower rice ๐Ÿš and mixed greens ๐Ÿ’–๐Ÿ‘Œ Recipe served 4 4 chicken breasts (you could also use thighs) Mix the following in a shallow bowl big enough for the chicken to marinade (I used a pyrex dish) 2 tbsp dark soy sauce 2 tbsp BBQ sauce 1 tsp onion granules 1 tsp garlic granules 1 tsp sweet paprika 1/2 tsp chilli powder 1/2 tsp salt 1/2 tsp black pepper Marinade the chicken in the above for as long as possible, then brown on all sides (I used a smoking hot cast iron griddle pan) and set aside Keep the leftover marinade for the next step Sauce It's best to do this part in a pan that can go from hob to oven 1 onion - finely sliced 2 tsp chopped garlic cloves (Tesco frozen) 1 tsp chopped ginger (Tesco frozen) 300ml passata 3 tbsp dark soy sauce 1 tbsp sweet chilli paste 1 tsp mirin 1/2 tsp crushed chillies 1/2 tsp MSG (optional) 2 spring onions - sliced for garnish ๐ŸŒถ๏ธToss the sliced onions into the marinade left in the bowl from the chicken and coat well ๐ŸŒถ๏ธ Spray pan liberally with butter fry light and saute the onions until soft ๐ŸŒถ๏ธAdd the chilli paste, garlic & ginger and fry for a minute ๐ŸŒถ๏ธAdd everything else and stir well. Pop the chicken on top and put the lid on the pan. Had a fab Easter Sunday ๐Ÿฃ๐Ÿฐ but as usual, ate far too much ๐Ÿ™ˆ Line drawn today (well a kind of wobbly line as I have 1 portion of sherry trifle left with my name on it ๐Ÿคฃ) This was most definitely heaven on a plate ๐Ÿ˜ Made out of leftovers with a few store cupboard ingredients ๐Ÿ˜ฑ Lamb Rogan Josh served with cauliflower rice ๐Ÿš and mixed leaf salad ๐Ÿฅ— dressed with balsamic vinegar and garlic pepper Was deeeeeeelish ๐Ÿ’–๐Ÿ‘Œ Rogan Josh Leftover roast lamb (taken off the bone and diced) Leftover sliced carrots 1 onion - diced 400g can chopped tomatoes 200ml vegetable stock (1 veg Oxo cube in 200ml boiling water) 2 tsp crushed garlic cloves (I used Tesco's frozen) 2 tsp chopped ginger (Tesco frozen) 1 tbsp medium curry powder 1 tsp turmeric 1 tsp chilli powder (I used mild) 1 tsp salt 1 tsp garam masala 1/4 tsp cinnamon โญ Spray pan liberally with butter fry light and saute the onions until soft โญAdd the garlic, ginger & spices & fry for a few minutes (add a little of the stock if sticking) โญAdd the diced lamb & carrots, stir and coat well with all the spices โญAdd the stock and can tomatoes, stir well. This is certainly a taste sensation ๐Ÿ˜ & the middle picture will be me after the Easter holidays ๐Ÿฐ๐Ÿฃ๐Ÿคฃ Rose Harissa Chicken kebabs ๐Ÿ’–๐Ÿ‘Œ Served with cauliflower rice ๐Ÿš and mixed leaf salad ๐Ÿฅ— dressed with balsamic vinegar and cracked black pepper ๐Ÿ’–๐Ÿ‘Œ Works out around 1 syn per portion Recipe serves 4 4 X chicken breasts - diced Mix the following in a bowl 4 tbsp balsamic vinegar 2 tbsp tomato puree 1 tbsp honey (2.5 syns) 1 tbsp dark soy sauce 2 tsp rose Harissa paste (2 syns)๐ŸŒถ๏ธ 1 tsp salt 1 tsp cracked black pepper 1 tsp garlic granules 1/2 tsp Schwartz crushed chillies๐ŸŒถ๏ธ 1/4 tsp cinnamon โœจ Dice the chicken and marinade in the above & leave for a few hours in the fridge โœจ Thread onto skewers & Spray the chicken liberally with butter fry light and griddle on a smoking hot cast iron griddle pan until browned โœจ Transfer to an oven proof dish and pour over the remaining marinade โœจ Cover with foil and Bake at 180c for 25 minutes โœจ Remove the foil and pop back into the oven for around 10 minutes until the sauce has caramelized Serve immediately๐Ÿ’–๐Ÿ‘Œ #foodblog #slimmingworld #weightwatchers #weightloss #caloriecontrolled #caloriedeficit #countingcalories #homecooking #lowcarb #lowfat #highprotein #cookingfromscratch #healthyeating #swmeals #swmember #skinnybaekitchen

St Patrick's Day feast ๐Ÿ‡ฎ๐Ÿ‡ชโ˜˜๏ธ Guinness glazed beef casserole ๐Ÿฅ˜ Served with a Tri colour of veg - Spring onion mash potato ๐Ÿฅ” Carrot and swede crush ๐Ÿฅ• Spring greens ๐Ÿฅฌ Just 1/2 syn per portion Recipe served 4 800g lean diced beef 1 onion - diced Handful mushrooms - sliced 3 sticks celery - sliced 2 carrots - sliced 200ml beef stock (1 rich stock pot, 1 Oxo cube in 200ml boiling water) 2 tsp chopped garlic cloves 1 tbsp tomato puree 2 tbsp Guinness paste (2 syns) 1 tbsp Henderson's relish 1 tsp salt 1 tsp cracked black pepper 1/2 tsp rosemary 1/2 tsp thyme Spray pan liberally with butter fry light and saute the onions and mushrooms until browned Add the beef and fry until browned Add the garlic, carrots & celery & fry for a few minutes Add the Guinness paste, tomato puree, salt & pepper, place the lid on the pan and reduce the heat to the lowest setting on the hob. ๐Ÿšจ๐ŸŒŸ NEW RECIPE ๐ŸŒŸ๐Ÿšจ Suitable for SP day Spicy chicken Bolognese stuffed peppers ๐Ÿ’–๐Ÿ‘Œ Served with cauliflower rice ๐Ÿš and mixed leaf salad ๐Ÿฅ— dressed with balsamic vinegar, cracked black pepper and pink slaw ๐Ÿ˜ 500g chicken mince 1 onion - finely chopped 200 ml passata 150ml white wine & spicy tomato stock - (1 white wine stock pot, 1 spicy tomato stock pot in 150ml boiling water) 2 tsp chopped garlic cloves (Tesco frozen) 2 sticks celery - sliced thinly 20g mozzarella per stuffed pepper (1/2 hexA) 1 tsp salt 1 tsp garlic pepper Spray pan liberally with butter fry light and saute the onions until soft Add the garlic and fry for a minute Add the chicken & fry until browned Add the stock, passata, celery, salt and pepper, reduce the heat and simmer for around 15 minutes Place the Bolognese mixture into the peppers, top with mozzarella and bake in the oven at 180c for around 15 minutes or until the cheese has melted and is golden brown #foodblog #foodblogger #slimmingworld #weightwatchers #lowfat #lowcarb #highprotein #caloriecontrolled #caloriedeficit #countingcalories #healthylifestyle #cookingfromscratch #spday #homecooking #skinnybaekitchen

๐Ÿšจ๐ŸŒŸ NEW RECIPE ๐ŸŒŸ๐Ÿšจ This was absolutely lush and half created by my son Daniel who spotted the @schwartz.uk sriracha seasoning in @costco yesterday Soy glazed cod ๐ŸŸ with chilli, garlic & ginger ๐ŸŒถ๏ธ๐ŸŒถ๏ธ Served with sriracha spiced wedges ๐ŸŸ cauliflower rice ๐Ÿš And shitake mushrooms, stir fried with onions & peppers ๐Ÿซ‘๐ŸŒฐ Recipe (served 2) 2 cod loin steaks Mix the following in a pyrex oven proof dish 3 tbsp dark soy sauce 2 tsp chopped garlic cloves (Tesco frozen) 1 tsp chopped ginger (Tesco frozen) 1 tsp red chillies (Tesco frozen) 1 tsp honey (1 syn) 1 tsp sriracha seasoning (1/2 syn) Red jalapeno pepper (jar) Marinade the cod in the above for around 2 hours Top with jalapeno peppers Cover with foil and bake at 180c for around 30 minutes - remove the foil 5 minutes before the end and baste with the sauce #foodblog #foodblogger #slimmingworld #weightwatchers #lowfat #lowcarb #highprotein #omega3 #cod #ifitswimsitslims #caloriedeficit #caloriecontrolled #caloriecounting #cookingfromscratch #healthylifestyle #sundaydinner #skinnybaekitchen

This was the tastiest chuck together I've ever made ๐Ÿ˜ Aptly named by my son ..... "Coq au broccoli pasta bake" ๐Ÿ˜œ Syn free using cheese as hexA ๐Ÿง€ (served 4) Cook 300g penne pasta and set aside Use a hob to oven pan Fry sliced onions until soft Add diced bacon medallions and fry until browned Add shredded cooked chicken, 1 tsp garlic granules, 1 tsp onion granules & fry for a minute Add 200ml stock (I used a Knorr rich mushroom stock pot) broccoli, sliced leeks and simmer until broccoli is cooked Stir in 140g tube primula light (2 hexA) Add cooked pasta Sprinkle the top with 80g reduced fat cheddar (2 hexA) Transfer to the oven and cook at 180c until cheese is golden (approx 15 minutes) #foodblogger #foodblog #slimmingworld #lowfat #highprotein #caloriedeficit #caloriecounting #countingcalories #healthyeating #pastabake #pasta #chicken #homecookedfood #cookingfromscratch #skinnybaekitchen

๐Ÿšจ๐ŸŒŸ NEW RECIPE ๐ŸŒŸ๐Ÿšจ I'm all for minimum fuss, maximum flavour and this was EPIC ๐Ÿ˜ Sweet chilli beef noodles ๐Ÿœ Served with mixed leaf salad ๐Ÿฅ— Absolutely deeeeeeelish ๐Ÿ’–๐Ÿ‘Œ Works out around 1.5 syns per portion Recipe serves 2 2 noodle nests - cook and set aside 2 x rump steaks - thinly sliced 1 red pepper - sliced 1 green pepper - sliced 4 spring onions - sliced (reserve some for garnish) 2 tsp chopped red chillies (Tesco frozen) 2 tsp chopped garlic cloves (Tesco frozen) 1 tsp chopped ginger (Tesco frozen) Mix the following in a bowl 3 tbsp dark soy sauce 2 tbsp reduced sugar ketchup - 1 syn 2 tbsp blue dragon sweet chilli sauce light - 2 syns 2 tbsp rice vinegar 1 tsp Chinese five spice Spray pan liberally with butter fry light and brown the steak - set aside Spray pan again with butter fry light and saute the peppers until soft Add the garlic, ginger, spring onions and chillies and fry for a couple of minutes Add the sauce and simmer gently until thickened Add the steak and noodles, combine well and heat until piping hot #foodblogger #slimmingworld #weightloss #weightwatchers #lowfat #lowcarb #highprotein #caloriecontrolled #countingcalories #caloriedeficit #homecooking #cookingfromscratch #homemadefood #fakeaway #chillinoodles #skinnybaekitchen

๐Ÿšจ๐ŸŒŸNEW RECIPE ๐ŸŒŸ๐Ÿšจ This was so good and really easy to make with just a few ingredients ๐Ÿ˜Š Spicy Korean style pork steaks ๐Ÿ˜ Served with balsamic glazed carrot fries ๐Ÿฅ• and salad ๐Ÿฅ— dressed with balsamic vinegar and cracked black pepper ๐Ÿ’–๐Ÿ‘Œ Worked out around 1 syn per pork steak Recipe 4 pork loin steaks - all visible fat removed 3 tbsp dark soy sauce 1 tbsp rice vinegar 1 tbsp gochujang paste - 1.5 syns 2 tsp honey - 2 syns 1/2 tsp crushed chillies 1/2 tsp garlic granules Marinade the pork in the above for as long as possible Spray liberally with butter fry light and brown on a hot pan - I used a smoking hot cast iron griddle pan to achieve that charcoaled flavour Transfer to an oven proof dish and pour over any remaining marinade Cover with foil and bake in the oven at 180c for around 20 minutes Balsamic glazed carrot 4 carrots - sliced into batons - I used a crinkle cutter Spray liberally with butter fry light and sprinkle with coarse sea salt, onion granules & paprika Chuck in the Actifry for around 20 minutes Add 1 tbsp balsamic vinegar and 1 tsp of mirin and cook for a further 10 minutes #foodblog #slimmingworld #weightwatchers #lowfat #lowcarb #highprotein #caloriecontrolled #caloriedeficit #countingcalories #cookingfromscratch #homecooking #healthylifestyle #foodoptimising #skinnybaekitchen
