If you need a vegan and or gluten free cake with frosting that contains only things that exist in nature for any occasion let me know! This was a carrot cake for a 1 year old birthday party last night with Lilikoi cream cheeze, key lime avocado and ulu butter cream frosting. It was too big to fit on any of my platters so i picked some giant romancesco greens to cover up the boring cutting board it was on 😂 Took a page from the pizza hut playbook who if you didn’t know, prior to 2013 used to be the largest purchaser of kale in the US which they used to decorate their salad bar so you couldn’t see the counter between the bowls of salad toppings. It’s also important to note, they did not serve kale at all 😂😂😂. Much like how people overlook many greens from root vegetables (like beets and carrots) and brassicas (cabbages, cauliflower etc) but they’re just as edible and delicious as kale/collards/chard!! Okay but back to cakes! I’m really trying to make more cakes and expand flavors, so for real for real let me know if you want one for any occasion, and get ready to see more cake photos!

Who says that carrot cakes are only for Easter? The inspiration for this carrot cake, believe it or not, is a special chili pepper called Piment d'espelette (AOC label 1999). It can only be cultivated in Aquitaine in the French Basque country. The powder is obtained by grinding the peppers and it has a wonderful, sweet smell and flavor without being too spicy. During our vacation in the Loire Valley, we stayed in a charming village called Azay-le-Rideau. We became fans of a small restaurant that only uses local produce and is run by a wonderful couple. They have a spicy carrot salad on the menu in which they use this beautiful piment powder. During our talk with the friendly owners, I discovered that this unique spice is also used by bakers in local cake recipes...and that's how the idea came about 🥕CAPTIVATING CARROT 🥕 VEGAN, GLUTEN & REFINED SUGAR FREE. This is a delicious and crumbly carrot cake full of walnuts, raisins, spices and....a hint of cilli heat🔥. I finished it off with a super creamy cinnamon frosting. Absolutely divine! But thanks to the help of my amazing partner (who knows me too well) I can share this fabulous new cake entry - 🥕CAPTIVATING CARROT 🥕 VEGAN, GLUTEN & REFINED SUGAR FREE. I was working on this recipe before I injured my arm in preparation for Easter. But since this is super delicious cake it can be enjoyed all year round. Starting a juice cleanse and you’re not sure what to do with all your carrot pulp? 🤔 How about a raw, vegan, gluten-free carrot cake? 😮 Your friends & neighbors will love it! 😍 Recipe 🥕🍰 😋 Pecan Cream Cheese Frosting: 1 cup raw pecans *SOAK FOR AT LEAST 6 HOURS 1/3 cup homemade, vanilla cashew milk (recipe on this site) 1/3 cup melted refined coconut oil 1/4 cup pure maple syrup 1 1/2 teaspoons pure vanilla extract 3 tablespoons fresh lemon juice (add more for more tanginess) Pinch of freshly ground pink or sea salt Whip in a blender until a smooth, creamy frosting. Let refrigerate for at least an hour. Raw Carrot Cake: 1 cup or 8-9 Medjool dates pitted 1-2 tablespoons of filtered water Blend together for vegan caramel paste 2 cups almond flour 1 cup carrot pulp (remove any excess moisture) 1/4 cup liquid refined coconut oil 2 tablespoons pure vanilla extract 1 tablespoon cinnamon Pinch of freshly ground pink or sea salt Pulse in food processor until mixed. Place in parchment paper in loaf pan. Let set in fridge until you are ready to frost it. After frosted, let set for another 30 minutes. Bahan: 200 gr DIY GF All Purpose Flour Blend 01 by @minimalistbaker 200 gr coconut Sugar 3/4 sdt Baking Soda (skip) 3/4 sdt Baking Powder (skip) 1/4 sdt volcanic Salt 1/2 sdm kayu manis bubuk 3/4 sdt pala bubuk 1 Flax Eggs (1 sdm Flaxseed Meal + 3 sdm air panas, diamkan sampai dingin & mengental) 1 1/2 sdm Homemade Applesauce 180 gr wortel parut (sy pake ampas sisa jus) 90 ml Coconut Cooking Oil 1 sdt Vanilla Extract 3/4 sdm Apple Vinegar . 50 ml air (Optional) . Topping: Vegan Cream Cheese + wortel parut secukupnya . Cara Membuat: •Campur semua bahan kering, aduk rata, sisihkan. •Campur semua bahan basah kecuali air, aduk rata, sisihkan. •Tuang adonan basah ke adonan kering, aduk rata. I've made lots of food this week, but I've not posted because I have been so exhausted. This working full-time thing is hard work 🥴 After my commute, I just collapse on the couch and hope my husband takes pity on me and makes dinner. He doesn't fall for it though, so we've been making things together.⠀⠀ ⠀⠀ Today I feel refreshed after a trip to Mersea Island and a good dose of Vitamin D yesterday, so I made a Gluten-free Vegan carrot cake to use up all the 🥕🥕 in my fridge. I had intended to use my zucchini/courgette bread recipe and just sub in the carrots, but I didn't have any bananas or flax so I used a recipe by @feastingonfruit, only I used 200g apple puree instead of 250g and I added in more milk.⠀⠀ ⠀⠀ It came out quite really nice, but I think next time I will adapt my own recipe. ⠀⠀ ⠀⠀ I didn't use the icing in the recipe though. I didn't have any cashews, but I did find Icing sugar in my pantry leftover from Christmas fudge, so I made a quick vegan cream cheese frosting with my mixer using:⠀⠀ ⠀⠀ 300g Icing sugar (from beets)⠀⠀ 100g Vegan butter⠀⠀ 50g Oat milk⠀⠀ 1 tbsp Apple Cider Vinegar⠀⠀ 1 tsp Lemon juice⠀⠀ 1 tsp Vanilla⠀⠀ 1/4 tsp Sea salt⠀⠀ ⠀⠀ It tastes just like cream cheese frosting. BUT, I won't make this again. It's too sweet. I've been eating refined-sugar-free for a while so a lot of my old recipes just won't work for me anymore. It has spiked my blood sugar way too much. The recipe for our vegan gluten free carrot cake recipe below, and the best part is, you don’t have to scroll down 80 pages of who knows what food blogs can possibly ramble about for so long before just giving the people what they want... a list of ingredients. You’re welcome @mad_dawg2020 🤣😂 *3.5 cups gluten free flour of your choosing *2 (Maui medium sized) mashed overripe bananas if you live in Hawaii, you know what I’m talking about *3 cups shredded carrots *1/2 c melted coconut oil *1 1/4 c sugar or honey or other sweetener *2 T flax meal stirred in separate bowl with 1/2 c water if using sugar, or 1/4 c if using honey or liquid sweeetener *2 t baking soda *2 t baking powder *1 t salt *1 T cinnamon * 1 t nutmeg *1/2 T vanilla * 1 1/2T apple cider vinegar Optional 1 cup nuts or raisins Stir all of above together, and bake for 40 minutes (or might need more depending on your oven) in oiled baking sheet at 300 with fan on if you have a convection oven. If you don’t have a convection oven, it will take longer, but just check and when it’s not giggly anymore it should be done:) Frosting recipe to come... some day

Vegan gluten free carrot cake with coconut lime frosting 😍 no sketchy ingredients in the frosting! The main ingredient is the macnut pulp that’s leftover from making macnut milk. It’s sort of fluffy and whipped cream cheese or ricotta (I think, I’m not exactly sure what ricotta is like, but so I’m told) texture. Most vegan frostings or frostings in general have hydrogenated vegetable oil (shortening) often containing palm oil or vegan butter which also often contains palm kernel oil (same shizz) because of its stable but not too hard texture at refrigerated to room temp. I made this with organic coconut oil which can sometimes be too hard when refrigerated but with the fluffiness of the macnut pulp it just really works texturally. :)
