Evening everyone! Hope you're all ok. I'm on holiday with my family this week, so here's my FDOE for day 6: Breakfast: Fruit salad topped with a fig & honey protein yoghurt and a cuppa. Lunch: Jam and marmalade on toast with an apple, a couple of plums and a cup of tea. Dinner: My favourite piri piri chicken with chips, salad and coleslaw, some of the Asian sauce the restaurant makes which I had to pour over my chips, and a freshly squeezed orange juice. I made Apple Walnut Bran Muffins from Taste of Home today. See the mix-ins in the third photo. Of course since you can only buy All Bran in one size (at my grocery store anyway) I still have most of the box left. Maybe I'll just make more of these (I made a half batch - a dozen - because I wanted to try them before making a lot of them). It's nice and moist. I definitely did *not* squeeze the juice from the shredded apples because I figured we needed the moisture and I was right. Flavor is good, hearty but with enough flavor from the non-bran elements that it doesn't have that "shredded paperboard" flavor and texture. Choc Chip Banana Bread Bagels 🍌🥯 HELLO my foodies!! I am BACK and better than ever. I took a long mental health break, just felt like this account was doing more harm than good at the time. Now I want to use it to motivate myself to cook and bake more because I missed it so much. And I missed all of YOU! Recipe: 1/2 ripe banana 1/2 cup green yogurt 1 tbsp maple syrup 1 tsp vanilla 1 cup flour 2 tsp baking powder 1 tsp cinnamon 3 tbsp mini choc chips 1 egg for egg wash Mash the banana in a bowl and then add the wet ingredients (yogurt, syrup, vanilla). Fold in the dry ingredients (flour, baking soda, cinnamon, choc chips). Flour a cutting board and place the dough on it. If the dough still feels wet add more flour. Cut the dough into 4 equal pieces which you will roll into a log then shape into a bagel loop. Brush with egg wash. 🌱Banana Bread 🌱 Dans ma recherche incessante de recettes alliant plaisir et respect des exigences nutritionnelles pour les enfants (et pour nous aussi, bien-sûr), je suis souvent confrontée au défi de préserver la gourmandise tout en diminuant les quantités de sucre et de gras. Je finis tout de même par trouver le juste équilibre, celui qui me convient en tout cas 🙂 Ingrédients : 150 g de farine semi-complète 50 g de poudre d’amande 1 cuillère à café de poudre à lever 70 g de cassonade 3 œufs 100 g de beurre 100 ml de lait 3 bananes bien mûres (dont une pour le décors ) 100 gramme de pépites de chocolat Instructions : ➰Préchauffe ton four à 180°C et graisse ton moule. ➰Dans un récipient, mélange la farine, la poudre d’amande et la levure. ➰Dans un autre récipient, blanchis la cassonade avec les œufs, puis ajoute le beurre fondu, le lait et 2 bananes écrasées. ➰Incorpore ensuite les ingrédients secs aux ingrédients humides et mélange puis ajoute les pépites de chocolat. ➰Verse l’appareil dans le moule beurré, puis dispose la banane coupée en deux (juste pour frimer) ➰Fais cuire environ 40 minutes, ou jusqu’à ce qu’un couteau inséré au centre en ressorte propre.
