A revolution is relatively easy to start. Get enough discouraged people, throw in a changing social climate and an ineffectual political system incapable of reacting to or quashing that unrest, and suddenly, a revolution takes down an entire government. What happens next is much more gradual. The collapse of Communism between June of 1989 and December 1991 felt like a fever dream, and a new beginning for those living it, and those watching it. But the reality on the ground was much different. As with many other regions of the world post-revolution, there was an attempt to adjust, then a backlash and then another era of readjustment and a desire for progress and democracy in some quarters contrasted by an urge to go back into the iron arms of the fatherland in others. Amid the tumult, many of Central Europe’s most ancient wine cultures were reborn. We’re not talking the more exotic, Instagrammable Eastern Europe wine cultures like Georgia, where a range of “interesting” to delicious wines are crafted from grapes you haven’t heard of (and can’t pronounce) on-skin in amphora, then aged underground and consumed with merry fanfare in boho-rustic digs. But we’re also not talking exclusively international stars like Cabernet Sauvignon and Chardonnay being aged in used French barrels consumed with great solemnity on rarefied estates. It’s somewhere in between: the grapes are unfamiliar, but the winemaking style is recognizable and the spirit is both laid-back and serious – a very happy place to be for winemakers increasingly seeking new markets filled with curious, young drinkers who are ready to explore, but may need want to head completely off-road. We’re often asked, “What exactly is natural wine?” and sometimes even have friendly debates about it. Simply put, natural wine is made with minimal intervention in the vineyard and the cellar. This means avoiding synthetic pesticides and fertilizers on the grapes, and using natural yeasts for fermentation. Natural winemakers also steer clear of adding sulfites or other artificial stuff and often leave the wines unfiltered. Now, you might have heard some myths about natural wine, like that it’s always funky or made from obscure grapes. But that’s not quite true! Many natural wines taste very similar to traditional wines, and you’ll find all the classic grapes like Chardonnay, Pinot Noir, and Cabernet Sauvignon on our list. The craft is in the ability to create wines that are the purest expression of the grapes and the land they come from, without artificial manipulation. This often results in wines that are unique, expressive, and “living.” Some even continue to evolve in the bottle, which can make it unpredictable, especially from vintage to vintage. Radoš - a small magical 🪄 location near Ilok 🇭🇷where Fruška gora slowly blends in the Danube and embodies the best of both of the majestic geographical terms. Radosh is the name of the line of wines with the signature of Mr. Mladen Papak. A decade old, actually young, @vinapapak produces my beloved Graševina with a glimpse of green 💚. Chardonnay bottled Burgundy style is a textbook example of this wine. Riesling is a reflection of insistent sunshine giving it a mighty 14.5% percent of alcohol 😮. Traminac is magnificent 🤩 in both dry and sweet versions. Frankovka rosé is available in both dry and medium sweet variants, but the red version just blew my mind 🍇. Classic red giant, a blend of Cabernet Sauvignon and Cabernet Franc 🍷, is one of the numerous proofs that our latitude can give birth to perfectly vigorous reds. Soft purple in color, a more natural style, with characteristics of blueberry yoghurt, plum, fig, lavender and purple blossoms in general, fresh herbs, wild grass, and a touch of salinity and a bit of funky earthiness. Fresh acidity, plenty of tannins, respectable finish. Full, satisfying, delicious. Enjoy with our lamb rib chops, beans with lamb merguez, sliders, and charcuterie. 🍷: Kaamen III 2021 👨🏼🌾: Vinas Mora 🍇: 100% Babić ——— 👨🏼🌾: Le domaine est situé dans la région de Primošten en Croatie, au bord de la mer Adriatique. Les cépages locaux y sont travaillés tels que le débito et marastina, en blanc et les babić, lasin et plavina en rouge. Les vignes sont perchées jusqu’à 300m d’altitude sur un terroir calcaire et sont âgées de 20 à 100 ans selon les parcelles. 🍇: Pour cette cuvée, après une sélection minutieuse, les raisins fermentent 4 à 5 jours dans des cuves ouvertes. Plus de la moitié des raisins est élevée dans des cuves en fibre de verre, l’autre partie en fûts de chêne de 500 litres. 🍷: Une bouche sur la violette, la pétale de rose. L’iode ressort pour l’ensemble des convives autour de la table avec ces arômes d’umeboshi une petite prune que l’on macère dans le sel régulièrement consommée au Japon. Un vin à forte identité. J’ai dégusté cette cuvée sur le millésime 2020 il y a plus d’un an et je retrouve les traceurs de goûts sur ce 2021. Ilok is abroad, in Croatia 🇭🇷, but it’s not far away. Ilok is our closest foreign neigbour and I couldn’t wish for a better friend across the border. We are connected by the Danube, Fruška gora and of course - wine. Days bathed in the sun’s warm 🌞 and showered by fresh spring rain ☔️ were coloured by the range of wines almost resembling a rainbow spectrum🌈. The kingdom of Graševina and Traminac 🥂, backed up with Frankovka 🍇 and internationally known varieties that have a home of their own in the easternmost wine region of Croatia, is a true heaven for wine enjoyment with a special feeling. Authentic Ilok experience was amplified by the stay at @guest_house_weinrauch that originates from the beginning of 20th century. @winery_sontacchi is a true boutique wine project of brothers Antun & Krunoslav Sontacchi. They’ve been on our radar for quite some time as it seemed everywhere we went someone ask us if we’d tried their wines. Once we did, wow, we understood the hype. Krunoslav it addiment about growing organically and ensuring the biodiversity of the vineyards is maintained. These are truly low-intervention wines made with a highly level of expertise, passion, and attention to detail. We’ve had the pleasure of tasting through several vintages of the whole Sontacchi line-up and we’re wowed year after year. Kutjevo is a small village located in Croatia’s Slavonia region, where the winery and the family’s small hotel resides. This area is a powerhouse for producing wines. The climate and soils are near perfect for vineyards as well as other agriculture ventures. The food in this region is also a highlight. Unlike the coastal regions where seafood is king, here in Slavonia you’ll find pork, spicey goulash, and big rich flavors in almost every dish. These wines were meant to accompany food, to be shared, and to be enjoyed. We have for the first time in the US Cabernet Franc or Kitokret, depending on which label you enjoy, is much like the cuisine of the region; rich, bold, with excellent warm fruit notes but a deep earthy spice that lingers on the palate. A perfect pairing for those casserole nights or leaner red meat from the grill. If you’re more of a summer styled wine fan Sontacchi’s Graševina (Welschriesling) is routinely one of the best in the business. A softer palate for this white gem with notes of red apples, slight black tea and that incredible saline kick that we love so much in white wines. Perfect for summer sipping. If you’ve met Antun and Krunoslav you know just how much fun they are and just how passionate they are about what they do. 'My husband and I absolutely loved the afternoon we spent participating in the “Taste of Korcula” bike tour hosted by John and Rachael! The bike tour was not too intense—though you should have some experience on a bike and there are some hills. And all of the stops were wonderful—this is a perfect way to learn more about Korcula’s agriculture and foodways, and to see some of its beautiful countryside. We especially enjoyed the time we spent on Ivan’s farm. The entire experience, which included a honey tasting on the outskirts of Korcula and wine tasting in Lumbarda, was wonderful.'
