Finishing birthday week with a perfectly aged Washington (Walla Walla) Cabernet Sauvignon. 2014 was a hot growing season which Walla Walla had rated as exceptional. This Foundry Vineyards bottle was aged in my little cellar and it’s paying off. Tanins are much softer, acidity is still there great dark fruit (cherries and cassis), cedar, and earth. Great long finish with some cocoa. This is my sweet pot on aging. The drink: For my wife’s birthday, we decided to open a special bottle she was gifted a couple of years ago: @caymussuisun 2019 Cabernet Sauvignon. I’m always skeptical of expensive bottles but this is certainly the best Cab I’ve ever tried. After a 2.5 hour decant, it’s giving all the fruit but still manages to be well balanced and presents notes of raspberry, blackberry, oak, cream, and pepper.
