๐ฑ Spicy Lentils and Beetroot Salad ๐ฑ I had this for lunch today and it was amazebobs! ๐ค We're officially in kapha season, so now is the time to eat warm nourishing, and light food - staying away from heavy, cold and wet! Earthy and sweet, beetroots are the perfect cleansing and nourishing option for spring; helping your body rid itself of the stagnation of winter. As our body prepares for spring it releases winter fat stores into the blood which can lead to a congested liver and thick, rich blood; the cholagogue* (ooh, that's a bit word for a Wednesday ๐ฒ) effect of beetroot helps to flush these excess oils and cleanses the blood. ๐ฉธ ๐ INGREDIENTS 500g beetroot (raw), cubed 3 garlic cloves, finely chopped 1 large red chilli (your choice to use the seeds or not) 1 x 400g tin of green lentils, drained and rinsed A large handful of rocket A cup of chopped cauliflower (or broccoli) Salt and pepper ๐ฅฃ MARINADE 1 tbsp olive oil 2.5cm root ginger, peeled and grated Half tsp of agave nectar 1 tbsp balsamic vinegar ๐ฅ PEANUT DRESSING 2 tbsp peanut butter Half tsp cayenne pepper 2 tsp agave syrup 2 tsp tamari 2 tsp lemon juice 2 tbsp water ๐ METHOD Drizzle beetroot with olive oil and a sprinkle of salt. Either roast in the oven for 45 minutes (200C/400F) or use your air fryer for 15 minutes. Mix all the marinade ingredients in a bowl. Mix all the dressing ingredients in a bowl. Heat a drizzle of olive oil in a pan over a medium heat and add the garlic and chilli โ cook for 5 minutes. Add lentils, season with salt and pepper and fry for 5 minutes. Place lentil mixture in a bowl. Add rocket, a splash of olive oil and lightly mix the leaves in. Arrange beetroot on top. ๐ง ๐๏ธ I was talking to the incredible @thetheresacheung of White Shores ๐ง this morning about the profound impact of Ayurveda in creating inner peace and how I started my journey with intentional healing, spirituality, yoga, and Ayurveda๐ชท ๐ฃ๏ธI spoke to a group of entrepreneurs about the importance of gut health and digestion from an Ayurvedic perspective๐ฅ People wanted to know what to do for hunger, lack of hunger, gas, bloating, heartburn, acidity, and more. ๐ง For me, when my mind is calm โฆ my digestion is poetic. ๐ค๐ผโAll disease begins in the gut.โ Hippocrates said it thousands of years ago, and itโs one of the foundational principles of Ayurveda as well. While Ayurveda is all about customized healing โฆ here are a few, general things I told them๐๐ผ โ ๏ธFeeling heavy or sluggish after your meals could be a sign of digestive toxins. โ Donโt eat ice or drink water/beverages with ice. โ Raw foods are a big NO-NO, especially in this season. โ Sip on warm water throughout the day. โ Eat simple but fresh meals and avoid leftovers. โ Buttermilk is a great addition to your diet. โ A great way to rekindle your โagni, or digestive fire: take a slice of fresh ginger and squeeze some lemon juice over it and sprinkle a pinch of salt. Eat it. โ Chew on fennel seeds (1 tsp post meals) as it aids in digestion and helps with acidity. ๐ฃ ๐๐ฃIn Ayurveda, strong and balanced Jatharagni or agni (digestive fire) is integral to enjoying overall good health.
