Inventing a Recipe with Leftovers 👩🏻🍳🥔🥫🥰 My son came for New Years and we cooked a lot. When he left I had plenty of potatoes (that I do not eat much) and concentrated tomato paste, so I decided to cut the potatoes in small pieces and bake them in the oven. When they were golden (because they have been cooked in some oil) I mixed the tomato paste and put them back in the oven for some time. I let them cool a lit bit and sprinkle with parsley. Not posted in a little while. Life has just been flying by. Sometimes when life is just passing you by you forget how far you have come. Although the first pic with my cheeky Costa was only a year ago and the peak of my journey after surgery I can still see a difference even though I have practically maintained for the past 12 months. Little life update. I have officially finished my 20 weeks of MANTRA therapy. Definitely made a lot of progress Most importantly, I no longer weigh 6+ times a day. I literally have the best friend in the world. A couple of months ago I applied to do a course through my job which is a foundation degree apprenticeship. I've been waiting 2 months to know if I got accepted. My friend knew how much it was killing me. Finally found out of Friday I got accepted and start in less than 3 weeks.
