Roasted Red Pepper & Burrata Toast by @breadbakebeyond The red pepper dip is also known as Muhammara. The dip recipe will have about 2-3 servings. Ingredients: For the red pepper dip: 2 red bell peppers - cut into halves ¼ cup walnuts- roasted and unsalted 1 teaspoon sumac 1 tbsp. paprika or Aleppo pepper ⅓ cup bread crumbs 1 tbsp. tomato paste 3 heads of garlic (1 is for the toast) 1 tbsp. date honey (or regular honey) 2 tbsp. olive oil Salt and black pepper to taste *For extra heat, add 1 serrano pepper For the toast: 1 slice of sourdough bread 1-2 tbsp. red pepper dip 1 Burrata Fresh parsley, chopped 1 tbsp. olive oil 1 tbsp. walnuts, chopped, roasted, and unsalted Honey (optional) Salt and black pepper Instructions: 1. Preheat the oven to 400 F. 2. Place the red peppers and garlic on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for about an hour. **Check the garlic after 30 minutes - you might need to cover it with aluminum foil to prevent burning. 3. Once ready, let the vegetables cool. 4. Peel the skin off the red peppers and squeeze out the garlic cloves (save one for the toast). 5. Blend all the muhammara (red pepper dip) ingredients in a food processor until it forms a smooth paste. To assemble the toast: 1. Lightly toast the bread. 2. Squeeze the garlic out of its skin and spread it over the toast with a butter knife. 3. Spread muhammara evenly over the garlic. 4. Top with Burrata, sprinkle with parsley, drizzle with olive oil, and season with salt and pepper. 5. Finish with a drizzle of honey and a sprinkle of walnuts. Serve immediately!

Stir-fried flat rice noodle (kway teow) - less fat version at home. I know hawkers & restaurants use more duck or pork fat to make their kway teow soooo delicious and richer in flavour, but I opted to cut out the fat. I might’ve went overboard this week. How many of you have spent weeks…months…working your butt off inside/outside the gym, only to end up with the exact same physique overtime? 😞🙋🏼‍♀️ I know I did. For years. So what was the missing puzzle piece? Nutrition!! Specifically : counting macros. I had no idea how much it would help me progress in my strength and overall physique. Or maybe the truth is that I DID have an idea, but I was too scared to start because I knew it would take effort to figure it out. The fear laziness were paralyzing. Let’s talk salads! Are you a volume eater? While they are a great way to increase your veggie intake for the day, make sure they are full of protein as well! Hard boiled egg, edamame, grilled chicken breast & good culture cottage cheese! Protein & nutrient packed!! (I love to use cottage cheese as my dressing, adds protein & eliminates a 2 TBSP serving of dressing that is full of junk. Which let’s be honest 2 TBSP is not near enough. Physique goals are great… But what if they started being the second priority? What if instead of seeing the way we LOOK as the ultimate goal…we started setting other goals that just so happened to change the way we look (usually for the better)? Hang around in the fitness world for a few minutes & you’ll get the question about your current goals? Building muscle or losing fat? Which again, totally fine and valid goals! But I’ve seen it happen time and time again that eventually…all of that gets a little old… Exhausting, even. Day in and day out pushing yourself to show up and making every decision based on how it will impact the number on the scale and your outward appearance… It’s no wonder so many people struggle with the longevity component of health and fitness! I spent a very long time hyper focused on changing my physique. And truth be told, I loved it. I loved the challenge. I loved working SO hard & seeing my physique literally change before my eyes. I loved the discipline. …until I didn’t. & when I eventually got tired of caring so dang much about what I looked like… I fell into a ‘rut’ that made me feel like a failure. Dragging myself to the gym (and ‘missing’ quite a few workouts…) Bribing myself to eat my dang vegetables Coming up with every excuse in the book as to why I couldn’t hit my step goal. I thought I had fallen out of love with showing up for & taking care of myself. But what I’d actually fallen out of love with, was making my entire life revolve around what I looked like. And doing EVERYTHING for the sole purpose of ‘looking good.’ What’s crazy is…now that I’ve started training FOR something…not only am I… EXCITED to train & prioritize nutrition in order to allow my body the fuel it needs to PERFORM. I’m actually feeling the MOST confident in my body that I arguably EVER have 🤯 My physique is a reflection of the hard work I’m putting in to achieve a big, impossible goal…of the love and support I’m giving it along the way. A reflection of the amazing things my body is currently capable of, and the things it’s working so hard to BECOME capable of. And suddenly…it all just feels so easy again 🤍

Evening everyone! Hope you're all ok. I'm on holiday with my family this week, so here's my FDOE for day 3: Breakfast: Fruit & Fibre cereal with a @danone.yogurt Blueberry YoPRO yoghurt (review to come!), a banana, blueberries and strawberries, with a cuppa. Lunch: A ham, cheese and @heinz ketchup toastie with tomato slices, an apple, a couple of plums and a cup of tea. Dinner: Chilli con carne with rice and salad, some of the amazing Asian sauce the restaurant makes which I had to pour over my rice, and a freshly squeezed orange juice. Afters: A @lindahls_nederland protein yoghurt (review coming soon!) topped with a chopped up @cadburyuk Honey & Oat Brunch Bar (review pending!) and a cuppa. ‼️Warning! Long post ahead‼️ I’m on a journey to food freedom and to love my body no matter what it looks like. For years I’ve struggled with body image issues and thinking that if I just attained a certain look THEN I will be happy. I’m tired of chasing after a certain “look”. For me, that was to be shredded with the abs and all but I always struggled because I always also wanted bigger glutes 🤣 with that being said, I’ve never attained the shredded abs and that’s okay!! But this way of thinking has kept me from having joy in my life and that is NOT what life is about (plus we’re only getting older 👵🏻) I want to love my body no matter the size and I want to be strong! I want to love the body God gave me and take care of it the RIGHT way but also not feel guilt over eating something that isn’t a whole food. I want to eat to fuel my body, not look a certain way. I’ve been in a constant cycle of doing tons of challenges, diets, or restricting myself to then turn to binging and not working out and then feeling guilt and shame and looots of insecurity to then go back to the challenges and diets/restrictive eating, etc. it’s been a constant cycle for ten years and well quite frankly, I’m so over it! I’m so tired of looking at food as good or bad, hating my body for not being shredded, so sick of the dieting and not allowing myself to eat what I want to then turn around to binging. I’m done with feeling guilty when I DO eat something that diet culture deems as “bad”. I’m sick of it all. Anybody else fall into this same cycle too?? I want to share my journey to finding food freedom and accepting my body and loving it no matter how it looks. I heard somebody say that healthy equaling a look is problematic, healthy equals functioning well! Food is good! Food is fuel! With that being said, I’m just at the beginning of this journey and social media is toxic for me to look at. I get there’s positivity here too BUT in my mind and issues I struggle with, the bad outweighs the good a lot of times.
