Godd lonche or sweet mango pickle….. gooey, mouthwatering, heavenly! Food has a way of transporting us to the past and this sweet mango pickle takes me back to my childhood and my maternal grandmother’s kitchen. Amma is the best homechef I’ve ever met - passionate, creative, incredibly versatile. The house would be chock-a-block full during the summers when all her kids and grandkids came visiting and she would happily cook up a storm. Her repertoire of recipes ranged from traditional Konkani dishes to others that she picked up over the years. She made cooking look so simple and effortless, no matter what she cooked, or how many people she was cooking for. Her genuine love for cooking shone through in every dish she prepared, infusing her creations with warmth, flavour, and love. Sweet mango pickle is deliciously saucy, sweet and tangy with undertones of spice. A favourite of all us cousins, this pickle is made by cooking raw mango cubes in jaggery syrup & some spices. Goes great with chapati and curd-rice. We always came back home with a big jar full of this luscious jammy pickle to be relished through the year. Here’s how you can make it: Skin and dice 2 medium raw mangoes (preferably totapuri mangoes). Measure the cubes in a cup and mix with same amount of jaggery powder. Heat 1 tbsp groundnut oil and splutter 1/2 tsp each methi seeds and mustard. Add a pinch of hing, 1/4 tsp haldi, 1/2 tsp red chilli powder. Add the mango-jaggery mixture, salt to taste and a pinch of pepper powder. Cook on low heat till the mangoes are cooked and the jaggery melts and turns gooey. Creamed Egg and Asparagus on Toast . I always remember waking up early on the weekends with my siblings running to the kitchen and fighting for the last asparagus in the pan. I remember being so small. Having to use a bench to even see above the countertop. More than eager to help put the boiled eggs in the slicer while playing a version of “hot potato” when peeling the shells off to prep🥚 What is a dish you’ll always hold close to you??
