Stayman - a smallish, red and yellow apple with red straight lines going down it, with somewhat white lenticel’s dotting the surface unevenly. Flesh is whitish green. Holy cannoli. This is like biting into Play-Doh. It is entirely far too soft for my sophisticated palate. Moving on to the second apple; better 😅 crispier flesh and juicy but also dry? Wtf is going on with this apple. The skin is a little too Thicc for my sophisticated palate. MY WIFE hated this immediately 😳😨🫣 Apple bites - Stayman apples, sometimes called Stayman Winesap, were discovered by Dr. Joseph Stayman (more like SLAY-man 💅🏻) growing as a chance seedling on his farm, in 1866 in Leavenworth County, Kansas . They are believed to be a natural mutation (🤯) of the Winesap apple, an heirloom American variety prevalent in the early 19th century. In 1895, Stayman Winesap apples were chosen as a new commercial cultivar by the Stark Brothers and were heavily promoted as a cooking apple in their catalogs through Stark Brothers Nurseries (@starkbros fact check me on this). Dr. Stayman was born in Cumberland County, PA (local hero 🫡) October 7, 1817, moved to Ohio with his parents in 1839, and by 1860 he had purchased a nursery business in Illinois and moved to Kansas. Besides the Stayman apple, he is also responsible for the Clyde strawberry 🍓 and other varieties of grapes 🍇 , raspberries and more apples. Very small batch apple scrap vinegar. We harvested our first few apples from the trees we grafted a few years back. The imperfect ones were cut into small pieces, submerged 1 cup filtered (no chlorine) water to 1 tablespoons BeeBlessed honey. Added a splash of blackberry wine (yeast). In a few weeks it will be filtered, add a splash of last years apple scrap vinegar and a week later - vinegar! So yummy you will never go back to store bought. Stayman, aka Stayman Winesap (but not to be confused with *just* Winesap). This is a medium, asymmetrically squat, mostly crimson apple with a nice gloss. It's a handsome apple! . It tastes good, too. The texture is very firm and crisp, which I welcomed after a few varieties that were on the mushy side. It's also very juicy. The flavors were a little watery but still very pleasant: there was a cidery quality, toasted grains, and some indistinct fruity notes. The skin was a bit chewy. Overall this was very easy to eat and I am excited that I have a few more samples. . This was discovered in 1866 in Kansas by a Joseph Stayman.

Pie crust recipe (neutral crust, not sweet, can sub with any flour) in the #BananaTestKitchenCookbook I am officially sold OUT of the physical copies of the cookbook, but the PDF is still available for $20 My recipe makes 2 crusts, so I did this x1.5 and got 3 crusts that weighed .6lbs apiece. Somehow I am making multiple pies this year. #NYStyleAppleCrumbPie but 'make it close to a health food' is what's pictured here. However, the fully decadent version is also found in the #Dessert section of the cookbook. It's an ode to the 1st epic one my Aunt Teri brought from NY to a Levittown Thanksgiving and continued to bring. I broke the rules here and made the version in the #LeCruset #MiniCocotte sans crust; so it's really a #FruitCrumble now. Also, including the oats and other grains isn't normally how I would do a crumble. But, I needed someone with dietary restrictions to enjoy this, & my friend to treat herself, so I ad libbed on my own recipe and used steel cut oats, bran, flax seeds (ground up), and sweetened with only stevia, honey, went way low on the brown sugar and added molasses. I even cut back on the flour because it tends to act like white sugar. 3 different apple varieties, because that's what I love doing. #GrannySmith #HoneyCrisp #StaymanWinesap

Another experience in #PAcider tonight. This bottle of Stayman Winesap by @ploughmancider is my first from these guys, thanks to @ronaldct . I was worried that this would be a knock down drag out fight with it's 8.5% abv, but that was not the case at all! 🍎🍎🍎 While I would hesitate to call this "light", it could give one that impression! The first few sips out of the fridge were of abrasive acids on the tongue, with hanging tannin on the backend. As this warmed, you got a sweet spot with maximum fruit/apple taste, then this warmed more and gained some citrus notes found in citra hopped ciders. The whole time this carried a peculiar mouth feel that was a bit watery for a cider this strong, but as this was dragged over the tongue, reminded me of a club soda or tonic water feel. 🍎🍎🍎 No dates to give an idea on the actual age of this, any ideas @3springsfruit ? Orchard Potluck Smoked Stayman Winesap from Blue Bee Cider (Richmond, VA). In their small batch Orchard Potluck series, Blue Bee says they are trying to expose cider drinkers to some single varietal ciders they otherwise might not have occasion to try. In this bottle, they take it a step further and collaborate with two other neighborhood businesses: Ardent Craft Ales and ZZQ barbque. The apples were smoked in ZZQ’s smoker and then pressed and fermented. It definitely brings the smoke. Almost like an Islay Scotch, but the oak and hickory bring a different flavor than the peat used in Scotch. I am not generally a fan of big smokey scotches, but this was good. Took some getting used to, but after the initial shock it went to down easy. If you like funky ciders and smokey whiskies this is one to be on the lookout for. It will not be for all cider fans, though. Ardent and ZZQ are also in the Scott’s Addition neighborhood of Richmond, VA. The area is home to 7 breweries, 3 cideries, a meadery, and a distillery. Make it a stop on your next cider (or beer) vacation and get some of the amazing ZZQ while you are there. We’ve come to the last night of Cidermas, also known as the night before Christmas, and I was quite intrigued to open this @threadbarecider Stayman-Winesap. The bottle calls this a carbonated apple wine which I found interesting and I am curious why they used that language instead of calling it cider because it’s definitely a cider if you ask me. I’m also not sure if this is the same apple that I’ve seen called just Winesap or if this might be a relative of that one. So basically, right away I have a lot of questions! 🤔 Taste wise I found it to be very light, almost a little too light as I kept searching for more of the apple flavor in my glass. I expected more of a punch with this one but it was closer to a light breeze.
