In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the chuck roast and sear on all sides until browned. Remove the roast from the pot and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for 3-4 minutes until the vegetables begin to soften. Soupe crémeuse au potiron et aux carottes Ingrédients : 1 potiron moyen, pelé, épépiné et coupé en morceaux 4 grosses carottes, pelées et coupées en morceaux 1 oignon, haché 3 gousses d'ail, émincées 1/4 de tasse d'huile d'olive 1 cuillère à café de cumin moulu 1/2 cuillère à café de coriandre moulue 1/2 cuillère à café de noix de muscade moulue 6 tasses de bouillon de légumes Sel et poivre au goût 1/2 tasse de crème fraîche Persil frais, pour la garniture Mode d'emploi : Dans une grande marmite, faire chauffer l'huile d'olive à feu moyen. Ajouter l'oignon et l'ail hachés et faire revenir pendant 2 à 3 minutes jusqu'à ce qu'ils soient ramollis. Ajouter le potiron et les carottes dans la marmite et mélanger avec les oignons et l'ail. Assaisonner avec le cumin moulu, la coriandre moulue, la noix de muscade moulue, le sel et le poivre. Remuez bien pour enrober les légumes d'épices.
