Recipe: . Roasted Cauliflower Steaks:⁣ - 1 head of cauliflower (about 600g roughly) ⁣ - 1tsp onion granules ⁣ - 1tsp garlic granules ⁣ - 1/2tsp smoked paprika ⁣ - 2tsp nutritional yeast⁣ - olive oil ⁣ - pumpkin seeds/sunflower seeds or both (optional) ⁣ - crushed sea salt & black pepper⁣ - 1 tbsp fresh chopped parsley for garnish. ⁣ ⁣ Method:⁣ . 1. Preheat the oven to 200C/180C fan/400F/gas mark 6. Line a high sided baking tray with nonstick baking parchment. ⁣ 2. Slice the cauliflower lengthways into thick slices using a large knife, then place them onto the baking tray.⁣ 3. Drizzle the cauliflower steaks with a little olive oil until all sides of the cauliflower steaks are saturated. ⁣ 4. Add all the dry seasonings into a small bowl including the salt and pepper, then mix well until fully combined. ⁣ 5. Sprinkle the seasoning all over the cauliflower steaks on all sides until evenly coated.⁣ 6. Cover the baking tray with tin foil and bake in the oven for 6mins, then take off the foil. Sprinkle the cauliflower steaks with seeds, then place back into the oven for a further 10-15 mins. ⁣ 7. Turn them over halfway through cooking time so both sides are crisp. Garnish with the chopped parsley and enjoy! ⁣ . .

I recently started a vegan journey. Tomorrow marks my first completed week. To be honest I don’t know how long this will last or if it will last. But with all the options out there now it’s been surprisingly kind of easy! I’m hoping to share some of the entrees and dishes I’ve had or made and wanted to start with these pics. These are everything I ate today from @urbanplates @jambajuice @lazydogrestaurants and @yogurtlandinc 🫰 I’m so proud of the vegan community and efforts in providing new and sustainable options. I also find it funny that the two place I went to had similar dishes - chili glazed grilled tofu and sweet and spicy tofu. With that said, I had plenty of protein and tofu. If you’re curious, my drink from Jamba Juice was the matcha green tea blast and my dessert from yogurtland was a vegan Plant-Based Cinnamon Oatmeal Cookie topped with coconut and almonds. Excited to share more vegan dishes and menu options as I continue to support local businesses. As I’ve said many times before, I think breakfast foods are the best kinds of foods. I often make breakfast for dinner, and omelets are always a great brinner dish. Omelets were one of my favorites in my pre-vegan days. While this isn’t really the same type of eggy omelet I remember, the chickpea flour and kala namak (black salt) do give it a bit of the flavor that I remember. The perfect porridge 🥣 🇺🇸👇🏼 Havregrød er min go-to morgenmad, og jeg tror aldrig, jeg bliver træt af det 😄 Den skal helst være cremet, men have bid, og den skal være tilpas, sød, salt og umami. Ikke for sød, da toppings bidrager med sødme. Men heller ikke for saltet, da det ødelægger smagsoplevelsen. Derfor ser min opskrift på den perfekte grød således ud: Grød: 1 dl havregryn, gerne en blanding af grov- og finvalsede 1 dl havremælk, en baristaversion for cremethed (Oatly er den bedste efter min mening) 1 ½ dl vand 1-1 ½ tsk hvid(Shiro) miso Hæld det hele i kasserolle og kog op. Skru ned på lav-medium varme og lad det simre. Rør rundt undervejs. Tag af varmen når det har den rette konsistens. Ikke for flydende, men heller ikke for fast. Toppings: Blodappelsin, banan, kiwi, granola og mandelsmør 🍊🍌🥝 Målene er til for at vise dig størrelsesforholdene. Roasted Fingerling Potatoes, Parsnips and Onion with Lentils in a Creamy Lemon Dill Dressing 🌿⁣ ⁣⁣ ⁣680g (1 small bag) fingerling potatoes, cut into small rounds⁣ ⁣180g cooked lentils ⁣ ⁣4 parsnips, peeled and chopped⁣ ⁣1 red onion, sliced⁣ ⁣2-3 tbsp @love.legrand salted vegan butter ⁣ ⁣1/4 cup fresh dill, chopped⁣ ⁣3 cloves garlic, minced⁣ ⁣1 lemon, juiced⁣ ⁣salt + pepper, to taste⁣ ⁣⁣ ⁣The dressing:⁣ ⁣4 tbsp @love.legrand plain vegan cream⁣ ⁣cheese⁣ ⁣1 clove garlic, minced⁣ ⁣2 tbsp fresh lemon juice⁣ ⁣1 tbsp fresh dill, chopped⁣ ⁣2-4 tbsp water to thin (or you could also use evoo)⁣ ⁣a pinch of salt + pepper⁣ ⁣⁣ ⁣Combine dressing ingredients in a small bowl. Stir until smooth, adding more water or oil to thin (just a little at a time). A jeśli Twoje nie lubi, to w tym przepisie pokocha ty zresztą też. Obiad jest błyskawiczny - robisz go w 15 min - paczka makaronu bezglutenowego, 🌱 pęczek zielonych szparagów,  🌱 jedna średnia cebula,  🌱 2-3 ząbki czosnku,  🌱 300 g śmietany 18% 🌱 sól, pieprz, słodka papryka w proszku (wszystko na oko) . 🌱 opcjonalnie: pietruszka lub koper, . 🌱 do dekoracji płatki drożdżowe (lub parmezan) ➡️Postaw wodę na makaron. Pokrój w kostkę cebulę i posiekaj czosnek. Oderwij zbutwiałą cześć szparagów i pokrój je w 1-2cm kawałki. Rozgrzej na patelni masło ghee lub olej kokosowy wrzuć szparagi i cebulkę. Do gotującej wody wrzuć makaron. Szparagi z cebulą smaż ok 10 min (przy ostatnich 2 min dodaj posiekany czosnek i przyprawy). Ugotowany makaron odcedź, przelej zimną wodą i przełóż na talerze. WINTER KALE AND FARRO SALAD By @betterfoodguru Ingredients * 3 tbsp olive oil extra virgin, divided * 3 garlic cloves whole * 3 baby bell peppers halved * 2 cups cauliflower florets * 8 oz farro cooked according to package and cooled * 1 bunch kale washed, stemmed and chopped in bite sized peices * 1 lemon large, juiced * 1 tbsp sesame tahini * 1/2 cup pomegranate arils * 1/2 tsp salt * 1 black pepper to taste * 1 sprig rosemary torn * 1/2 tsp garlic powder * 1 cup kabocha squash cubed * Preheat oven to 400 degrees Method * Spread cauliflower florets, garlic cloves bell peppers and kabocha squash in a single layer on a sheet pan. Drizzle with 1 tbsp olive oil, a pinch of salt, garlic powder and rosemary. Toss with hands to distribute oil and seasoning well and bake for 20 minutes. Then let cool. * In a large mixing bowl add the kale, remaining olive oil, lemon, tahini, salt, pepper and roasted garlic. Massage the kale gently for 5 minutes mixing all of the flavors into the kale. This is dressing the salad. Melding the ingredients together with your hands will relax the kale and produce maximum flavor. * Add the cooked farro and mix. Then add in the roasted and cooled veggies and the pomegranite arils. (Chop the peppers first in smaller bite sized pieces)Taste for seasoning. Adjust if you like to add more salt or lemon. This salad will get more flavorful as it sits so be careful not to over salt. .

If not, then increase the cook time by 5 minutes. Toss the cubed tofu with 1 Tbsp olive oil, salt, and pepper and spread out evenly on a cookie sheet. Bake for 20 minutes, remove and set aside. Prepare the noodles according to the package directions and drain, rinse and set aside. In a large pot heat olive oil and chili flakes. Add onions and sauté for a few minutes. Add in garlic and ginger. Toss in mushrooms, and carrot and cook until carrot starts to soften. Add peppers and toss to combine. Add curry paste tossing everything to coat. Next, pour veggie broth and water in pot. Bring to a boil and reduce to a simmer. Season with salt and pepper. Once vegetables are cooked add in tofu, spinach and coconut milk. Simmer for 5 more minutes. Check again for seasoning. Portion noodles into bowls. Ladle soup over noodles. Drizzle sauce over soup and enjoy!!! ​ 📸 ​@terianncarty ​ ​

The smaller the crumbles, the firmer / crisper they will get during cooking. Add a bit of oil and cook for 20 min on medium heat, stirring periodically. Towards the end, add around a tsp of dark soy sauce While tofu and noodles cook, thinly slice the carrots. Add them to the tofu pan when tofu is done. Continue to cook for a couple min while you whisk up the sauce. Add sauce to the pan, cook until it starts to thicken. While sauce is thickening, chop the scallions and herbs. Potato curry with chickpeas by @earthofmariaa recipe: 1 tsp olive oil 1 medium onion, diced 3 cloves garlic, minced 1 tbsp tomato paste 2 tsp garam masala 2 tbsp cumin 1 tsp turmeric 1/2 tsp paprika 2 cups potatoes, chopped 1 can coconut milk 1/2 can chopped tomatoes 2 tbsp curry powder 1 can chickpeas, drained and rinsed 1 cup green peas 2 cups spinach Juice of 1/2 lemon Salt and pepper to taste Heat the oil in a pan and then add the onion and garlic. Cook for 3-4 minutes. Now add the tomato paste, garam masala, cumin, turmeric and paprika, cooking for a few minutes more and stirring continuously. Add the potatoes, coconut milk, chopped tomatoes and curry powder. Bring to a light simmer and cook for around 15 minutes before adding the chickpeas and green peas. Cook for a further 10-15 minutes, or until the potatoes are fully fork-tender. Stir in the spinach and lemon juice, also seasoning to taste with salt and pepper.
