🥢 Kung Pao Chicken 🌶️ Spicy and Flavorful Kung Pao Chicken Ingredients: 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 2 tablespoons soy sauce 1 tablespoon rice wine or dry sherry 1 teaspoon cornstarch 2 tablespoons vegetable oil 1/2 cup peanuts 2 cloves garlic, minced 1 teaspoon minced fresh ginger 3-4 dried red chilies 1 bell pepper, diced 3 green onions, chopped For the sauce: 2 tablespoons soy sauce 1 tablespoon rice vinegar 1 tablespoon hoisin sauce 1 teaspoon sesame oil 1 teaspoon sugar 1 teaspoon cornstarch dissolved in 2 tablespoons water Directions: In a bowl, combine the soy sauce, rice wine (or dry sherry), and cornstarch. Add the chicken pieces and toss to coat. Let marinate for 15-30 minutes. In a separate bowl, mix together the ingredients for the sauce: soy sauce, rice vinegar, hoisin sauce, sesame oil, sugar, and the cornstarch-water mixture. Set aside. #sundayprepday I'm officially done for today with my Sunday prep. 1. Lentils. I freeze four of the containers, and this will last for a while. I try to always have some sort of cooked bean/legume/lentils on hand. Great sources of fiber and plant-based protein 2. Protein pasta (chickpea based). Good just to have to throw a quick pasta salad together or add to something else. 3. Steamed broccoli. Just a good side to have with anything to add fiber to a meal. 4. Kung Pao Chicken...👀. It's never been my go-to, but I had some the other day and thought it would be a good prep meal. Should last at least two days...lol. Today's food adventure was going to @officialpandaexpress located in Woodbridge, New Jersey. We ordered the Family meal which was $5 OFF by mobile order using the discount code THANKSMOM. This meal comes with 2 sides and 3 entrées for only $30. We ordered the chow mein and fried rice as our sides. For our 3 entrées, we chose to order their signature orange chicken, honey walnut shrimp, and the spicy Kung pao chicken. For the sides, we ordered the rice was good but the chow mein was a little chewy to my liking. For the entrées, the orange chicken is a must when coming to Panda Express. The walnut shrimp is good as well but the Kung pao chicken was a little bit too spicy for my liking. This place is a must and an 8.5 out of 10 for me. Don't forget to add all the sauce options included with your meal.
