Teriyaki Mushroom Lettuce Wraps for Pesach 🍄‍🟫🥬✡️⁣ ⁣ When bread is off the menu (literally) and you’ve reached the half way point of Passover where Matzah isn’t doing it for you (or your digestive system - IYKYK) it’s time to introduce more vegetables into your life.⁣ ⁣ Lettuce wraps are hardly groundbreaking but a very useful and more flexible alternative to reach for over crumbly matzah. ⁣ ⁣ When I was doing my Pesach shop I picked up a bottle of ‘imitation teriyaki sauce”. The imitation bit I guess comes from the fact it doesn’t contain any Chametz or Kitniyot (forbidden foods we avoid this festival like soy or wheat) and thought it would be a welcome addition of flavour to my festival meal repertoire. Enter this recipe that will make enough for 6 pieces. ⁣ ⁣ I also made some quick pickled grated carrots, toasted cashew crumb and sliced some cucumber & spring onion to go alongside the mushroom main element, then smothered in more of the imposter sauce and have to say it hit the spot 👌 ⁣ ⁣ You’ll need:⁣ 3 large flat mushrooms or 250g button/chestnut mushrooms, halved and sliced into 2cm pieces ⁣ 1 garlic clove, grated ⁣ 3 tbsp imitation teriyaki sauce - the brand I use is Haddar ⁣ 1/2 tbsp veg oil ⁣ ⁣ Combine everything together than spread onto a non-stick or paper lined baking sheet. Bake in the top of the oven at 180c fan for 20 mins until soft and sticky. Serve right away!⁣ ⁣ So definitely try this, regardless if your teriyaki sauce is real or not 🤪⁣ ⁣ Chag Pesach Sameach ✡️

Spring kohlrabi is simply the best. What’s not to love? The whole plant is edible and really freaking tasty. We will have 3 different colours to choose from this year, green, white and purple. White comes across the creamiest but the purple is the most nutrient dense and all are stunning. The first small batch went into Produce Boxes this week and some will be coming with us to the @strathconamarket this Saturday. The leaves as shown in the photos are the best ‘wrap’ green that we have found. It has great texture that holds everything together with a slight brassica flavour. We also love to chop up the greens and add into pasta sauces, savoury pies, salads, sautéed with garlic and chilies, and in stir fries. Toss some into your juicer or blender for super healthy green smoothie and juice. When you are shopping for kohlrabi and see that the plant has its leaves still on, that a great sign its been recently harvested. Remove the greens when you get home, it will keep the bulb juicer. The bulb is perfectly juicy and makes great base for coleslaws, Asian or apple slaws, add into salads, sliced thin with a splash of lemon juice and salt and pepper for a quick but healthy snack or slice them thin and lay the pieces flat on a sandwich or wrap for the biggest wow factor ever. Love juicing the bulbs or hallowing them out and baking them stuffed with rice, cheese, meat and veggies. Cube them up and roast them in the oven with seasonal herbs, lemon juice and your favourite oil. They are even great on the BBQ. Add ground chicken and cook until brown about 3-5 mins. Making sure to crumble the chicken as it cooks, and drain excess fat. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and sriracha until onions are translucent, about 1-2 mins. Stir in watered chestnuts. Season with salt and pepper to taste. BLT Egg Salad Lettuce Wraps Delicious BLT Egg Salad Lettuce Wraps Ingredients: 6 large eggs 1/4 cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon lemon juice 1/4 teaspoon salt 1/4 teaspoon black pepper 6 slices bacon, cooked and crumbled 1 cup cherry tomatoes, halved 1/4 cup green onions, chopped 1/4 cup fresh parsley, chopped 6 large lettuce leaves Directions: Place eggs in a saucepan and cover with water. Bring to a boil over high heat. Once boiling, cover and remove from heat. Let eggs sit in hot water for 10-12 minutes. Transfer eggs to a bowl of ice water to cool. Once cooled, peel and chop eggs. In a large bowl, combine chopped eggs, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Stir until well combined. These Lettuce Wrap Summer Rolls are the perfect summer snack or appetizer, with a variety of fresh veggies and shrimp or tofu. 🍤🥬 Ingredients: 8 rice paper wrappers 1 head of lettuce, leaves separated 1 large carrot, julienned 1 cucumber, julienned 1/2 cup cooked shrimp or tofu 1/4 cup fresh cilantro, chopped 1/4 cup fresh mint, chopped 1/4 cup rice vermicelli noodles, cooked Dipping sauce of choice (peanut sauce or hoisin sauce) Directions: Fill a large shallow bowl with warm water. Dip each rice paper wrapper into the water for about 10 seconds, until it becomes pliable but not too soft. Lay the softened rice paper on a flat surface.
