🥣 Chicken Soup with Rice and Pasta Salad 🥗 Excellence. I am satisfied. In fact, I can’t stop eating the stuff. I made chicken noodle soup (and hot and sour soup), yesterday. But we’re snowed in. And with two tweens and two teens in the house, especially when I cook food everyone likes, it’s gone quickly. I made huge quantities and it was all gone this morning. I spent three and a half hours making: 1) chicken noodle soup. 2) pasta salad. 3) hot and sour siup. The work and time have paid off. All of it was a hit. Soup! As it’s getting colder I’ve been making more and more chicken soup. . For the base of this I used @streitsmatzos GF Matzo ball soup and mix. I cook the matzo balls as the box calls for but separately sauté up carrots, celery, onion and add in either rotisserie chicken or chicken i roasted myself. For this I also added in escarole. Mix it altogether and it’s a great chicken soup broth. This cornish hen instantpot soup was probably the best tasting I have ever thrown together. The flavor of the cornish hen was really pronounced compared to regular chicken breast filets. The soup color itself was more rich in color and tasted very savory. It was so good and I'm pretty much feeling 100% today. NINE VEG CHICKEN SOUP 🥕🧅🍠🧄 I often get asked how I squeeze in ten different veg a day, and look sometimes I don’t reach that goal, but when I make things like soups, salads or curries it’s actually so easy to do ten a day! 🥦🍅🥑🌽🧅 My hearty chicken soup packed with veg and therefore lots of vitamins and nutrients will keep your belly full and immune system high 🙌🏼 Here’s the recipe ⬇️ Ingredients 1.8kg whole chicken 2 brown onions, chopped 3 carrots, chopped 3 celery sticks, chopped 1 leek, halved, thinly sliced 3 garlic cloves, crushed 2 bay leaves A large bunch of parsley 1 Tbsp apple cider vinegar 1L chicken stock 350g sweet potato, peeled, cut into 2cm pieces 370g parsnip, peeled, cut into 2cm pieces 2 zucchini, chopped ½ lemon, rind finely grated, juiced 60g baby spinach Method 1. Spray a frypan with spray oil. Heat over medium-low heat. Cook leek, onion, carrot, celery and garlic for 10-12 minutes or until softened. 2. Transfer mixture to a 5.5L slow cooker. Add bay leaves, 4 parsley stalks, whole chicken and stock. Pour in enough water to just cover the chicken. Set to low. Cook, covered, for 5 hours. 3. Add sweet potato and parsnip. Cook for a further 30 minutes or until chicken is very tender and falling off the bone. 4. Transfer chicken to a bowl. Add the zucchini and chopped parsley to the slow cooker. Cook, covered, for 30-40 minutes or until vegetables are tender. 5. Meanwhile, shred chicken, discarding skin and bones. 6. Stir in chicken, lemon rind and juice. Season. Cover. Cook for 15 minutes. Remove from heat. Stir in spinach. Enjoy 🌱 This will serve 8-10 people. #souperstar
Spaghetti squash quinoa soup with chicken and veggies❤💚 My kids are not big fans of spaghetti squash😒, so I tried to add them into a soup and it actually worked, my kids ate them! 😀😄They told me that they prefer to eat them in soup rather than as a noodle replacement in pasta, for example. I love quinoa soup with chicken and veggies. It's so simple and full of nutrients. I don't like to overcook the veggies so I can keep most of their nutrients. That's why I add the veggies in the soup at the end when the quinoa and chicken are cooked already. Ingredients 1 spaghetti squash 1/2 chicken breast 1/2 cup of quinoa (soaked for at least 3 hours) 2 chopped garlic cloves salt, black pepper, curry 3 sliced celery 1/2 sliced red pepper 1 sliced carrot 1 bunch chopped cilantro Preheat the oven to 400 F. Cut the spaghetti squash in half lengthwise and remove the seeds. Season it with salt, black pepper, and olive oil. Place them face down on a baking sheet (I prefer to line the sheet with parchment paper). Roast them for 35 minutes. Boil the chicken and garlic in 8 cups of water on medium high heat. Season with salt, curry powder, and black pepper. When 13 minutes has passed, add the quinoa into the soup base (the chicken and water). Let it cook for 10 minutes on medium heat. When the chicken and quinoa are cooked, add the veggies and the scraped spaghetti squash into the pot. Let them cook for 5 minutes on low heat. Add olive oil and extra salt if needed.

I had a small COVID scare. So, as soon as started to feel that tickle in my throat, I made a COVID test appointment then made my Korean chicken rice soup. Since thanksgiving is around the corner, I decided to play safe and get my COVID testing done and it was thankfully negative! 🙌🏼 I like to serve my chicken and soup separate and pair it with kimchi and salt and pepper to dip the chicken. It’s a feel good meal my dad always made for me upon my request. 😊 Hope everyone is staying safe and healthy 💪🏼 👩🏻🍳 Recipe: 2 Cornish chickens 5 garlic cloves 4 dried dates 2 dried ginseng 1 cup of sweet rice 4 cups of water Pressure Cook for 35mins. Stove top for 1 hour.

Inspired by the chillier weather, we're having some chicken soup for the next few days. We used 1/2-chicken with mushrooms, carrots, tomatoes, potatoes, chestnuts (yes, it gives the soup a nice stewy-sweet touch), and bone broth. For seasoning, we used fresh lemongrass, ginger, garlic, and tarragon. The flavor was rich, tasted hearty, and the chicken was super tender. No salt or oils were added. Slow cooked for 4.5-hrs in the Instantpot on normal mode and everybody loved it.
