Street Tacos Breakfast Yesterday I was out & got 3 street tacos from my favorite Mexican place. I was fasting so I tucked them in my bag so I could prepare my fast breaking meal this morning. 1. eliminated 2 of the corn tortillas 2. Weighed the chicken and divided into two tacos 3. Added 2 Scrambled eggs 4 . This Quick "Spaghetti" Bolognese is so easy to make and absolutely delicious! All you need is a handful of wholesome ingredients like spaghetti squash, ground beef, tomato passata & garlic. 🥩🧄🍅🌱 It's a hearty & quick week night or weekend meal. Gluten & grain free + low-carb. ✅ 👉🏻INGREDIENTS 1 lb grass-fed ground beef 1 spaghetti squash 1.5 cup tomato passata 2 cloves garlic, crushed 1/2 tsp. dried basil, or 2-3 fresh basil leaves 1 tbsp. extra virgin olive oil Sea salt & black pepper , to taste 👉🏻INSTRUCTIONS Spaghetti Squash: Cut spaghetti squash lengthwise and remove seeds with spoon. Bake at 400 for 30-40 min (first 10-min bake with flesh down, then turn so skin is down for remaining time). Fork should pierce skin easily when squash is cooked. Use a fork to scrape out the strands of squash. Quick Bolognese Sauce: In a sauce pan, briefly sauté garlic and dried basil in olive oil over medium heat. If you are using fresh basil, add basil leaves in after step 2. Add tomatoes and bring to a light boil for 5 minutes. Add salt to taste. Bring to medium-low heat and let simmer for 20-minutes. In a separate pan, cook ground beef over medium heat until lightly browned. Add salt and pepper to taste. Add tomato sauce into pan with beef and let ingredients cook together over medium-low heat for a few minutes. Fruit and veggie restock with a side of bone broth. Also grabbed some seafood at Market Basket; almond flour crackers, butter, and more soup at Aldi. Fridge and freezer are full, so I’m trying to go through it and avoid waste. Food haul for a few days: beef, pork, salmon caviar, gorgonzola cheese, cottage cheese, 60%fat sour cream and some green onions😁 I love grocery shopping and buy groceries several times a week. I have enough meat for 3 days, a piece of gorgonzola for 2, cottage cheese will be eaten today, but the sour cream will probably stay in the fridge for about a week and it's not certain that we'll eat it in that time. some of the caviar will probably be eaten by my boyfriend, so the caviar is also for 2 meals. So I made these Carrot Cake Bliss Balls by @wholefoodsimply and wow they’re really good. No need for added sweetener of any kind as the Medjool dates do a great job of sweetening them just enough, without being too sweet. And the best bit is no baking involved lol. Just chuck it all in the processor, blitz it all up and roll. The recipe said to roll a tablespoon and makes 12. Creamy White Bean Green Chili Prep Time: 10 minutes Cook Time: 30 minutes Ingredients: I can 27 oz whole green chilis, drained and sliced 1/4 heavy cream *can substitute plant based heavy cream 2 cans corn, drained 2 cans cannellini beans, drained and rinsed 3 celery sticks, diced 4 jalapeños, diced 1 onion, diced 3 cloves garlic, minced 3 tbsp olive oil 1 qt vegetable broth 1/2 tsp onion powder 1/2 tsp garlic powder 1 tsp cumin 1 tsp red pepper flakes Salt and pepper to taste Garnish: Fresh cilantro Green onion Jalapeños, sliced Avocado Instructions: 1. In a large pot on medium to high heat, add olive oil, onion, garlic, jalapeños and celery. Cook until the onions are translucent. Add onion powder, garlic powder, cumin, salt, pepper, and red pepper flakes. Reduce heat. 2. Drain and remove skin from chilis and slice into bite size chunks. Add to pot along with vegetable broth. 3. Drain and rinse beans and corn. Add to pot. 4. Add heavy cream and stir. Leave on medium heat and allow to simmer for 30 minutes. 5. Serve with fresh cilantro, green onion, jalapeños, and avocado. 6. In my effort to eat healthier (pescatarian with very little dairy), I signed up for a @hungryroot meal/grocery subscription. First meal is a success! I wanted something delicious and easy that I didn’t have to think about or do much prep for. (Even Blue Apron and Hello Fresh were too much prep work for me in the past for just OK vegetarian food or unhealthy cheesy pasta.) But this Hungry Root meal was delicious, easy, and a type of food I love but never really make on my own.
