💥❤️New Recipe: Nan’s Old Fashioned CONDENSED MILK FRUIT CAKE❤️💥 It’s time for my second entry in the #aroundtheworldin80dishes collab, with this month’s country being Australia. Thanks for all the love shown for yesterday’s Vegemite and cheese bikkies, they really should come with a warning about their addictive qualities😋. Today I’m bringing you a fruitcake. Australians have always had a fondness for fruitcake, particularly around the Christmas season. It really is quite a retro cake that has survived for decades. This cake popped up on my feed from @bestrecipesau, under the title “Nans all-time favourite condensed milk recipes”. One mention of condensed milk, and I was there! This recipe received lots of favourable reviews with many saying it is now their go to Christmas cake. As there is no sugar added the condensed milk doesn’t bring a sickly sweet to the cake, just deliciousness👌👌. The recipe calls for a LOT of dried fruit. I’m not the biggest fan of heavy fruitcakes, so I halved the amount of fruit and it was more than enough. You could also use just a little bit of the one fruit, such as currants or sultanas, and add some chocolate chips. it really is a wonderful foundation recipe to turn into your own. Do save this simple recipe, and give it a go: ✴️Ingredients✴️ 1125g mixed fruit 250g butter, chopped 1 tsp bicarbonate of soda 1 cup water 395g condensed milk 1 tbs white vinegar
2 tbs sherry 1 tsp vanilla essence 2 cups plain flour, sifted 1 tsp baking powder 1/2 tsp salt 1/2 tsp ground cloves 1/4 cup glace cherries “to decorate ((I didn’t have these, so used a strawberries) 1/4 cup almonds ‘to decorate ✴️Method✴️ 🍰Put mixed fruit, butter, bicarb soda and water in a pan and bring to the boil. Allow to cool. 🍰Add condensed milk, vinegar, sherry or brandy and vanilla essence. 🍰Sift four, baking powder, salt and ground cloves, and gradually add to fruit mixture 🍰Put into a greased, paper-lined tin and bake at 150C for 1.5-2 hours. Check with a skewer and adjust cooking time if necessary. 🍰While warm, brush with sherry, brandy, or warmed jam to glaze. Decorate as you wish. ❤️🩷I hope you have some sweet moments in your day🩷❤️

It's time to explore another global cuisine!  This month, we are off to Australia 🇦🇺 for our Around The World In 80 Dishes challenge (perfect timing after watching the exciting Australian Open men's tennis final earlier this morning!) My recipe choice was very much helped by the fact that I happen to have a Bill Granger cookbook...  I have to confess I didn't really know much about the Australian chef and restauranteur prior to the sad news of his unexpected passing on Christmas Day at age 54 last month, but when Australia was chosen for this month's challenge, it made me search out his book. So here is the recipe I made today - Seared Scallops, Carrot Fritters and a Yogurt Dressing from page 115 of his 2003 book Bill's Open Kitchen. Described as "a chef who combined an easy Australian manner with a talent for making simple food sing" I think this dish is an excellent representation of that statement. The carrot fritters were deliciously different to the norm in that the batter included cumin, coriander and turmeric spices (and ½ cup of soda water which is new to me) combined with grated carrot, chopped red chili and sliced scallions.  They are served topped with watercress, seared scallops and a simple tangy yogurt dressing. Lomo de canguro con mantequilla de anchoas y remolacha – Patatas asadas con grasa de pato Un pequeño viaje culinario a Australia me ha llevado a probar la carne de canguro por primera vez. Extremadamente tierna, de sabor suave, textura melosa y completamente magra. The fillets are marinated for a couple of hours with garlic, juniper berries, bay leaves, thyme, EVOO, orange peel, s&p and seared in a hot griddle pan or on the bbq, taking care not to overcook them. Served with anchovy butter (butter, anchovies, parsley and lemon juice), and boiled beetroot, which I cut hasselback style and roasted in the oven for 10 min, after introducing a little of the anchovy butter in between cuts. minoomakesstuff is trying bread from the other side of the world! 🍞 Okay so here’s what happened… last night I came across this Australian damper bread. Only 3 ingredients. No added sugar. Very intriguing. So this morning I got up and gave it a try… and the aroma that filled my house! This scone like dense bread consumed warm with some butter and honey was like the world fuzziest, coziest hug and you NEED to give it a try right NOW. You already know I’m on a journey to go around the world in easy, low ingredient breads that anyone can make (and turning it into a cookbook)! Follow minoomakesstuff to come along 🥰 Here’s how to make this 3 ingredient Australian damper bread: 1. In a bowl, add 2 cups of self rising flour, along with 20g cold butter, cut into small cubes. With your hands, massage the butter into the flour till it’s all combined. 2. Make a well in the centre of the flour and add in either 1 cup of milk or 1/2 cup milk and 1/2 cup water (up to you). Combine this with your hands and knead until a smooth, thick dough ball forms. 3. Transfer your dough ball to a baking tray lined with parchment paper. Using a knife, cut a cross into the top of your bread, then bake it for 30 minutes at 350 degrees. 4. Self-saucing Blood Orange Pudding This is a first for me. Never done “self-saucing bake” before. In my research for Australian cuisine/food for #aroundtheworldin80dishes , I found this orange self-saucing pudding recipe from Australian magazine @homebeautiful .
