There are quite a few vegetables I donโ€™t buy very often. Fennel is one of them. I love it but itโ€™s not an everyday veggie for me. So, earlier this month while walking around the produce aisle of my food store, I decided to buy a bulb, slice it up + enhance the anise flavor by roasting it until super tender. It became a lovely little side dish for dinner. The following day I had the idea of turning this roasted veggie into a soup. I tossed it into my high-speed blender with a bit of water + sea salt. It was heavenly. This is sort of how I eat. I tend to saute or roast a veggie one night + then my creativity starts soaring the next day with what I can do with it. So, here you have it. If you find yourself in a cooking rut, reach for an unexpected veggie, roast it one night then turn it into a simple soup the next. For me, it feeds the soul to keep exploring new ways to use my leftovers. Otherwise, I tend to open my fridge and get bored looking at sad, soggy leftovers. You get the picture. To roast the head of fennel, I removed the stalks + discarded the stem. Then, I sliced the bulb into ยผ-inch slices. โœจIntroducing this first weekโ€™s easy dinner recipe!โœจ Making dinners during the summer can be overwhelming at times, especially if your s/o gets home late from a sale, so I love having easy go-to recipes that also make awesome leftovers. ๐ŸŒฎ T A C O S O U P ๐ŸŒฎ (Serving size: 4) 1 lb ground beef 1 taco seasoning packet 1 cup bone broth / water 1 small yellow onion 1 can black beans 1 can dark red kidney beans 1 can creamed corn 1 small can tomato paste 1 cup of salsa Shredded cheese Sour cream Tortilla chips Cook the ground beef with the taco seasoning and bone broth (or water). Once the meat is half browned, add the onions. After the onions have softened and the meat has completely cooked through, add the rest of the ingredients. ๐Ÿ๐Ÿ— Pineapple Chicken and Rice ๐ŸŒฟ๐Ÿ - ๐Ÿ“‹ Ingredients: - 1 cup uncooked jasmine rice - 2 cups water - 1 tablespoon olive oil - 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces - Salt and ground black pepper to taste - 1 onion, chopped - 1 red bell pepper, chopped - 2 cloves garlic, minced - 1 (14 ounce) can coconut milk - 1 (14.5 ounce) can diced tomatoes, undrained - 1/4 cup chopped fresh cilantro leaves - 1 teaspoon ground cumin - 1/4 teaspoon cayenne pepper - 1/2 cup chopped pineapple - ๐Ÿ“Instructions: 1๏ธโƒฃ In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes. 2๏ธโƒฃ Heat olive oil in a large skillet over medium heat. Season chicken pieces with salt and black pepper. But scan the stuff you use as it can vary on brands etc. This says it serves 4 in the PON book. BUT If you like a decent portion like us it defo only serves 2 ๐Ÿ˜‚ Boil your 200g of macaroni for 10 mins then drain and keep in the pan (off the heat) with the lid on. Make your cheese sauce - swipe for that part. Fry off your leek and bacon (I used smoked bacon). Once cooked add to the pan of macaroni with your cheese sauce. In an oven dish. Top with 20g of grated cheese and under the grill. I let it stand whilst the garlic bread cooked. Served with homemade garlic bread using your hexB choice. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and cook until softened, about 2 minutes. 3. Add the sliced red and yellow bell peppers, cherry tomatoes, broccoli florets, sliced carrots, and sliced mushrooms to the skillet.
