This is my third and final submission to #khushbumittiki by @style.it20 and judged by @abhishekhanna BEETROOT KHOYA HALWA Prep Time: 20 mins Cook Time: 30 mins Serves 3-4 Ingredients • 500 gms beetroot, washed, peeled and grated • 200 gms khoya ( milk solids), crumbled • 75 gms caster sugar • ⅓ cup almonds + cashews + raisins • 1 tsp cardamom powder • 3 tbsp solid ghee Method: 1. Heat ghee. Add the nuts and fry until golden brown. Strain. 2. To the same ghee, add cardamom powder and beetroot. Sauté and cook 5 mins. 3. Add sugar and sauté for 5 mins. 4. Add khoya and mix well. Cook until the halwa thickens and water evaporates. Mix ½ the nuts and stir well. 5. To honor Lord Shiva and the celebration of Maha Shivaratri, “the Great Night of Shiva", I decided to indulge but most importantly make a sweet offering. Maha Shivaratri is the night when Shiva performs the heavenly dance of creation, preservation and destruction called the Tandav. On this great night, Shiva’s chanting is observed and some will fast overnight into the morning of Maha Shivratri, a religious festival that takes place in the latter part of winter in India. I thought it apt to cook something sweet and an auspicious orange in color. This gajjar ka halwa made with carrots and milk is infused with cardamom. Once boiled down, the milk thickens and the sugar and ghee helps caramelize the mixture. This process came together really easily in the @instantpotofficial and with minimal cleanup. I learnt this method of scrambling eggs from my online carnivore friend @steakandbuttergal It is so good I can’t go back. I have always liked my yolks very runny so this is the best method and provides the best creamy (but nothing added) scrambled eggs ever! Just add ghee to the pan and crack the eggs in when it melts. Scramble the whites trying to keep the yolks in tact. Once the whites are nearly cooked stir through the yolks. I turn off the heat at this stage so some of the yolks stay raw. Today I paired it with some left over fatty roast lamb. Yum!
