Sweet prawns marry so well with the sharp and slight bitterness of the @rogrogreens micro chervil. Full of protein, good olive oil, etc. And don’t the microgreens make them look pretty I must confess to feeling a little below par this week, a combination of being a bit ill, stuck at my desk doing admin and not being terribly social…I am a proper extrovert that NEEDS people , so this went a long way to cheer me up, so delicious and thinking of lovely parties to come. AND tomorrow is Friday and I have a very special happy Friday live from a wine shop, then going out with my brother and friends…so all will be well Please don’t forget to ❤️, save and follow @theneedy.greedy Dipping sauce 15g chervil 10ml extra virgin olive oil Zest and juice of a lemon 1 clove garlic 3 cherry tomatoes Salt and pepper Chili flakes if you like a kick I or 2 packs of cooked large king prawns Cocktail stick Chervil to decorate Reserving some of the lemon zest to decorate. Blitz the sauce ingredients in a bullet or blender. Taste and tweak to taste. Pour into a bowl. Skewer the prawns. Decorate with zest and micro chervil. You can do in advance apart from decorating- just keep in the fridge! The bonus is that this chervil sauce also makes a delicious dressing to drizzle over any salads. Muhammara Chickpeas Celebrating International Women’s Day with this incredible dip / mezze - SAVE , it is beyond delicious. It is perfect to serve when you have the wonderful women in your life round for drinks and those best conversations. Or serve as a meal with salad, grains etc It is adapted by me from the @boldbeanco cook book - a game changing brand by a female entrepreneur @ameliachristiemiller …I cannot recommend these jars of legumes highly enough. This dip can be made a day in advance, but serve at room temp not fridge cold. Decorate before serving Serves 4 as dip - see picture, but do double etc Ingrediants 25g Walnut pieces 1 small slice of rye sourdough (or use any good bread) torn into chunks 2 ready roasted red peppers from the jar 1 tsp smoked paprika 1/2 tsp chili flakes and ground cumin 1-2 sun-dried tomatoes from a jar 1 tbsp Olive oil 1 tbsp pomegranate mollasses 1 garlic clove - crushed Juice of half a lemon 1/2 jar of @boldbeanco Chick peas Pre heat the oven to 180C, and pop the bread and walnut pieces on a baking tray. Toast for 6-8 mins Tip all the ingredients apart from the chickpeas in a food processor and blitz. I then add 2 tablespoons of chick peas to thicken, and bliitz again. Taste, make sure you are happy with the texture and taste (you may need to add more lemon, seasoning , olive oil, water, chickpeas). Stir through the remaining chickpeas and serve with chopped coriander, pomegranate seeds, crumbled feta if you have! Ever heard “If it’s meant to be, it will be”? It’s a comforting thought, right? It suggests a kind of spiritual alignment, where what’s destined for us will find its way, no matter what. This idea, that what’s for us won’t pass us by, encourages patience and faith in God’s perfect timing. It’s a reminder not to force things, but to allow life to unfold naturally. Sure, it doesn’t mean we sit back passively. We strive, we hope, but ultimately, we trust in the journey, believing that the pieces will fall into place as they’re meant to. Consider the job hunt or the anticipation of a promotion. We’ve all been there, right? Pouring our energy and hopes into applications or projects, yearning for that next big break. But sometimes, despite our best efforts, the response is a resounding ‘no’. It’s disheartening. Yet, if we embrace the mindset that “If it’s meant to be, it will be,” we find resilience. I trained as a cordon blue cook many years ago, always created my own recipes - but I am a busy working single Mum, so I get the need to create easy dishes that fit round family life. My principles are (and I stick with the 80/20 rule on this, because that works for me better than an all or nothing approach) 1. Eat lots of different veg, fruit, seeds, nuts - I aim for not 5 a day, but 7-10. 2. Eat protein with every meal - nuts, lean meats, eggs, legumes, lentils etc 3. Try to avoid ultra processed food and eat whole foods 4. Oh - and I’m a bit obsessed with olive oil, really like a glass of wine, and chocolate While this is not about aethesitics at all, I am not a naturally slim person, and I could show you before and after pictures, but I think that is unhelpful because that’s me and not you. But at 50, I feel fitter, more energetic than I ever did in my 20s! When I am not sharing recipes, I cater, teach cookery, food style. Here are a couple of brunch recipes ... I often have a much later breakfast, because I am not usually that hungry first thing, and as a lark, morning is a really productive time for me. So when I do eat - I want to make sure it’s full of good things (protein, veg/fruit) and will keep me going. Egg, slow roasted tomato and peashoots on sourdough Two hard boiled eggs 10 cherry tomatoes (approx) - or more to make a big batch to use through the week. 1 tsp Dried Oregano Olive oil Tsp of mayonnaise Peashoots from @rogrogreens (paid partnership) - so full of goodness and taste sensational Sourdough and optional balsamic glaze Pre heat the oven to 180C. Halve the tomatoes, put in an oven proof dish and drizzle with a little oil, oregano, seasoning. Cook for 30 mins and allow to cool a little. Chop the egg, mix with the mayo and handful of peashoots and seasoning. Add the most of the tomatoes. Toast the bread and top with the egg mix. Dot over the rest of the tomatoes and some more pea shoots. Then drizzle over the glaze if you wish. Jammy Berry Porridge - so fast when done in bowl on the microwave Handful of frozen berries (i like using Forest Fruit mix) 50g Oats 200ml milk Sqidge of honey and half a teaspoon of cinnamon Choice of toppings - I used pistachios and Greek Yoghurt Put the big berries, oats, honey and milk in a microwavable bowl, cover. I use my @hokanbowls as they have a lid (affiliate partnership). Stir, microwave for 2 minutes, then stir again and cook for another 2-2.5 mins. Spicy roast squash soup with coconut milk Recipe by @theneedy.greedy On a chilly chilly day - this is a truly warming soup for you. And one to save. The only effort involved is peeling and chopping the squash (and even that you can buy ready sliced). A lovely vegan option if you use veggie stock, and coconut yoghurt to garnish . I served for a friend yesterday who loved it. She said that her squash soup always tastes like baby food, which made me laugh. This is definitely more sophisticated than that. 2 tbsp Olive oil I squash - peeled and chopped into chunks (or two bags of ready chopped) I red onion - cut into wedges 2 cloves of garlic - whole, in its skin. Teaspoon each of fennel seeds, chili flakes) less if you like it milder) and coriander seeds I tin of coconut milk (I used the light version ) Pre heat the oven to 180C. Pour the olive oil in a large roasting pan. Chuck in the squash, onion, seeds and chili. season well and give it all a good mix. Add the garlic. Roast for approx 40 mins until the squash is tender and starting to caramelise around the edge. Remove from the oven and put in a sauce pan. Chop the end off the garlic and squeeze out the creamy middle. Add the coconut milk, warm through, blitz. I added some extra stock to get the desired consistency.
