We are craving @vickyskitchan’s Spicy pork & coriander dumplings served with Lingham’s extra hot sauce and soy sauce as a dip for that extra kick! ! 🥟 Here’s how to make it: 🌱 Ingredients 🌱 ▪️Dumpling wrappers ▪️Pork mince ▪️Fresh coriander ▪️2 tbsp @linghamsuk ginger garlic chilli sauce ▪️1 tbsp sesame oil ▪️1 tbsp rice wine vinegar ▪️2 tbsp soy sauce ▪️White pepper Heat vegetable oil at a medium heat in a pan, place dumplings in with a little space and fry for 3 minutes. Add hot water into the pan, cover and reduce heat to cook for 6 minutes whilst the water evaporates. It’s #WorldPaellaDay and we are craving @zarskitchen’s Smoky Tomato Paella with Swiss Chard, Broccoli & Kidney Beans, which includes our Lingham’s Chilli sauce for a spicy kick. 😋 Here’s how she made it: INGREDIENTS 1 Onion, roughly chopped 3 Celery stalks, roughly chopped 8 Garlic cloves 1 Red Chilli Extra virgin olive oil 200g Swiss chard 400g tin Kidney beans cooked 2 Tins Peeled tomatoes 300g Broccoli, cut into small florets 3 tsp Smoked paprika 2 tsp Cumin, ground 2 tbsp Tomato paste 2 tbsp Chilli Sauce @linghamsuk 1 tsp Sea salt flakes 1 tbsp Sugar 2 tsp Freshly ground black pepper 1 litre Vegetable stock 500g Paella rice @brindisaspanishfoods Calasparra rice GARNISH: Lemon wedges and chopped parsley METHOD 1. In a food processor blitz the onions, garlic, celery, chilli and tinned tomatoes 2. In a large saucepan with with a little oil on medium heat, sauté the Swiss chard for 2-3 minutes until tender, add the kidney beans and sauté a couple more minutes 3. Add the blitzed tomato mixture 4. Add the smoked paprika, cumin, tomato paste, hot chilli sauce, salt and sugar, mix and cook out well for about 10 mins 5. Add the paella rice, stir coating the rice well with the sauce 6. Add the stock gradually, each time you add a little, wait until all the liquid has absorbed before you add more 7. After about 15 mins, add the broccoli florets 8. You may need to add a little less or a little more stock depending on the brand of rice you choose, it should take about 30 mins to cook 9. Squeeze a little lemon juice on top, sprinkle with some chopped parsley and serve with more lemon wedges 10. Enjoy! ‘The Raging Storm’ is the number one bestseller by crime author Ann Cleeves which begins with a mysterious discovery following an @rnli lifeboat launch. It was an absolute privilege to welcome Ann Cleeves, creator of ‘Vera’ and ‘Shetland’, to Hoylake this week for a series of special events to mark ‘The Raging Storm’ paperback launch, hosted by @linghamsbooks at @hopechurchwir. Ann was joined on stage by @hoylakelifeboat volunteer Chris Williams for a conversation, chaired by crime author Martin Edwards, about the inspiration for the story, Ann’s other works, and life on the UK coast. Ann forged an enduring link with the Wirral coast and the RNLI after spending the first four years of her married life living on Hilbre Island. Her husband Tim worked as the island warden and the couple were auxiliary coastguards. Tim and a friend were rescued by @westkirbylifeboat during this time. This experience, as well as Ann’s lifetime around the UK coast and its islands, shaped ‘The Raging Storm’ and many of Ann’s other stories and characters. As keen naturalists with a shared lifelong connection to Hilbre, Chris and Ann spoke at the events about the compelling character of the island and its environment. Chris shared his insights as an RNLI volunteer, including on Ann’s accurate portrayal of a lifeboat shout. There was also a special reunion for Ann as she met John Curry, who was part of the RNLI crew that rescued her husband some 40 years ago. Ann and Martin later toured Hoylake RNLI lifeboat station, where Chris showed them around our state-of-the-art Shannon class lifeboat ‘Edmund Hawthron Micklewood’. We want to offer our sincere thanks to Ann, Martin and the wonderful team at Linghams for inviting us to be part of these incredible events. With the RNLI celebrating its 200th anniversary in 2024, Ann and Linghams have made a generous donation to support our volunteers in continuing their lifesaving work. Here’s how to make it: Ingredients: 〰️ 200g beef or no-beef @dopsufood alternative 〰️ 2 tbsp soy sauce 〰️ 3 tbsp @linghamsuk Ginger Garlic Chilli Sauce 〰️ 1 tbsp olive oil 〰️ 1 shallot, chopped 〰️ 100g broccolini, chopped 〰️ 1/2 red bell pepper, chopped 〰️ 100g baby corn 〰️ 1 tbsp garlic powder 〰️ 1 tbsp ground coriander 〰️ 1/4 cup water 〰️ 4 tortilla wraps 🍅 Fresh tomato salsa 〰️ 1 tomato, chopped 〰️ 1 shallot, halved and sliced 〰️ I tbsp garlic powder 〰️ 1 tsp cumin powder 〰️ lime juice 〰️ salt and black pepper Method: In a bowl, mix the ingredients to make fresh tomato salsa to add in the wraps at the end. @nicolejcooks Lemongrass & Chilli Chicken looks and sounds amazing!😍 She made a spicy aromatic marinade with 2 chopped lemongrass stalks, 2 garlic cloves, a small knob of ginger, 3 birds eye chillis, 2 tbsp Lingham’s Chilli Sauce, 1tbsp honey, 1tbsp fish sauce and the juice of 1/2 a lime and marinated chicken legs in it for about an hour Then she roasted the legs gently skin-side up in the marinade at 170C for 25 mins, basting with more marinade halfway through. Then increase temperature to 180C, baste the legs a little more plus add a splash of water. For some lunch or dinner inspiration we love @garlicrosemaryandsalt Wok Fried 5-Spice Chilli Chicken Noodles.😍 A delicious dish that makes a few ingredients go a long way. Here’s his recipe: Serves 3-4] You’ll need: 1 large chicken breast or two boneless, skinless thighs 1 white onion 1 red onion 1 sweet bell pepper 1 pack of baby corn 2 cloves garlic 1 red chilli A piece of ginger 2 spring onions 1 tbsp cornflour 1 portion of medium dried of egg noodles per person - Veg oil for frying Sesame Oil - (Tip: Swap out the chicken for a handful of Cashew Nuts for a veggie version .) - For the sauce mix together: 2 tbsp oyster sauce 1 tbsp @linghamsuk Ginger Chilli sauce 1 tbsp dark soy sauce 1 tbsp light soy sauce 1 tbsp rice wine vinegar 1 tbsp runny honey 1/2 tsp of 5 Spice powder Juice of 1 lime - Method: - ➡️First slice all the veg into thin strips. ➡️Cut the chicken into very thin slices and dust with cornflour, salt and pepper. ➡️Simmer the noodles for 3 mins, then drain, rinse with cold water and sprinkle with veg oil and a dash of sesame oil to stop them sticking. ➡️Heat oil in a wok and fry the chicken til lightly browned. I’ve adored @gracedent for so long, through so many thousands of beautiful words. To be honest it’s a bit of a “that time Eva Wiseman wrote about bread” situation in which I realise I would read what Grace wrote on absolutely anything BUT a book about the food of northern eighties childhoods… ❤️❤️❤️❤️. It took every fibre of my being not to leap up at the part about working at More! magazine and shout “I WORKED THERE TOO! I ALSO LIKE FOOD! It’s #TacoDay and we are celebrating with @jamieoliver’s Ultimate Pork Tacos with spicy black beans and avocado green salad with drizzles of Lingham’s Chilli Sauce.😍 Ingredients: 350 g skinless higher-welfare pork belly 1 heaped teaspoon fennel seeds 1 heaped teaspoon sweet smoked paprika olive oil 1 good pinch of cumin seeds 3 spring onions 2 cloves of garlic 1 x 400 g tin of black beans 1 fresh red or green chilli 2 little gem lettuces ½ a bunch of fresh coriander 1 ripe avocado 1 large ripe tomato 1 eating apple low-salt soy sauce extra virgin olive oil 1 lime To serve: Lingham's Original Chilli Sauce 4 tablespoons fat-free natural yoghurt 8 corn taco shells Method: Cut the pork into 1cm dice and tip into the large frying pan with the fennel seeds, paprika, a pinch of sea salt and black pepper, and stir regularly. Put 1 tablespoon of olive oil and the cumin seeds into the medium frying pan. Trim, slice and add the spring onions, squash in the unpeeled garlic through a garlic crusher, then stir in the beans and their juices, and simmer. Finely slice the chilli, lettuce and most of the top leafy half of the coriander, then halve, destone, peel and chop the avocado, along with the tomato. Toss and pile all this on a platter, coarsely grating or matchsticking the apple on top. Ripple a little chilli sauce through the yoghurt in a small bowl. Stir, mush and season the beans to taste. Drizzle the salad with a little soy sauce, 1 tablespoon of extra virgin olive oil and the lime juice, then toss together. Drain the fat from the pork pan, then serve everything straight away, with a pile of taco shells and all the other elements, sprinkled with the remaining coriander leaves.
