Chateau La Lagune 1986 Tried it after 2 hours, but felt that the wine was still super closed off, began opening after the 4-5 hour mark. The nose showed pencil shavings, cassis and some graphite, palate was well pronounced with tannins and a long finish. Guessing this 86’ Claret falls into the same category as the other 86’ and can still age for a little longer, but can also be at its peak. We celebrated officially being #debtfree by uncorking our last bottle from our visit to Napa Valley a few years back. The 2014 South Hill had a dry finish with beautiful dark fruit flavors that paired well with our ribeyes from @themodernbutchershop and crispy brussel sprouts from @alonshaya's Shaya cookbook (posting those photos tomorrow). From the sauvignon blanc to the cabernet franc and sauvignons, we haven't met a bottle from @chimneyrockwinery that we didn't enjoy and appreciate every sip of. Buccella - @buccellawines I first tried Buccella on one of our Corknites (we drink nice wine and play Fortnite 😅😂) A buddy brought a 2010 and it was stunning. So, we decided to visit on our last trip. Very small production but the wine is #nextlevel good. We tasted through their current 2019 releases including their Sauvignon Blanc. We were also lucky enough to try another 2010 Cabernet Sauvignon 🙏🏻 So smooth and velvety, each varietal a perfect representation. The balance and mouth feel on these wines are some of the best that I have ever had. The 2019s will be almost perfect in 5-10 years. My personal favorite was the Cuvée Katrina Eileen - aged 22 months in 100% French Oak. So delicious. We're nearing the end of May, which is when vineyard flowers start to self pollinate. The goal during this time is for each flower to fully pollinate, which will lead to large, healthy grape bunches. However, weather can be a huge factor during this time. If a rain storm damages the flowers on a grapevine before they've pollinated, those buds will not produce a grape. Bud Break happened a little earlier than normal this year in the vineyard surrounding our wine cave. Grape vines go dormant for the winter months after the seasonal harvest, and the bud break in the spring is a sign that the vine is "waking up" and preparing to produce fruit.
