After a few months absence on here, I'm slowly getting my mojo back, feeling inspired to cook & share recipes again, amongst other things. So what better way to ease myself back into my IG page with this super simple & delicious tray bake which happened to be vegan. I love tray bakes as they are so easy and versatile with the added bonus of generating minimal washing up - what's not to love! The inspiration came from flicking through one of my many new cookbooks bought and gifted over the last year, in this case: Persiana Everyday by the wonderful @sabrinaghayour whom I had the pleasure of meeting at her latest book launch last year. She uses Za'atar in many of her recipes & I knew I had some knocking about in the cupboard. So here you go: 1) Chop your veg in small cubes - use whatever you've got in your fridge. I had some leftover butternut squash, red pepper, courgette, red onions and I added a whole garlic bulb🧄cut in half. + Some @tofoo tofu (you could easily add chorizo at this point) 2) Season with S&P, EV olive oil 🫒, I also drizzled avocado 🥑 oil which I bought ages ago but had not used yet & loads of Za'atar - from the wonderful @zaytoun_cic which supports Palestinian farmers & their families which seems particularly important at these troubled times... 3) Roast in a hot oven for 15 mins. 4) Add some beans - I used beautifully creamy butter beans. 5) Drizzle some pomegranate molasses if you've got some. Or you could try adding honey or maple 🍁 syrup, in which case I'd suggest adding some lemon juice 🍋 for that extra sharpness that the pomegranate molasses has. 6) Cook for another 5 mins. Et voilà - done. Bon appétit ! Let me know if you try it out. Today the sun came out after a rainy weekend. What do we do? We leap into action, and celebrate in the kitchen. Tonight on Koopitz Kitchen, a Middle Eastern inspired delight. We took inspiration from our favorite food blogger, @feastingathome, and made some delish roasted cauliflower shawarma. Can you guess all 7 spices used (salt and pepper not included)? We paired this veggie shawarma with some protein packed braised black lentils. These babies simmered intimately with onions, celery, thyme and some white wine. All nestled together with Sylvia Fountaine’s fresh and herby Lebanese Slaw (saletet malfouf). We added some @trazzafoods babaghanoush and tzatziki for good luck. Ps. Weinig werk, veel blijdschap. En enkele weken extra magie op ons #bordvolgeluk. Je vindt on line veel versies van deze chili olie. Experimenteer met verhoudingen naar je eigen smaak. Wat zit er in? - chilivlokken - sesamzaadjes - verse look - zout - suiker - hete olie, check zeker dat je olie gebruikt die verhit mag worden. TEST KITCHEN Busy testing new recipes in the kitchen this weekend with some of our regions beautiful Quinces from @aguadagninoco farms. An attractive deciduous tree, Quinces bear a hard golden-yellow aromatic pome (a fleshy fruit with a tough core + seeds) covered in a downy (fine soft hair) fuzz. Belonging to the same family as the pear and apple, Quinces share more of a resemblance to pears, a favourite of mine. The ripe fruit shares a rather tart and astringent (bitter or acidic) flavour profile, which is loaded with essential vitamins and minerals and low in calories...bonus. I've not worked with Quinces before, and they're proving to be a hard fruit to prep, but I've figured out a few quick steps to speed up the process, thankfully. So, it's all about having fun and playing around with different ideas and flavour combos at the moment, which I love.
