I will be selling ribs and Tri-tip for pick up in Pacifica on Saturday May 4. This is to raise money for the Carlos Vasquez(my brother) Student Athlete Scholarship Fund at Capuchino High School. They will be whole racks of St. Louis spare ribs and whole tri-tips. There will be two sauces too. Sparky-Q’s OG sauce(Mild) which is tomato based with a more light vinegar bite. There is black pepper but no other peppers making this quite mild. The other is a very similar sauce with Mango and chipotle added for a slight Spicy sweetness(spicy). How many ways can you hash brown? I’ve been slightly obsessed in the last week and this is my final instalment to my homemade hash brown capers. 😋 Homemade means you can shape and size your deep fried patties of potato deliciousness any which way you like. Check out my grid to see yesterday’s steak tartare hash brown bites. Burgers were on the menu this time, so the memo went out for round discs to be formed … And so this what we ended up with … Pulled beef brisket slow cooked for 9 hours in a homemade bbq sauce … Apple, fennel, carrot and cabbage slaw dressed in seasoned yuzu agrumato (think a little bit of garlic, apple cider vinegar, maple syrup, yuzu pressed olive oil, salt and pepper). The burger was amazing on its own (see second pic). Add in a crispy hash brown for the mic drop. Golly gosh, it’s hard to go back now. We had two packs of burger buns at our disposal (with and without sesame seeds). The hash brown sat and ate better when placed up against a bun half. However, I do think the burger photographs better with the hash brown in the centre. Fish Tacos with Honey Cumin Cilantro Slaw and Chipotle Mayo Ingredients: 1 pound white fish fillets (such as cod or tilapia) 1 tablespoon olive oil 1 teaspoon ground cumin 1/2 teaspoon smoked paprika Salt and pepper to taste 8 small flour or corn tortillas 1 cup Honey Cumin Cilantro Slaw (see recipe below) 1/2 cup Chipotle Mayo (see recipe below) Lime wedges, for serving Honey Cumin Cilantro Slaw: 2 cups shredded cabbage or coleslaw mix 1/4 cup chopped fresh cilantro 2 tablespoons lime juice 1 tablespoon honey 1/2 teaspoon ground cumin Salt and pepper to taste Chipotle Mayo: 1/2 cup mayonnaise 1 chipotle pepper in adobo sauce, minced 1 tablespoon adobo sauce (from the chipotle pepper can) 1 tablespoon lime juice Salt and pepper to taste Directions: Preheat grill or grill pan to medium-high heat. In a small bowl, combine olive oil, ground cumin, smoked paprika, salt, and pepper. Mix well to create a marinade. Rub the marinade over both sides of the fish fillets. Grill the fish fillets for 3-4 minutes per side, or until cooked through and flaky. While the fish is grilling, warm the tortillas on the grill for about 30 seconds per side, until soft and pliable. To assemble the tacos, place a few pieces of grilled fish onto each tortilla. Top with Honey Cumin Cilantro Slaw and a drizzle of Chipotle Mayo. Well dang. 😐 Now I know I need to go spend more time in Lexington, NC.🎉 43 of my years have been spent in the state of North Carolina, and I never really knew what the big fuss was about Lexington and barbecue.🤷🏼♂️ And then.😳 Today.😳 I drove into Lexington and marveled as I rolled past barbecue restaurant after barbecue restaurant after barbecue restaurant.👀 All just to get to this one place.✅ Now I know I have to go back for all the others too! 😂 I went with the "Course Chopped Barbecue" plate. The focus here was on really well-prepared pork. It was right. Recipe 45 from #vegetablekingdom is one I’ve had my eye on for a while: Hot sauce-soaked cauliflower over whole wheat bread. This is definitely going to be one I make again because it was really good - the cauliflower has a super light batter that gets really crunchy and the addition of the slaw and dill fennel not only make it a complete meal, but also cool the spiciness and give a perfect bite. I would, however, alter the serving suggestion and serve as an open face sandwich. There wasn’t really excess sauce to soak up, so the toast was dry.
