We're thrilled to introduce a novel blend that harmoniously combines the autochthonous Garnacha with the robust Cabernet Sauvignon, moving away from our previous blend of Caladoc, Arinarnoa, and Marselan. Each grape is hand-harvested and meticulously selected grape-by-grape at the sorting table, underscoring our commitment to quality. The wine undergoes cold fermentation and maceration for six days, followed by aging in second and third-year French oak barrels, ensuring a nuanced and sophisticated profile. Mulberry season is upon us! This was one of the first trees we planted back in 2018. Every year it produces tons and tons of fruits over several days. We've had a great evaporation season with spring, summer and autumn conditions being favorable for salt production. This season, I changed things up a bit to make the polytunnel more user friendly and efficient. As you can see we now have evaporation tables and containers. The old method of simply flooding the floor was quite labour intensive in terms of suiting up to harvest and rinsing between batches. Now I can harvest, wash and drain the tables individually without actually having to walk through the water like before. Harvest is a wrap! Here are some of the team deftly wielding scissors and running through the cover crops and weeds while carrying 40 pound/ 18 kg grape bins. If that doesn't sound too bad, please visit and give it a shot. A few years ago we had local rugby players take the challenge and rack up 18 bins each on the day. The young lady on the right logged 44. Step right up! 🍇 We're starting to move our fermentations from their steel and concrete tanks into barrel this week and look forward to sharing these hand-harvested single parcel wines next year! 🍷 When we bottle the 2024s next year we'll be celebrating our 10 year anniversary of the Vicentes and Pearces making wine together. Instead of cleaning with chemicals and risk contamination, our team uses scalding water at 180 degrees.
