Spinach Mushroom Egg Frittata YIELDS: 1 Serving 1 Lean, 3 Green, 2 Healthy Fats, 3 Condiments INGREDIENTS 2 cups egg beaters or egg product 1 package baby spinach ½ cup fresh mushrooms ¼ tsp. onion powder ¼ tsp. garlic powder 1 tbsp. of grated Parmesan Reggiano cheese 2 tsp. Extra Virgin Olive Oil DIRECTIONS Sauté spinach and mushrooms in 1 tsp. of olive oil Lower the heat once everything begins to wilt. Add onion and garlic powder and continue to sauté. In a separate baking dish, use remaining 1 tsp. of olive oil to coat dish. Shake and measure out the 2 cups of egg beaters and pour into baking dish. Sprinkle Parmesan Reggiano cheese and mix. Add spinach and mushrooms to this and spread out evenly. Bake at 425°F for 15-25 minutes. Let stand for 5 minutes before eating. SPAGHETTI SQUASH STUFFED CHICKEN (Serves 2. Per Serving: 1 Leaner, 1 Green, 2 Cond) 18 oz boneless chicken breast cutlets 1 tsp Mrs. Dash Italian seasoning (divided) 1/4 tsp onion powder 1/4 tsp garlic powder 1/4 tsp salt 1 cup cooked spaghetti squash Combine spaghetti squash with onion powder, garlic powder, and salt. Pound or butterfly cutlets thin. Use 1/2 cup squash per person (we got 2 capons so roughly 1/4 cup in each). Fill chicken, then roll up. Sprinkle 1/2 tsp Mrs Dash on each cutlet. ZUCCHINI LASAGNA (Makes 6 full lean and green servings, 1 healthy fat & 2 condiments per serving) INGREDIENTS: 1 lb lean ground beef or turkey 4 medium zucchini 2 small cans of organic tomato sauce Sweet basil, oregano, Italian seasoning, and garlic powder (or fresh garlic & thyme) 1/2 tsp salt 1 cup part-skim ricotta 1/3 cup part-skim or 2% shredded mozzarella cheese 1/4 cup Parmesan cheese 1. Preheat oven to 350. Add the lean ground beef to a large skillet. Lightly season with garlic powder and Italian seasoning. Cook over medium heat until brown. Remove from heat but keep in the skillet. 2. Pour the tomato sauce into a small sauce pan and warm over medium heat. Add 1 tsp of sweet basil, oregano, Italian seasoning, and garlic powder. Add ½ tsp salt. Stir until spices are thoroughly mixed throughout. Add the seasoned sauce to the skillet with the meat. 3. Wash the zucchini, chop off the ends, and remove the peel. Very carefully slice the zucchini into strips. If you have a mandolin, feel free to use it. Boil the zucchini in a pot of hot water for about 2 minutes. Remove from heat and drain on paper towels. 4. In a non-greased 9/13 baking dish, begin the assembly of the lasagna. Start by pouring half of the meat sauce into the pan. Next add a layer of Zucchini. Top the zucchini with half of the ricotta. If you’re having difficulty spreading the ricotta around, use the back of a spoon. Pour the remaining meat sauce, and then add the zucchini, followed by the ricotta. Top the ricotta with 1/3 cup mozzarella cheese and ¼ cup Parmesan cheese. Lightly sprinkle Italian seasoning and garlic powder over the top of the lasagna. 5. Bake uncovered for 20 minutes. Remove from the oven and let cool for 10 minutes before serving. Cooling allows the lasagna to set and makes it easier to cut and serve in slices. 🐟Tuna Teriyaki Kabobs🍢 Makes 4 servings Per serving 1 Leanest protein 3 Greens 2 ½ condiments 2 fats Ingredients: 4 (8 ounce) tuna steaks • 1 medium sweet red pepper, cut into 1-in. pieces • 2 large leeks, cut into 1-in. pieces • MARINADE/DRESSING: • 1/4 cup minced fresh cilantro • 4 teaspoons sesame oil • 3 tablespoons lime juice • 2 tablespoons soy sauce • 4 teaspoons extra virgin olive oil • 1 tablespoon minced fresh ginger root • 2 garlic cloves, minced SALAD: • 1 package (5 ounces) fresh baby spinach • 1 medium sweet yellow pepper, cut into 1-in. pieces • 1 cup cherry tomatoes, halved Directions 1. Thread tuna chunks onto four metal or soaked wooden skewers. Thread pepper and leek pieces onto four more skewers. Place skewers in a 13x9-in. baking dish. 2. Whisk together marinade ingredients. Cauliflower Cheddar Biscuits Makes 4 servings: • 3 greens • 1 leaner protein• 2 condiments Ingredients: • 1 head cauliflower, leaves removed and cut into florets = 8 greens • 1/2 head broccoli, cut into florets = 4 greens 1 ½ cup low fat cheddar cheese, grated = 1 leaner protein • 1 ½ cup 2 % greek yogurt = 1 leaner protein • 4 eggs & 8 egg whites = 2 leaner protein • 3 tablespoons water = nothing • 3/4 teaspoon salt = 3 condiments • 1/2 teaspoon onion powder = 1 condiment • 1/2 teaspoon garlic powder = 1 condiment • ½ teaspoon of freshly ground pepper, to taste = 1 condiment Directions 1. Preheat oven to 400º F lightly grease 1-2 (mini) muffin tin(s) with non-stick spray. 2. Working in batches, place cauliflower and broccoli florets in food processor and pulse until it resembles grains of rice. 3. Place grated vegetables in a large, microwaveable dish, along with 3 tablespoons water, cover with a damp paper towel and microwave for 5 minutes, or until cauliflower is tender. 4. Carefully remove steamed cauliflower and transfer to a clean kitchen towel. Wrap up the cauliflower and wring out all excess moisture into the sink. 5. Repeat until all liquid has been drained. 6. Transfer cauliflower and broccoli to a large bowl and mix in cheddar cheese, Greek yogurt and eggs, then season with salt, onion and garlic powder, and pepper. 7. In a separate bowl, beat egg whites until stiff peaks form, then gradually fold egg whites into cauliflower mixture. Don’t over mix. 8. Sun-dried Tomato, Spinach, and Cheese Stuffed Chicken Breast Makes 3 servings Per serving 1 Leaner protein 1 Green 3 condiments 1 fat Ingredients 18 ounces chicken breasts, boneless and skinless 1/2 cup sun dried tomato, drained and patted dry (oil packed. Use enough to cover the chicken, cut into strips) 4 ounces part-skim mozzarella cheese 2 cups spinach Non-stick pan spray Italian Dressing 1 tbsp Dijon Mustard 1 tbsp white wine vinegar 1 packet Splenda or Stevia 2 tsp olive oil 1/2 tsp EACH Italian mixed herbs and red pepper flakes ¼ tsp Salt ½ tsp pepper Instructions Preheat oven to 180C/350F. Whisk together the Italian Dressing ingredients in a bowl. It will be thicker than salad dressing. Cut a pocket into each chicken breast, taking care not to cut all the way though. Coat the chicken (inside and out) with the Italian Dressing. Place chicken on work surface. Stuff with sun dried tomato, top with cheese then finish with spinach leaves. Just stuff in as much as you can. Seal with toothpicks (just stick them in on the diagonal). Heat oil in an ovenproof skillet over high heat. Add chicken and cook for 1 1/2 minutes on each side, or until golden. Transfer to oven and cook for 15 minutes, or until cheese is melted and bubbly and chicken is cooked through. Rest for 3 minutes before serving, drizzled with the juices in the skillet. Recipe Notes 1. Use whatever dried herbs you have - thyme, oregano, parsley, basil. 2. Typically, a 6oz/180g chicken breast (which is a small chicken breast) will take 25 minutes to roast at 180C/350F. Mediterranean Flank Steak😋 2 servings Each serving provides 1 lean 2 1/2 condiments 2 3/4 greens 12 oz. raw flank steak 1 cup fresh spinach 1/4 cup sun-dried tomatoes ( rinse the oil off ) 4 tablespoons low-fat feta cheese ( if you can’t find then use 2 tablespoons regular feta) 2 teaspoon balsamic vinegar Salad per serving ( double this recipe for 2 servings) 1 cup fresh spinach 1/4 cup red pepper thinly sliced 1 teaspoon Newman’s Own sesame ginger dressing Lay your flank steak flat. Put your spinach on top; then the rinsed sun-dried tomatoes and the feta. Carefully roll and secure with 4 toothpicks. Cut into 4 even portions. Each serving will get 2 pinwheels. Heat your sauté pan on high and put your pinwheels in to sear on both sides. I like my steak medium rare. So it all depends on how long you wear it depending on how done you want it. When it’s done remove from the heat and let it sit so the juices stay in. While you are letting that rest make your salad. Check out this transformation- I remember getting dressed in December 2017 for an event I went to on the picture on the left. I had one dress that fit but I just wanted to cover up as much of me as I could. Fast forward to January of this year. I was in Florida with friends and we picked out the dress on the right for me to wear to my son’s wedding. At that point I think I had lost about 90 lbs. I had so much fun trying so many dresses on. It was a hard decision to make because we liked so many of them and they all fit (size 6!!). What a difference from the days of dreading to go shopping to having so much fun picking something out!!! I got to wear the dress on the right last month at my son’s wedding and I probably could have gone down one more size!! Broccoli Cheese Casserole Ingredients: 1/4 cup egg beaters (1/8 Lean) 1 1/2 cups broccoli (3 Greens) 4.5 oz 1% cottage cheese (3/8 Lean) 1/4 tsp Mrs dash garlic and herb seasoning (1 Condiment) 1/8 tsp salt (1/2 Condiment) 1 tbsp grated parmesan cheese (1 Condiment) 1/2 cup shredded reduced fat cheddar cheese (1/2 Lean) 1/2 tbsp light butter (1/2 Healthy Fat for the cottage cheese and egg beaters) Directions: Preheat oven to 350 degrees. Combine all ingredients in a bowl except parmesan cheese and shredded cheddar cheese. Pour into a casserole dish sprayed with non stick cooking spray. Bake for 40 min. Zucchini Hash Browns Ingredients: 1 1/2 cups shredded raw zucchini (3 Greens) 1 tbsp chopped onion (1 Condiment) 1 egg (1/3 Lean) 2 tbsp reduced fat grated parmesan cheese (1 Condiment) 1/8 tsp garlic salt (1/2 Condiment) 1/4 tsp pepper (1/2 Condiment) 1 tbsp light butter (1 Healthy Fat) Directions: Grate the zucchini into a colander. Squeeze out any excess water. Add the onion, egg, garlic salt, and pepper to the zucchini. Mix well. Melt half of butter in a medium skillet over medium heat. Form 3 to 4 small thin patties in a skillet (half of mixture). Cook for about 6 to 8 min, turning once. Remove from pan and set aside. Add 3 to 4 more patties and cook until done. Taco Cups Ingredients: 2 slices Sargento reduced fat cheese slices* (1/2 Lean) 4 oz raw 95 to 97% lean ground beef, 3 oz cooked (1/2 Lean) 1 tsp Stacey Hawkins Southwestern Seasoning or taco seasoning of choice (2 Condiments) Additional Toppings: Lettuce and tomatoes (subtract from your Greens) 1 tbsp sour cream (1 Condiment) Directions: Preheat oven to 375 degrees. Brown ground beef over medium high heat for about 5 min or until cooked thoroughly. Drain any excess fat. Season with taco seasoning and stir until combined. Set aside. Line a baking sheet with parchment paper. Lay cheese slices on parchment paper and bake 6 to 7 min or until bubbly. Let cool on the baking sheet for about 1 to 2 min. Carefully pick up melted cheese slices and place on the bottom of a muffin tin. Let cool for 10 min. Place half the ground beef in one cup and the rest in the other cup. Top with your desired toppings! 1 Serving with 1 Lean and 3 Condiments *You can use 1/2 cup shredded reduced fat cheddar cheese if you do not have cheese slices. Steak Rolls Serves 4 Per serving: 1 lean, 3 greens, 2.25 condiments ● 1 lbs raw flank steak ● 1/2 cup shredded low fat mozzarella ● 1 clove garlic ● ¼ cup minced shallot ● ¾ lb mushrooms ● 1 lb spinach cooked, drained ● ¼ tsp each- salt & pepper Directions 1. Cut steak against grain into ½ inch slices Pound to ¼ inch thickness. 2. Saute shallot & garlic for 5 minutes, add mushrooms and season to taste. 3. Spread spinach over meat. Top with mushroom mixture and cheese. Roll up jelly roll style. Secure with toothpicks. 4. Arrange rolls on oiled baking sheet. Roasted Kabocha Squash Soup 3 cups roasted kabocha squash (6 greens) 2 cups chicken broth (2 condiments) 1 ½ cups unsweetened cashew or almond milk (1 ½ condiments) ½ tsp garlic powder (1 condiment) ¼ tsp onion powder (1/2 condiment) ½ tsp dried parsley (1/6 condiment) 1/8 tsp black pepper (1/4 condiment) Directions: In a medium saucepan, combine all ingredients over medium high heat. Bring the mixture to a boil and then let simmer for 10 to 15 minutes. This simmering will get the flavors blended. Let cool slightly. Add mixture to blender and blend until smooth. Cauliflower Muffins Ingredients: 17.6 oz cauliflower rice (10 greens) 3 large eggs (1 lean) 1 1/2 cup (12 oz) low fat cottage cheese (1 lean) 5 tbsp grated parmesan, freshly grated (5 condiments) 3 tsp Trader Joe’s 21 seasoning salute or Italian Seasoning (6 condiments) ½ tsp salt (2 condiments) 1 tsp ground pepper (2 condiments) 10 sprays cooking spray (1 condiment) Directions: Set the shelf in the middle and preheat the oven to 400 degrees. Spray three non-stick 12-cup mini muffin pans with cooking spray. Working with one bag of cauliflower at a time: break any large pieces into smaller florets and pulse in food processor until it reaches a rice-like texture. Place all the cauliflower in a large microwave safe bowl and microwave for 8 minutes, stirring halfway. Do NOT add water or cover. Meanwhile, in a medium bowl, lightly beat eggs with a fork. Add cottage cheese, parmesan, and seasoning, and mix with fork to combine. Add hot cauliflower; mix well. Fill muffin cups to the top. Press down a little with your finger to even out. Bake for 20-30 minutes until tops are golden brown. Check one to make sure bottoms are cooked enough. Place directly on oven rack or the bottoms will be soggy. Place a baking sheet on the shelf below to catch and drippings. Best served warm. Can be refrigerated overnight and reheated in a low temp oven. Enjoy this recipe based off the wonderful Olive Garden recipe!! . Zuppa Toscana Soup Ingredients: 4 slices turkey bacon 1 ½ pounds Italian chicken sausage 4 cups cauliflower (cutting florets in half is necessary) ½ cup scallions 4 cloves garlic 4 cups chicken stock ¼ teaspoon salt ¼ teaspoon pepper 2 cups kale 1 ½ cup reduced-fat plain Greek yogurt 3 tablespoons Parmesan cheese Directions: In a large pot, cook the turkey bacon until crispy. Drain any grease, set aside. Add the sausage, breaking it apart as it cooks. Once the sausage is browned and crumbled, remove sausage and drain of any grease leaving a Tbsp. to sauté the scallions, add to bacon. Add the scallions to the pan; sauté until translucent, add garlic, sauté until fragrant. Add the bacon and sausage back into the pot. Stir in the stock and cauliflower, season with salt and pepper and simmer for about 10 minutes or until cauliflower is tender. Add kale and yogurt. Bring to a simmer. (Not a boil). Top with Parmesan cheese when serving.
