Crispy balsamic tofu + πŸ„β€πŸŸ« ✨ Spring inspiration from the archives. Crispy balsamic tofu and portobello mushrooms. So here is what I recommend for crispy tasty balsamic tofu & mushrooms Balsamic tofu + πŸ„β€πŸŸ« Slice your tofu fairly thinly and pat dry with a clean cloth or kitchen roll/paper towel. I live @tofoo smoked or regular Sprinkle a little corn flour through a fine sieve and sprinkle fine salt. Heat a pan up with a high heat loving oil, I would use @olivadouk avocado or macadamia. Add your tofu when oil is pretty hot and saute a few minutes each side until brown and crispy, at the end add some @belazu_co balsamic vinegar flipping the tofu and lowering the heat so it caramelises and has a lovely sauce on it. Remove tofu and add some olive oil then sliced portobello mushrooms and saute a few more minutes, this will also have a nice sauce to coat the mushrooms but add a splash of balsamic again if you like. Set on a bed of rocket, pink radicchio and red sorrel (which I remember was really easy to grow on my balcony, will try again!). Top with wild garlic flowers which should soon be out in the woods and serve. Definitely not talking about those plain Jane ones made up of only lettuce, tomato and ranch but the fully loaded salad perfect as a appetizer, side or main dish that feels fulfilling and nourishing. Here are some tips to make your salads remarkable. πŸ’š Switch up the lettuce or add more than one variety - iceberg lettuce is great texturally but not a superstar when it comes to nutritional value compared to other leafy greens. Some greens you can easily add depending on the season; head, romaine, ice berg lettuces, kale, beet greens, spinach, cabbage, Swiss chard, arugula, mach, claytonia, sorrel, mustard, collard greens, micro greens, endives or any of the hundreds of asian greens out there. πŸ’šRaw Veggies are a must to add dimension to any salad. Some of our favourite veg to add is, kohlrabi, carrots either orange or rainbow, celery, red onion, shallots, scallions, radish, cucumbers, tomatoes, peppers, broccolini, turnips, and garlic scapes. πŸ’šCooked Veggies - if you are someone that feels hungry after eating a big salad you might want to think about adding cooked veggies into the mix. They will help fill you up and it can be a nice textual difference between raw and cooked. Our favourite cooked veggies to add are, potatoes, sweet potatoes, celeriac or celery root, beets, rutabaga, turnips, kohlrabi, broccolini, cauliflower, beans, zucchini, or any type of summer or winter squash. πŸ’šRaw Fruit can be a game changer when added to salads, they can be a touch harder to get year round and chemical free but when berries and apples are in season here in Alberta we love to add them sliced into salads or create a zippy dressing out of them. February Power Bowl Our family are bowl addicts, to us it’s the perfect fulfilling dish. It’s a great way to eat a super well rounded meal that your body needs to help it stay strong and healthy. You can use up leftovers and help clean out the fridge of random or excess amounts of veggies! It can be easily meal prepped for the week or be made on the fly by cooking your protein and prepping everything else at the same time. You may modify these bowls to be vegetarian, vegan, gluten, dairy free etc. In these photos we started by placing rice vermicelli noodles in the middle of the bowl and surround them with sliced asian marinaded chicken thighs, shredded daikon radishes, red cabbage, spinach leaves, thin pieces of kohlrabi, mix of fresh micro greens, peeled rainbow carrots, cucumber and red onion. Topped with a homemade Japanese carrot and ginger dressing and a sprinkle of salad seed mixture. We shared the dressing recipe with our produce box customers last week. We love incorporating new recipes every week to help give everyone a little inspiration in the kitchen. Food should be an exciting and empowering daily occurrence.

Our industrialised food system has drastically reduced the variety of foods we consume.
