Fiddleheads have a woody, asparagus like taste. I like to use simple ingredients to highlight their unique flavor. I love the effect of laying them flat on a pan to bake and crisp up individually. These have been blanched and thrown into a ice water bath to preserve their bright green color. This morning, someone asked me why I use locally grown peppers, garlic, and honey in our sauces. The answer is simple--it tastes better when it comes straight from the farm. Think about it for a moment. Peppers you get from a grocery store, or even a restaurant supplier, have been out of the ground for a couple weeks. Maybe more depending on where the produce was grown. When we get fresh peppers and garlic from @oakwoods_farm , they were picked a couple days before I receive it. Wouldn't you rather eat something fresh from the farm? Gerösteter Kartoffel-Karotten-Salat mit fermentiertem Spargel und veganer Zitronen-Mayo. Ich liebe OfengemĂŒse einfach in allen Varianten: Ein ordentlicher Schuss gutes Olivenöl, etwas Salz und Zucker, evtl. ein Paar KrĂ€uter oder Knoblauch - 15 min. auf voller Power im Ofen backen - fertig. Einfacher kann man die Aromen wohl kaum aus einem GemĂŒse hervorkitzeln. Kartoffeln und Möhren werden hier fix in StĂŒcke geschnitten und mit Schale aufs Blech geschmissen. Dazu eine grob geviertelte Zwiebel. Das GrĂŒn der Karotten muss nicht komplett entsorgt werden #dontwastethetaste Ich habe etwas davon geölt, gesalzen und ca. 1 min. mit aufs Blech gelegt, bis es schön chrunchy war -> Perfektes Topping! Das lĂ€sst sich ĂŒbrigens mit allen möglichen GemĂŒse-BlĂ€ttern genau so machen, besonders lecker finde ich die Variante mit Kohlrabi-BlĂ€ttern #fromleaftoroot ;) Die frischen Aromen des fermentierten Spargels sind eine schöne ErgĂ€nzung zu den warmen Röstaromen des Salates und der cremigen Mayo. Der Herbst ist da und mit ihm auch endlich wieder die Zeit fĂŒr KĂŒrbis-Gerichte in allen Varianten. Ich liebe dieses GemĂŒse, das botanisch gesehen eigentlich eine Beere ist, fĂŒr seine fast unendlichen Einsatzmöglichkeiten in der KĂŒche. Abgesehen von den Klassikern wie Suppen oder OfengemĂŒse kannst du KĂŒrbis auch fĂŒr Kuchen, Risotto, Chips, Bratlinge, Pasta-Saucen, Pickles, Smoothies und zum Brot backen verwenden. Dieses Jahr haben wir das erste mal selbst KĂŒrbisse vorgezogen und angebaut und - oh Wunder - es hat direkt funktioniert und zwar so gut, dass unser Garten im September fast komplett vom KĂŒrbis verschlungen wurde (Siehe Bild 2). KĂŒrbisse benötigen (unser GlĂŒck) vergleichsweise wenig Wasser und Pflege, das macht sie zu einer sehr ressourcen sparenden Pflanze, die gleichzeitig große NĂ€hrstoff- und Vitaminreiche FrĂŒchte hervor bringt. KĂŒrbisse können lange gelagert werden, ohne an QualitĂ€t zu verlieren. I’ve had a lot of requests for my spiced nuts recipe and of course I’m more than happy to oblige and thought I would share it with everyone 250g of your favourite nuts or a mixture 1/2 tsp sumac A pinch of chilli flakes 1/2 tsp ground coriander 1/2 tsp smoked paprika 1tsp Sea salt flakes 1tbsp unsalted butter 1tsp honey Zest of 1 lemon 1tsp lemon juice Preheat the oven to 160c and place the nuts on a baking tray. Roast for 10minutes. Meanwhile melt the butter in a large pan on the hob. Once melted remove from the heat and add the remaining ingredients. Stir well and leave to cool. Once the nuts are ready immediately pour into the saucepan and stir. Continue stirring until the spice mixture sticks to the nuts. The easiest tomato salsa and it goes with so many things! I’ve been a part of the @desserts.and.drinks recipe development team for awhile and always love the creative and sometimes abnormal dessert recipe ideas for @desserts.and.drinks asks me to make! Somehow, although sometimes these ideas seem a bit outlandish to me, they always exceed my expectations. And this is one of those recipes! Banana Pudding Brownies are awesome!! If you love brownies, banana flavor, a slight cheesecake swirl and meringue — what’s not to love!! The recipe isn’t gluten free, but can easily be adapted with basic ingredient swaps (dm me if you need help!) I’ve done a ton of recipe creation for this site over the year, but this was my first time doing a photoshoot too! And @desserts.and.drinks always has the most stunning photos that are not exactly my go-to style to shoot it. When they asked me to shoot this recipe, I was so excited to try my best and replicate her style. And I really love how it turned out!! đŸŽ‰â€ïž I think it’s so important to push ourselves out of our comfort zone because you’ll usually surprise yourself with the work you can do and things you can accomplish! This shoot was moody, yet bright, with more of a busy vibe but not too busy, and dramatic — and I learned sooooo much working on it! And OBSESSED with incorporating flowers too. Line two baking sheets with parchment paper and set aside. In a large bowl mix together oats, coconut flakes, poppy seeds, cinnamon, and salt. In a separate bowl mix honey and olive oil. Combine both bowls, and mix all ingredients thoroughly together. Spread your mixed granola onto both baking sheets and place in the oven, baking for around 20 minutes. Remove the baking sheets. With a fork spread the granola around the edges into the center of the sheet, making sure not to burn. Place both baking sheets back into the oven and bake for an additional 20 minutes. Once the granola is cooked add dried cranberries and a pinch of maldon sea salt. Let your granola cool before placing into a container. This can be saved up to two weeks. Buon Appetito!

Wholemeal fusilli with leftover Brussels sprouts and chorizo. Also incorporates 4 of 5-a-day. For 4 Ingredients 1. 5-a-day ingredients: 1. Brussels sprouts, cut in half and roasted (or however way it was roasted) 320 gm 2. Onions, 320 gm 3. Frozen peas, 320 gm 4. Tomatoes, 320 gm or concentrated tomato purĂ©e (4 heaped tablespoons) 2. Wholemeal fusilli, 250 gm 3. Chorizo, 100 gm 4. Pimenton, 1 teaspoon 5. Chipotle paste / chilli paste / 2 red chillis, chopped 6. Optional: butter x 1 tablespoon. I used organic butter from our local dairy farm @baysleaporganic 7. Cream, x 4 tablespoons. I used organic cream from @baysleaporganic 8. Zest and juice of a lemon 🍋 9. Herb of choice: use whatever herb was used when cooking the Brussels sprouts. Or use a few sprigs of fresh thyme 10. Olive Oil 11. Parmesan Method: 1. In a large pot add the chorizo, onions and Brussels sprouts. Add a drizzle of oil and a pinch of salt. Cook with lid on x 10 minutes 2. Add the thyme, pimenton, chilli/chilli paste. Fry x 2 minutes 3. Add the tomatoes/tomato purĂ©e. Cook with lid on x 5 minutes. Reduce till there is no liquid left. 4. Boil heavily salted water in another very large pot. Cook the wholemeal pasta for 5 minutes or till 60% done. Add the pasta to the chorizo sauce along with a few ladlefuls of the pasta water. 5. Add the butter, cream and 🍋 juice and zest. Mix it in. Turn the hob off and keep lid on for 5 minutes 6. Wels-Burger Unser scharfer Wels-Burger ist eine Eigenkreation – bisi herumprobiert, verkostet und fĂŒr echt gut befunden 😉 FĂŒr die Wels-Laibchen den Wels enthĂ€uten und rund 500 g Welsfleisch faschieren (oder mit einem scharfen Messer ganz fein hacken). 4-5 FrĂŒhlingszwiebel fein schneiden (nur den weißen Teil). Das faschierte Fleisch mit 1 Ei, 1 TL Koriander, 2 TL Petersilie und den Saft einer kleinen Zitrone vermengen. PS: Wir haben ĂŒbrigens Petersilie und Koriander vom sympathischen, österreichischen Unternehmen @ehrenwort.genussmomente verwendet 😉 Die Masse noch ordentlich salzen und pfeffern. 5-6 EL Panko- oder Semmelbrösel zugeben und alles gut durchrĂŒhren. Die Laibchen entweder mit der Hand formen – so groß wie du sie brauchst – oder in eine runde Burger-Laibchen-Form streichen und festdrĂŒcken. Die fertigen Paddys kurz in den KĂŒhlschrank geben. Nach einer kurzen Ruhezeit die Laibchen in einer Pfanne rausbraten – je nach Dicke werden sie ca. 10-14 Minuten benötigen, bis sie durch sind. Aus dem Saft 1 Zitrone, 2 EL Olivenöl, 2 EL Mayonnaise, 4 EL Sauerrahm, Pfeffer und frische, gehackte, scharfe Chillis eine scharf-zitronige Sauce zusammenrĂŒhren. Die Burger-Brötchen halbieren. Die Sauce auf den Unterteil streichen und Fischlaibchen darauf setzen. Tomaten- und Avocadoscheiben darĂŒber legen, nochmals etwas Sauce darĂŒber trĂ€ufeln und den Burgerdeckel drauf setzen. Gleich genießen! Guten Appetit! Du kannst mit den Zutaten gerne experimentieren – Schnittlauch statt Petersilie oder etwas Safran hinzu, etc. Oder statt der zitronigen Sauce eine klassische Sauerrahm-KrĂ€uter-Sauce oder doch lieber was Fruchtiges? An afternoon developing a couple of recipes with tiger nut flour. The idea was to take advantage of the naturally occurring sweetness of the tiger nut and not use any kind of additional sugar or sweetener. Also used rice flour and tocos for natural their sweetness. Both the cocoa muffins and the golden milk spice cookies are gluten, sugar/sweetener, and dairy free. I used an egg in the muffins but I reckon they can also work without it.
