🌱 Almond Butter Tofu Noodles By @vancouverwithlove Ingredients - Tofu •1 350g pack medium firm tofu •1 tbsp unflavoured oil •1 tbsp Braggs Soy Seasoning (or soy sauce) •1 tbsp apple cider vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Almond Butter Sauce •2 tbsp almond butter •1 tbsp apple cider vinegar •2 tsp maple syrup •2 tbsp Braggs Soy Seasoning (or soy sauce) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bowls •2 servings flat rice noodles •1 tsp avocado or other unflavoured oil •3 trumpet/king oyster mushrooms, thinly sliced •1 small head bok choy, leaves separated •1 medium carrot, thinly sliced •1 green onion, thinly sliced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To Serve •Cilantro leaves •Toasted almonds •Lime ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions Cut tofu into 1-inch cubes, and place on an ovenproof tray. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Toss in Braggs/soy sauce, oil and apple cider vinegar. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Place under your oven's broiler (grill) for 10 minutes, until cubes are just turning golden. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Flip and cook another 10 minutes until cubes are browned. Remove from oven and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ While tofu is cooking.... Cook noodles as per instructions. Then rinse, drain and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Make sauce by mixing almond butter and vinegar in a small bowl. Add maple syrup and Braggs/soy sauce and mix until smooth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a large skillet, heat 1 tsp oil on medium. Add mushrooms and cook for 3 minutes, stirring frequently. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add bok choi and carrot and cook for another 3 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Reduce heat and add pre-cooked noodles, tofu and green onions to skillet. Vegan Roasted Tomato Pizza By @foodpassionical Prep time: 30 minutes Cook time: 20 minutes Rising time: 1 hour Preheat oven 180c (356f) (Makes 2 8’inch pizza) Pizza dough: 400g (2 1/2 cups) All purpose flour 1 tsp instant yeast 2 tbsp sugar 1/2 tsp salt 2 tbsp olive oil or vegetable oil 230-240ml warm water (approximately) Roasted tomato: 600g cherry tomatoes 2 tsp garlic powder 1/2 tsp chilli flakes 1 tbsp sugar (optional) 1/2 tsp salt 1 tsp black pepper 2 tbsp olive oil For toppings: Vegan ricotta cheese Fresh basil Chilli flakes Method: 1.) Add the dough ingredients into the the mixing bowl, use spatula to mix the ingredients till no more dry flour. Cover and rest the dough for 20 minutes. 2.) After 20 minutes continue kneading the dough till soft, cover and rest the dough for 1 hour. 3.) On a heat proof pan, add the cherry tomatoes and the rest of the ingredients. Bake the tomatoes for 20 minutes and set aside. 4.) Prepare the pizza pan by sprinkling some semolina on the pan to keeps dough from sticking and set aside. 5.) After 1 hour, knead again the dough for about 1-2 minutes, divide the dough into 2. (Work with one dough at a time, always cover the dough to prevent the dough from drying). Place the dough on a clean surface and flatten the dough about 8 inch. Transfer the dough on the prepared pizza pan. Cover the dough with tablecloth for 10 minutes. 6.) Spread the tomato purée on top of the pizza dough, and fill with the roasted tomatoes. Bake the pizza for 200c for 20-25 minutes. Remove from the oven and top with vegan ricotta cheese and bake for 2-3 minutes until the cheese in browned. Every time you buy something, you’re “voting” for it and telling the manufacturer to make more of that thing. Don’t take that lightly! Pan Roasted Cajun Home Fries with Southwest Tofu Scramble - Is there a better way to start off a Saturday? Savory home fries are deliciously crisp on the outside and soft on the inside. It makes the ideal side to a Southwest Tofu Scramble. Pan Roasted Cajun Home Fries Ingredients: 2 medium-sized potatoes of choice, chopped 2 medium sweet potatoes, chopped 1 small onion, diced 1 tsp chili powder or pepper flakes 11/2 tsp garlic powder Salt and pepper to taste Olive oil for roasting Preheat oven to 425° Line a baking sheet with parchment paper. In a large bowl, mix the potatoes and onions, then add your spices and toss together until potatoes are evenly seasoned. Drizzle with a little olive oil and toss again, making sure all the potatoes and onions are covered.Pour seasoned potatoes onto the parchment lined baking sheet. Bake for 30-40 minutes flipping halfway through with a spatula. Buddha bowl! Here’s how I made it: 🌱Roast carrots, sweet potato, onion, cauliflower and broccoli in the oven with a couple teaspoons of olive oil at 400 degrees for 20 minutes. 🌱While those cook, cook 1/2 c of quinoa in 1 c of water until all the water is absorbed. 🌱While that cooks, make the sauce: 1.5 c cashews, 2 garlic cloves, 1/2tsp cayenne pepper (only if you like spice), the juice of a lemon and a lime, salt and pepper, water to blend to your preferred consistency. 🌱I also used some leftover black beans from my lunch yesterday (see previous post) and cut up a mango and avocado. 🌱When everything is ready, add kale or greens of choice in the bottom of a bowl and layer with veggies, quinoa and beans, mango and avocado. Top with cashew sauce, red pepper flakes and herb of choice (I used some chives from my garden). 🌱Enjoy!! It’s a rainy Saturday here but it’s going to be a busy day for us. I’ve been to an amazing plant sale at our local community college and gone to Wegmans to pick up prom flowers for my son and his date. Next up is a soccer game, a sleepover for my daughter, a wedding for my husband and prom for my son! I’ll be chauffeuring for the evening 🩵 Can’t wait! Orange-Chili Glazed Vegan Meatballs By @thecuriouschickpea 1 tsp canola oil 1 cup diced red onion 2 cloves garlic, minced 2 tsp minced ginger ½ tsp crushed red pepper flakes 15oz can chickpeas, drained and rinsed 1 6.3oz package Annie Chun’s Brown Rice 2 tbsp soy sauce 2 tbsp tahini, cashew butter, or peanut butter 1 tbsp lime juice 1 tbsp toasted sesame oil 2 tbsp sesame seeds ½ tsp salt ¼- ½ cup panko breadcrumbs (or GF breadcrumbs) if needed 1 bottle Annie Chun’s Chinese-Style Orange Sauce 2 Thai chilies, minced (or 1 tsp crushed red pepper flakes) Thinly sliced scallions, for garnish 1. Preheat the oven to 375 ºF and line a baking tray with parchment paper and spray with oil. 2. Heat the teaspoon of oil in a skillet over medium and sauté the onions until soft, 3-5 minutes. Add the garlic and ginger and cook for 60 seconds, then stir in the chili flakes. 3. Transfer the onion mixture to a food processor and add the chickpeas, brown rice, soy sauce, tahini, sesame seeds, salt, lime juice, and toasted sesame oil. Process until finely chopped, clumping together, and can be shaped into balls. Some larger pieces of chickpeas are okay. If the mixture is too wet, stir in breadcrumbs as needed. 4. Shape 1 tablespoon portions of the mixture into balls, you should make about 24 balls. Place on the baking tray and spray the vegan meatballs with oil. 5. Bake for 15 minutes, flip, then bake an additional 10-15 minutes or until crispy on the outside. 6. In a small pot combine the orange sauce and the chilies and warm up. Bring to just a simmer, then turn off the heat. 7. Noodles in a mushroom coconut broth By @the_clumsy_vegan Ingredients Lemongrass: 1 stick Red chilli: 2 Garlic: 1 clove Ginger: 1 inch Kaffir lime leaves: 2 Coriander stems with leaves: handful Chest nust mushrooms: 5 Onion: 1 sliced Miso paste: 1 T Soya sauce: 1 T Wite pepper: 1 t Wasabi paste or mustard: 1 T Mushrooms: 100g shitake or chestnuts (optional) Coconut cream: 1 C Water: 1 C Sesame oil: 1 T Cooked noodles of choice: portion for 3 Method: -Pound together lemongrass, red chilli, ginger, garlic, kaffir leaves, coriander and mushrooms. You can do this with a mortar and pestle or pulse in a food processor -Heat sesame oil in a pan. Add the above paste and onions. Fry on medium heat for 5-7 minutes -If using mushrooms add them at this stage and sweat them down -Mix in miso paste, wasabi, soya sauce and white pepper. -Add coconut cream and water. Spring kohlrabi is simply the best. What’s not to love? The whole plant is edible and really freaking tasty. We will have 3 different colours to choose from this year, green, white and purple. White comes across the creamiest but the purple is the most nutrient dense and all are stunning. The first small batch went into Produce Boxes this week and some will be coming with us to the @strathconamarket this Saturday. The leaves as shown in the photos are the best ‘wrap’ green that we have found. It has great texture that holds everything together with a slight brassica flavour. We also love to chop up the greens and add into pasta sauces, savoury pies, salads, sautéed with garlic and chilies, and in stir fries. Toss some into your juicer or blender for super healthy green smoothie and juice. When you are shopping for kohlrabi and see that the plant has its leaves still on, that a great sign its been recently harvested. Remove the greens when you get home, it will keep the bulb juicer. The bulb is perfectly juicy and makes great base for coleslaws, Asian or apple slaws, add into salads, sliced thin with a splash of lemon juice and salt and pepper for a quick but healthy snack or slice them thin and lay the pieces flat on a sandwich or wrap for the biggest wow factor ever. Love juicing the bulbs or hallowing them out and baking them stuffed with rice, cheese, meat and veggies. Cube them up and roast them in the oven with seasonal herbs, lemon juice and your favourite oil. They are even great on the BBQ. Hey pasta lovers. We’re doubling down with something we’ve never done before - our first filled pasta! Agnolotti is pasta stuffed with a confit green garlic and plant-based ricotta filling that we made using tofu. After cooking, the pasta is placed on a potato puree fortified with fava greens, then finished with dollops of plant-based parmesan foam, favas lightly dressed with lemon zest and evoo, fried wakame, and nasturtium. Banana Nut Chia Pudding with a Date Pecan Crumble by @plantbasedrd just 15 mins of prep time that involve blending and mixing together. Bonus, since this gives you about 10 grams of fiber per serving, it’s also a great way to start your day so it’s easier to hit your fiber goals for the day (goal: 25g fiber daily for women and 30g fiber daily for men). Note: Not a fan of the chia seed texture? Try blending it together with the banana milk to help smooth it out. 1 banana 3/4 cup unsweetened plant-based milk (I used soy milk) 1/3 cup unsweetened plant-based yogurt (I used soy yogurt) 2 tbsp maple syrup 2 tbsp raw pecans 1 tsp vanilla paste or extract 1 tsp ground cinnamon 1/4 tsp ground cardamom 1/3 cup chia seeds Pecan Date Crumble 2 soft medjool dates, pitted 1/3 cup raw pecans
1/2 tsp cinnamon
Kosher salt To serve: Extra banana slices, coconut flakes, etc. To a blender cup, add the banana, milk, yogurt, maple syrup, pecans, vanilla, cinnamon, cardamom and a pinch of salt. Blend everything until completely smooth, scraping down the sides of the blender cup as needed. To a large storage container, add the chia seeds then pour in the blended banana milk. Whisk the mixture together well, cover and let the mixture set for 5 minutes. Whisk again to help remove any clumps that may have formed then cover again and allow to refrigerate for at least an hour before using. In a mini-food processor, add the dates, pecans, cinnamon and a pinch of salt. Pulse the mixture together until it becomes crumbly to your liking. To serve, layer a spoonful of the crumble in a small cup, then add the chia pudding on top. Top with another spoonful of the crumble mix and extra banana slices as desired.

Protein-Packed Avocado Toast By @vancouverwithlove Ingredients - serves 1 •2 slices bread (gluten-free if needed) •½ large avocado •1 tsp apple cider vinegar •⅓ cup chickpeas (rinsed & drained) •Sea salt & black pepper •microgreens or radish slices to garnish ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions - Toast bread. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - While toasting, combine avocado flesh and apple cider vinegar in a small bowl. Eating white potatoes isn’t related to risks for many chronic diseases, but consuming boiled potatoes may pose a small increase in diabetes risk. Not only are high-glycemic impact diets robustly associated with developing type 2 diabetes, but evidence suggests this relationship is cause-and-effect.⁠ ⁠ White bread and white potatoes are way up there as high glycemic index (GI) foods. When you compare them to intact grains, super-low GI foods like barley groats (also known as pot barley), you can see how refined grains and potatoes are simply no match.⁠ ⁠ How can we have our potatoes and eat them, too? We can lower the GI of white potatoes three ways:⁠ CHILL THEM: After boiling potatoes, put them in the refrigerator. While they’re cooling, some of their starches crystallize into a form that can no longer be broken down by the starch-munching enzymes in our gut. When put to the test, you actually see a dramatic drop in the GI of cold versus hot potatoes. So, precook potatoes, allow them to chill, then enjoy them cold or reheated.⁠ ADD BROCCOLI: Eating two servings of cooked broccoli with mashed potatoes has been shown to cut insulin demand by nearly 40 percent.⁠ ADD VINEGAR: Simply chilling potatoes may cut down on blood sugar and insulin spikes, but adding about a tablespoon of vinegar achieves significant drops in both, lowering levels by 30 to 40 percent. What’s more, just one or two tablespoons a day of vinegar diluted in water can significantly improve both short- and long-term blood sugar control for people with diabetes.⁠ ⁠ Does adding animal protein make matters worse?
