Which  #recipe would you try?👇 By @Healthygirlkitchen 1️⃣ bookmark this vegan BROWNIE BAKED OATMEAL 🤎✨ Ingredients: 2 cups coconut or almond milk (not canned) 1/2 cup maple syrup 1/3 cup peanut butter 1 tsp vanilla 2 cups rolled oats 1/4 cup cocoa 1 tsp baking powder 1 tbsp flax pinch of salt 1/3 cup chocolate chips pan is 6 x 9 This is an oatmeal recipe* not a brownie recipe! There has been some confusion! Instructions: 1. Preheat oven to 350 F. Add all wet ingredients to a bowl. Then add dry ingredients. Mix then add chocolate chips. Mix. 2. Pour into baking pan and bake for 40 minutes. 3. Enjoy! Store in fridge and reheat when you want to eat! 2️⃣ Bookmark CHICKPEA CHOCOLATE CHIP COOKIES 🍪✨ Ingredients: 1 15 oz can of chickpeas rinsed and drained 5 pitted dates 1/2 cup creamy peanut butter 1/4 cup rolled oats 1/4 cup coconut sugar 1/4 maple syrup 1/2 cup vegan chocolate chips plus extra for topping 1 tsp vanilla 1/2 tsp baking powder 1/2 tsp baking soda sea salt garnish instructions: 1. Preheat oven to 350 degrees F and prep and baking sheet with parchment paper. 2. Blend all ingredients in a food processor except chocolate chips, baking powder and baking powder. 3. Blend until smooth scraping down the sides as necessary. 4. Blend in the baking soda and baking powder. Pour in the chocolate chips and stir with a spoon until combined. Make the cookies about 2 tbsp of cookie dough. Use a spoon because it's sticky to touch. Flatten a bit. Add extra chocolate chips on top. This yields about 14 cookies. 5. Bake for 13-15minutes. They will be soft but they'll firm up. 6. Enjoy besties! . .

Pumpkin Soup with Coconut & Ginger By @beferox Serves 4 Ingredients: •800g Hokkaido pumpkin, washed, deseeded and cut into pieces •600g carrots, peeled and sliced •1 onion, cubed •5 cm ginger, peeled and thinly sliced •2 tbsp. vegan butter or margarine •1 liter vegetable broth •1 can (400ml) coconut milk •Salt, pepper and soy sauce to taste •Juice of 1 lemon Directions: •Heat 2 tbsp. vegan butter in a big saucepan over medium-high heat. Add pumpkin pieces, carrots, onion and ginger. Cook for 5 minutes, then add vegetable broth •Reduce heat to medium-low. Cover pot with a lid and cook for 20 minutes or until vegetables are soft •Remove saucepan from heat and finely puree the soup with an electric mixer. Add coconut milk and lemon juice. Blackened Chili Lime Tofu 🌿by @realizing_fitness 1 block firm tofu, pressed and cubed 2 tbsp neutral oil of choice, divided 1 tbsp tamari 1 bell pepper, sliced 1 onion, sliced 2 cloves garlic 1 tbsp ancho chili powder, divided 1/2 tsp smoked paprika, divided 1/2 tsp salt (or to taste) 2 limes, juices 2 tbsp maple syrup 1/4-1/2 tsp red chili flakes 1/4 tsp pepper cilantro, chopped jasmine rice In a frying pan, heat 1 tbsp oil. Add tofu and cook on all sides until golden. Season with tamari and add 1/2 both chili powder and paprika. Cook until crispy and slightly blackened. Transfer to a bowl. In the same frying pan, add remaining oil. Heat and add garlic and onions. Cook for a few minutes and then add peppers. In a small bowl, combine salt, pepper, remaining chili powder, smoked paprika, lime juice, maple syrup and red chili flakes. Add tofu back into your frying pan and cook for a few minutes. Pour in sauce ingredients and fry. Add a little water, if necessary and adjust seasoning to suit your preferences. I served mine with more fresh lime and cilantro on a bed of jasmine rice. By @Gigi_goes_vegan 1️⃣ COFFEE CHOCOLATE PROTEIN MOUSSE Protein per serve 19gr IS THIS A COMPLETE PROTEIN ?! yes Although it is good to note that tofu is a touch low in methionine compared to the other amino acids, which is why I added hemp seeds to the recipe. INGREDIENTS (makes 3 small jars or 2 medium ones) 300gr block silken tofu 90gr melted dark chocolate 1 Tbsp hemp seeds 5gr instant coffee (feel free to add more if you like coffee flavour) Sweetener optional (2 tbsp maple syrup should do) but recommended if 1) you use chocolate that is 80%- 90% cocoa 2) are a sweet tooth. METHOD -In a blender, combine silken tofu, hemp seeds, coffee, sweetener, and melted chocolate. Pro tip: add 1 tsp of coconut oil if melting the chocolate in the microwave. This helps quicken the process and prevents the chocolate from burning. -Blend the ingredients until smooth. -Pour the mixture into jars and refrigerate for at least two hours, or ideally, overnight (if you can resist that long). -Before serving, top it with chocolate flakes, or get creative and add your favourite toppings! Vegan BANG BANG CAULIFLOWER By @daria_cooks_vegan Ingredients •1 cauliflower, cut into florets •1 cup / 240 ml plant-based milk (I used full-fat oat milk) •2 tablespoons lemon juice •3/4 cup / 105 g all-purpose flour •1/2 cup / 80 g rice flour (sub in cornstarch) •1 teaspoon paprika powder •1 teaspoon salt •dash of black pepper •1 tablespoon hot sauce •1 cup / 100 g panko crumbs (or more as needed) •vegetable oil for frying 🌱For the sauce: •1/3 cup / 80 g vegan mayonnaise •2 tablespoons chili sauce •2 teaspoon hot sauce Instructions 1️⃣In a bowl whisk together vegan mayonnaise, chili sauce and hot sauce. Put into fridge. 2️⃣In a bowl combine flour, rice flour, oat milk, lemon juice, hot sauce, paprika, salt and pepper. Mix until smooth. Dip cauliflower florets into the batter, then cover them with panko crumbs. 3️⃣In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Transfer the battered cauliflowers to the pan and fry them until golden brown. Cook in batches. 4️⃣Drain fried cauliflowers on kitchen towels. Serve immediately with mayonnaise sauce. This will make it easier for the dates to blend! 🎉Strain and reserve the water then add your dates into a blender with the vanilla and a pinch of salt. 💦 Add water as needed to thin until you’re able to blend. I used a little over a cup of the reserved water. Store and enjoy!!! 🤗 2️⃣ CALLING ALL CHOCOLATE LOVERS!!! 🍫😍 ✨INGREDIENTS✨ 5 cups Hazelnuts 1/4-1/3 cup powdered coconut sugar depending on how sweet you like it - I used 1/3 cup 1/2 cup cacao powder 2 tbsp olive oil 1 tsp vanilla 1/4 tsp salt 🚨IMPORTANT🚨 do not use any water based ingredient such as plant milk, maple syrup or another liquid sweetener. It will cause the nut butter to seize up and will not be smooth and creamy. Even vanilla should be kept to a minimum - just 1 tsp tops! 🔥 First start by roasting your Hazelnuts until golden. 425f for about 10 minutes should do the trick! Watch carefully at the end so they don’t burn!You can also buy them pre roasted! 👌If your Hazelnuts have skins on them rub them off by using a kitchen towel before adding them to your blender or high speed food processor. 😋 Blend until completely smooth - it should take less than 5 minutes. Hazelnuts are very easy to turn into nut butter! 🙌 To make your own powdered coconut sugar simply blend up your coconut sugar until it becomes a fine powder. 😍Once the hazelnut butter is super smooth add in the rest of your ingredients and blend again until fully incorporated. Serve it up and enjoooooy! I know you’ll be as obsessed with this as we are 🤤 😍

Pumpkin Samosas (Uzbek Samsa) By @naturallyzuzu Makes 14-15 samosas Homemade Dough 2 cups all purpose flour 1 teaspoon Salt 2-3 tablespoons avocado oil 1/2 cup hot Water 3 tbps of non dairy yogurt one handful Sesame Seeds Filling 1 medium size Butternut Squash (about 2 cups) 1 large red onion 5-6 fresh curry leaves (optional) 1 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Cumin 2 tsp of coconut or date sugar 3 tablespoons Avocado Oil Method: Preheat oven to 380 degrees F. In a stand mixer, combine flour, hot water, non dairy yogurt, and salt and kneed dough for 5 minutes until dough is smooth. cover and rest for 30 minutes. Meanwhile, mince onion and pumpkin. I used my food processor to mince all the filling ingredients coarsely. Mix with salt, pepper, cumin, sugar and oil. Divide the dough into 12-15 pieces. Make a ball, dust the surface lightly with flour and roll out each dough ball into 4-5 inch diameter. Repeat the process with each dough pieces. They don’t have to be perfectly round. Fill each dough with. 2 tbsp of pumpkin mixture and fold it in triangle. Watch my highlights for step step instructions. Fill all dough wrappers with the pumpkin filling. Line cookie trays with some parchment paper. Place the samosas with folder side down on the cookie tray. Ragazzi io vi giuro che mi sto sognando la colazione di stamattina: quel maritozzo era un qualcosa di veramente eccezionale🤤 Ma andiamo con ordine: eravamo io, mia mamma e mia sorella e abbiamo deciso di provare la pasticceria 100% vegetale @nepa.milano (io in realtà ci ero già stata per il mio compleanno, ma per come me la sono goduta stamattina posso dire di aver alzato ancora di più l’opinione che già avevo su questa) Mia mamma ha preso: - un cappuccino con Alpro non é latte @alpro - un cinnamom roll (molto buono) Mia sorella ha preso: - un cappuccino d’orzo con Alpro non é latte - un pain au chocolat (che ho trovato delizioso, uno dei migliori mai mangiati) E infine io: - un golden milk con latte d’avena - un maritozzo al pistacchio (che aaaaa quanto era buonooo) Conclusione? Made our own hash browns today and they were so simple to make. 1️⃣ or 2️⃣? Which  #recipe would you try?👇 By @Micadeli_ 1️⃣ The BEST cauliflower nuggets I’ve ever made. And I’ve made a few 🙊🌶These cauliflower nuggets are coated in crispy cornflakes and homemade spicy buffalo sauce. 1 cauliflower, 400g. 1 dl. flour 1,5 dl. oat milk (or other plant milk) 2 teaspoons of paprika 100g. cornflakes (not sweetened) 
Chop the cauliflower into bouquets. In a bowl mix flour, milk and paprika. Mash the cornflakes into small pieces in a blender. Dip the cauliflower bouquets in the flour mix + cornflakes afterwards until we’ll coated. Place on a baking tray and bake for 20-25 min. at 200ºC. Buffalo sauce: 
3/4 dl. plant butter, melted 1/2 dl. hot sauce (hot chili sauce or tabasco) 1 teaspoon of apple cider vinegar 1 pinch of garlic/onion powder Mix all the sauce ingredients together and set a side until the cauliflowers are done. Pour on top of the cauliflower or use for dipping. Serve while crispy. 2️⃣ tomato & garlic toast 🍅🧄 toasted on the pan with olive oil until super crunchy, covered with garlic, and then I spread with cream cheese, add the tomatoes, cress, salt, pepper, chilli flakes and lemon juice. my latest go to breakfast or lunch (also very good with avocado on top) 🥰 ps, I use violife cream cheese for this one + basil leaves on top, but parsley or spinach works great too! . .

Sunday breakfast with coffee and Whole Foods vegan croissants. I looked at their vegan chk’n salad and it was $11 for a tiny container do I made my own. This is vegan chk’n patties cooked and cut into tiny pieces,lots of celery and mayo. Typically I add onion or slivered almonds. It’s so easy. Yum.

🌿Gnocchi in a creamy green sauce🌿 By @beferox Recipe: Creamy Green Sauce🌿 Serves 2 . Ingredients: •2 handful basil leaves •1 1/2 handful parsley •4 tbsp. (mixed) nuts or seeds e.g. pine nuts, sesame seeds, pumpkin seeds, flaxseeds etc. •1 clove of garlic, peeled •2 tbsp. olive oil •1/3 cup water •250ml soy / oat cream (e.g. soy cuisine from Alpro) •1/2 cup oat milk •1 tbsp. lemon juice •1/2 tbsp. dried oregano •1/2 tbsp. dried basil •Salt and pepper . Toffee Apple Porridge By @helens_vegan_kitchen Serves 2 �For the porridge: 100g porridge oats 2 tbsp ground flax seeds 700ml non dairy milk For the apple topping: 2 large apples, cored, peeled and sliced 2 tsp coconut oil 2 tbsp maple syrup Sprinkle of oatmeal spice Method 1️⃣ Put all the porridge ingredients in a pan and simmer for 5-6 minutes until cooked (add a bit more milk if it thickens too much) 2️⃣ For the apple topping, heat up the coconut oil in a frying pan, gently fry the apple for a couple of minutes until slightly soft and charred. Vegan Roasted Tomato Pizza By @foodpassionical Prep time: 30 minutes Cook time: 20 minutes Rising time: 1 hour Preheat oven 180c (356f) (Makes 2 8’inch pizza) Pizza dough: 400g (2 1/2 cups) All purpose flour 1 tsp instant yeast 2 tbsp sugar 1/2 tsp salt 2 tbsp olive oil or vegetable oil 230-240ml warm water (approximately) Roasted tomato: 600g cherry tomatoes 2 tsp garlic powder 1/2 tsp chilli flakes 1 tbsp sugar (optional) 1/2 tsp salt 1 tsp black pepper 2 tbsp olive oil For toppings: Vegan ricotta cheese Fresh basil Chilli flakes Method: 1.) Add the dough ingredients into the the mixing bowl, use spatula to mix the ingredients till no more dry flour. Cover and rest the dough for 20 minutes. 2.) After 20 minutes continue kneading the dough till soft, cover and rest the dough for 1 hour. 3.) On a heat proof pan, add the cherry tomatoes and the rest of the ingredients. Bake the tomatoes for 20 minutes and set aside. 4.) Prepare the pizza pan by sprinkling some semolina on the pan to keeps dough from sticking and set aside. 5.) After 1 hour, knead again the dough for about 1-2 minutes, divide the dough into 2. (Work with one dough at a time, always cover the dough to prevent the dough from drying). Place the dough on a clean surface and flatten the dough about 8 inch. Transfer the dough on the prepared pizza pan. Cover the dough with tablecloth for 10 minutes. 6.) Spread the tomato purée on top of the pizza dough, and fill with the roasted tomatoes. Bake the pizza for 200c for 20-25 minutes. Remove from the oven and top with vegan ricotta cheese and bake for 2-3 minutes until the cheese in browned. Smashed “eggy” 🌱 tofu on toast is 🥇 Tofu planks go straight into the pan (no pressing or soaking needed) and doused with seasoning mix (mixed with a touch of water & tiny squirt of dijon to make a paste) after each flip. I also add a little TJs vegan parmesan on top. Sprinkle with an extra kala namak (Indian black salt) and black pepper and smash a bit. Spinach, tomatoes, etc are great additions.
