📆Maggio 2024, chi più ne ha più ne gusti 😋 A maggio Milano e i suoi dintorni ci propongono una tale miriadi di eventi enogastronomici da rendere impossibile viverli tutti. 😅 Lo scorso fine settimana, ad esempio, ha visto manifestazioni diffuse fra la Brianza, l’Alto Piemonte, il Mantovano e la città di Milano, cosicché è stato necessario fare delle scelte. 🤔 Non è stato semplice ma, alla fine, abbiamo optato per un evento mai frequentato in passato - FIERA NAZIONALE MONZA IN VINO - e uno consolidato, che ci vede presenti ogni anno - TASTE ALTO PIEMONTE. 🍷 In quel della Brianza, si è tenuto un evento spalmato su due giorni, 11 e 12 maggio, presso l’U-Power Stadium di Monza, dove il visitatore ha potuto degustare, oltre ad acquistare, eccellenze vinicole da tutta Italia, etichette nazionali ed internazionali, dai vini tradizionali ai vini biologici, a quelli biodinamici nonché distillati e specialità gastronomiche. È stato anche possibile partecipare a delle masterclass tenute dall’Associazione Assosommelier. 🍷 Al Castello di Novara, invece, dal 11 al 13 maggio, è stato possibile riscoprire, con il Consorzio Tutela Nebbioli Alto Piemonte, le eccellenze di questo territorio, fra le Docg Gattinara e Ghemme, e le DOC Boca, Bramaterra, Colline Novaresi, Coste della Sesia, Fara, Lessona, Sizzano e Valli Ossolane. Fra le varie espressioni del Nebbiolo, molti rosati e diversi spumanti, sia metodo Martinotti, sia metodo classico. in purezza, si trovavano la Vespolina, L’Uva Rara e qualche Barbera. Presente anche, sotto la denominazione Colli Novaresi, l’immancabile bianco a base di un vitigno che la Doc di Caluso impedisce di nominare, ma che in terre novaresi si esprime con molto carattere e tipicità, data dai vari tipi di suolo presenti sul territorio di quella porzione di Piemonte, che spaziano dalla sabbia al basalto all’argilla al calcare. 🍷 Inoltre, diverse Masterclass hanno permesso di approfondire l’enografia del territorio. 🍷

レモン香る、パセリと胡瓜のクスクスサラダ。 パセリが大量に畑に育っていますが、そんな中パセリをたくさんいただきました。パセリは大好きなので嬉しい限りですが、腐らせてしまうのは忍びないというものです。何か手はないかと記憶中枢に仕舞い込んでいるアーカイブを物色しつつ、パセリをフリットや天ぷらにするという手やパセリを使ったソースなど浮かびますが、どれも油分を多く摂取してしまうので、躊躇してしまいました。ふと思いついたのが、よくパセリを入れているクスクスのサラダのメインにしてしまってはどうかということです。 普段使っている量を遥かに超える、大量のパセリを細かく刻みます。クスクスに塩をしてお湯で戻しておき、その間にセミドライレモンみじん切り、胡瓜の細かい賽の目切り、紫玉葱のアグロドルチェの細切りをしておきます。クスクスに、オリーブオイル、レモン搾り汁、パセリ、セミドライレモン、胡瓜、アグロドルチェを加えて混ぜ合わせ、最後に塩で味を調整したら完成です。 合わせたのは、滋賀県のワイナリー、ヒトミワイナリーのh3 Caribou （カリブー）2022 Lot1 白です。山形県産デラウェアを100%使用したスパークリングワインです。濁りのあるイエロー、注いだ側から華やかな白桃の香りが広がります。飲んでみると、まだ残糖からか甘味もあってチャーミング。ただ、芯のある酸味も保持しているので、料理を引き出す明確なコンポーネントがあります。素直に美味しいと感じられる、軽やかなスタイルです。 パセリ大量クスクスサラダ、基本的には成功です。パセリたくさんでも、パセリ特有の食感や香りの独特さが緩和され、味わいのバランスの中に含まれました。むしろ、爽やかさの強いサラダとなり、クスクスがうまく中和の役割をしています。間でドライレモンの苦味が提供されつつ、胡瓜の食感、アグロドルチェは甘味と旨味を加えています。ワインを楽しむおつまみのような雰囲気になりますが、前菜として良い雰囲気の味わいです。ワインを合わせた時には、やはりパセリとレモンという存在がうまく相互的協調を作りつつ、ワイン側の個性であるミネラル感が強調されて、更に美味しく感じます。 #ワイン #ワインとともに #ワイン好きな人と繋がりたい #ワインと料理 #ワインペアリング #ワインのある暮らし #ワインのある生活 #ワインのある日常 #ワインスタグラム #ワインを楽しむ #ワインを日常に #ワイン好き #自然派ワイン好きな人と繋がりたい #イタリアワイン好きな人と繋がりたい #料理好きな人と繋がりたい #wine #winelover #winetime #winetasting #winedrinkers #winedays #winedaily #winereviewer #winerating #winelife #lifewithwine #igerswine #italianwine #organicstyle #naturewine

馬肉のタルタル。 美味しい馬刺しがまだ冷凍庫にあります。この馬刺しを薄くスライスしてカルパッチョにした時に、赤ワインとの相性に驚いたので、別のアプローチで馬刺しを食べてみようと思いました。馬肉のタルタルを通常通り作るのも美味しいのですが、ニンニクを効かせすぎたり、コチュジャンが入るとどうしてもビールや焼酎のアテに近くなってくるので、優しいワインに合わせるためにアレンジしました。 馬刺しを薄切りにして柵にし、細かい賽の目切りにします。それにバルサミコリダクション、オリーブオイル、塩をして混ぜ合わせ、セルクルで丸く成形しておきます。その上に紫玉葱のアグロドルチェ（シチリア伝統の玉葱の甘酢煮込み）を乗せ、パルミジャーノ・レッジャーノを削りかけ、真ん中に純胡椒を乗せ、オリーブオイルをかけたら完成です。 合わせたのは、北海道ワイン株式会社の北前ヤマソーヴィニヨン2019です。石川県鳳珠郡穴水町産のヤマソーヴィニヨンを100％使用しています。被災地支援対象のワインとなります。また、ヤマソーヴィニヨンは、固有のヤマブドウと国際品種のカベルネ・ソーヴィニヨンが交配された日本固有品種となります。紫がかったルビーレッドの色調で、ブルーベリー、ブラックチェリーの果実香、仄かに野生的な血液を思わせる香りが、豊富なタンニンまで想像させます。飲んでみると、その香りをいい意味で裏切り、アタックは軽やか、穏やかなタンニン、伸びのある酸味が美しさを演出しています。野生的な膨らみはヤマブドウのそれでありつつ、カベルネの特徴からのシリアスな雰囲気もあり、余韻にかけて可愛らしい甘さを伴って終わっていくと親しみが感じられます。 まずは、馬肉のタルタル、イタリア風に自分なりのアレンジをしてみましたが、とてつもなく美味しくなりました。馬肉自体の持つ良質かつ脂肪の少ない優しい旨味、バルサミコの果実感が絡み、アグロドルチェで甘味や旨味を別角度から提供しつつ、純胡椒のインパクトで味全体を引き締めつつ、余韻の爽やかさを作っています。そこに、ワインを合わせると、果実感と野生的な雰囲気で一致しつつ、タイトな全体像と純胡椒の持つ清涼感が一致するので、お互いが全く邪魔をしないでおきながら、引き立て合う組み合わせとなりました。気に入ったので、また作ることになりそうです。 #ワイン #ワインとともに #ワイン好きな人と繋がりたい #ワインと料理 #ワインペアリング #ワインのある暮らし #ワインのある生活 #ワインのある日常 #ワインスタグラム #ワインを楽しむ #ワインを日常に #ワイン好き #自然派ワイン好きな人と繋がりたい #イタリアワイン好きな人と繋がりたい #料理好きな人と繋がりたい #wine #winelover #winetime #winetasting #winedrinkers #winedays #winedaily #winereviewer #winerating #winelife #lifewithwine #igerswine #italianwine #organicstyle #naturewine

In the 70s Wayfarer off-the-grid organic farm supplied Alice Waters' Chez Panisse. The farm was up for sale in '98. Helen Turley quickly took notice and told her good friend Jayson Pahlmeyer to buy it. Her own vineyard, Marcassin, was next door. (Cult wine between $300-800, if you can even get any) In '02, David Abreu would plant Pinot and Chard in what is still the only Sonoma vineyard he's ever done. (He's usually planting vineyards for Screaming Eagle, Harlan, stuff like that) In 2005 Jayson Pahlmeyer would blend Wayfarer with RRV fruit to bottle Pahlmeyer Pinots. They were pretty massive during that time. The Pahlmeyer name/winery then sold in '19. From 2012 to 2018. bad-ass winemaker Bibiana Gonzales Rave-Pisoni (yes, she married a Pisoni) would refine them into the gorgeous Wayfarer wines they are today. 母の日のディナー、後半、能登産ブドウを使用した赤ワインと合わせて。 北海道ワイン株式会社の北前ヤマソーヴィニヨン2019です。石川県鳳珠郡穴水町産のヤマソーヴィニヨンを100％使用しています。被災地支援対象のワインとなります。また、ヤマソーヴィニヨンは、固有のヤマブドウと国際品種のカベルネ・ソーヴィニヨンが交配された日本固有品種となります。紫がかったルビーレッドの色調で、ブルーベリー、ブラックチェリーの果実香、仄かに野生的な血液を思わせる香りが、豊富なタンニンまで想像させます。飲んでみると、その香りをいい意味で裏切り、アタックは軽やか、穏やかなタンニン、伸びのある酸味が美しさを演出しています。野生的な膨らみはヤマブドウのそれでありつつ、カベルネの特徴からのシリアスな雰囲気もあり、余韻にかけて可愛らしい甘さを伴って終わっていくと親しみが感じられます。 後半の一皿目は、馬肉のカルパッチョ。南小国町の馬刺しの名店、岩永本店の馬刺しの冷凍を半解凍したものを薄くスライスし、畑で育ったルッコラと共に皿に並べ、パルミジャーノ・レッジャーノを削りかけ、バルサミコリダクションをかけたら完成です。敢えてスパイスをしていないのは、ルッコラがその役割を少し担うこと、あとは、ワイン側の要素に合わせるためです。食べてみると、まずは馬刺しの質が良すぎます。馬刺し単体で上品な旨味が広がります。ワインと合わせていくと、バルサミックなニュアンスがリンクして、ルッコラがスパイスと青味で協調し、野生的な血液でも一致しています。あまりにも美味しいペアリングで驚きました。 二皿目は、伊勢海老のトマトタリアテッレです。伊勢海老を一匹丸ごと頭の味噌まで使ったソースです。伊勢海老は、いつもの鮮魚店で大将が、「刺身にもできないし、折れてるところもあるし使いもんにならんから、500円で良いよ」と言って譲ってもらったものです。オリーブオイルにニンニクの香りを纏わせてから、ニンニクを取り出してぶつ切りにした伊勢海老を焼き付けます。しっかりと焼いてから、白ワインを加えて、香りがついたら、身は取り出して、殻と味噌をミキサーで撹拌し、濾して海老の旨味だけを抽出してから、フライパンでトマトペースと少しのバターを加えて、ほんのりと野菜のブロードとパスタ茹で汁で伸ばしつつソースにします。茹でたタリアテッレを絡めて、皿に盛り、イタリアンパセリを振りかけたら完成です。まずは伊勢海老タリアテッレ、もう少し目の詰まった濾し器を使うと更に良かったと思いますが、濃厚な海老の旨味をそのまま楽しめるパスタとなりました。ワインと合わせると、海老の旨味を引き出してくれますし、果実感が足されて美味しく感じつつ、トマトと連動します。やはり伊勢海老の持つ強い旨味は、ワインのボリュームにも全く負けないので、生クリームなどで調整をしなくても完成しています。あとは、触覚的なざらつきが課題ですので、目の詰まった濾し器を買おうと思います（布巾で濾すという手もありますが….）。 母の日、ワイン二種に対して、二品ずつの料理をしましたが、最終的には、入り乱れての提供となったことは、家庭での食卓の難しいところです。ですが、美味しいと言って食べてくれたのでそれで満足です。 #ワイン #ワインとともに #ワイン好きな人と繋がりたい #ワインと料理 #ワインペアリング #ワインのある暮らし #ワインのある生活 #ワインのある日常 #ワインスタグラム #ワインを楽しむ #ワインを日常に #ワイン好き #自然派ワイン好きな人と繋がりたい #イタリアワイン好きな人と繋がりたい #料理好きな人と繋がりたい #wine #winelover #winetime #winetasting #winedrinkers #winedays #winedaily #winereviewer #winerating #winelife #lifewithwine #igerswine #italianwine #organicstyle #naturewine
