Today I threw away the paper copy of my Travel Bucket List. In 2020, when everything was locked down, I had to cancel my trip to Italy. I realized then how devastating it was to feel like something I just assumed I would get to do wasn’t possible. In lockdown I had a lot of time to think about the assumptions I had, a long list of “of course I’ll do that someday” things, so I wrote them out. Seeing the details on paper, such a long list, made me realize I was losing time by just assuming I would and not actually making real plans to reach my goals. This list is now electronic (an Excel, obviously) and listed in order of difficulty. I knew saving the hikes for later was the wrong idea – prioritizing based on difficulty and importance to me (which are often aligned, but not always) has meant that since travel bans were lifted I’ve crossed 4 experiences a year off my list – 4 of which were ‘really’ meaningful experiences like Kili and Everest, with 3 more currently in the works. Having the “map” helps me budget my leave from work (balancing shorter and much longer experiences throughout the year and by year) and gives me a timeline for making the plans necessary to go. My Excel has trips mapped out for the many years to come and knowing they’re coming means I always have something to look forward to. I'm feeling a bit like the very hungry caterpillar today 🍎🍇🥪🧁🍭🍉🌱🐛. I skipped lunch because of an appointment and by the time I got home at almost 4(!!!) I felt RAVENOUS. I made a sandwich which was healthy really, but processed meat makes me feel bad. So mistake #1. Then I ended up snacking on top of that which is going to mess up my dinner 😂 - my mistake #2. I'm all thrown off today. And sadly I won't be creating my cocoon now and magically transforming, although I do feel like a butterfly most days 😂 I didn't plan for being out even though I knew I would be. Planning can really help keep you on track especially in situations when you're not home. I should have made myself something to eat and a little snack and brought it in a small cooler like I have in the past. Sometimes success takes a little planning. Otherwise we grab what's fast and convenient which might not be what fits your goals. So…just because enchilada sauce is used, I don’t think that makes it enchiladas 😂 it called for the burrito size tortillas and filled with rice, beans, and cheese. I would call this more a wet burrito. Super excited about the pineapple!
Tonight’s kitchen therapy- BBQ chicken roll-ups with veggies This one didn’t really turn out like it was supposed to. I couldn’t get the twists to work so we kept it calzone style and cut it into sticks when it was done. Dough got a bit overcooked. Also did steamed veggies for a side instead of the originally planned side - hubby doesn’t care for coleslaw.
Tonight’s kitchen therapy - Pan roasted pork chops with mushroom gravy, garlic butter carrots and mashed potatoes I’ve really been getting into the routine of making dinner as soon as I get home from work and I love the feeling. The trick is picking meals that I can get done in an hour or less so we aren’t eating dinner too late for homework and showers.
This is how I plan my week: every weekend, usually on Saturday, I sit down and review the week ahead in Street Parking programming against my own personal routine of 3 on / 1 off & 2 on / 1 off and any other goals I may have. For example - at this point in my year - I know that I want to do the Vault on Saturdays and I know that I want to do the Open workouts. I also still have some travel coming up so I’ve shifted my weekly routine to Mon/Fri recovery days. So I look at the week ahead with this in mind and I favorite the workouts I’m going to do in reverse order so that they come up in order on my favorite list. Then, each morning I just pull up my favorites as if it’s my weekly plan, select the next workout, do it, log it and unfavorite it. Of course, I can’t favorite the Vault or the Open workouts until they drop so lately I’ve been just favoriting the first 3 or 4 days of a week while keeping my plan written down on my white board. When I have a solid plan and routine that works, I can just operate on autopilot, making it super easy to just wake up and go train. Occasionally, I do need to change things up a bit because life happens but having my routine set is like a home base I can easily return to. #streetparkingroostercrew #failuretoplanisplanningtofail
Kitchen therapy! Penne pasta with caramelized onions and spinach and a side of toasted bread with homemade herb butter Hands down one of the best pasta dishes I’ve made. This is going in the favorites list. This one takes a bit of patience to cook down the onions, but it’s completely worth it!

When your coach/instructor is telling you to look where you want to go, this is what we mean. Turn that head and look through the corner. You should never just be staring down the front of the bike. The more you can look ahead, the more you can plan for a safe and controlled ride. This applies to street riding just as much as track. Everything will go smoother and seem more calm if you're looking ahead as opposed to just 10' feet in front. This allows you to access situations better, so you'll have less "Oh Sh!t" moments. You won't always have to slam on the brakes or swerve when a car pulls out or changes lanes because you were paying more attention and reading traffic to be ready. Also if you go into a curve a bit too fast, look through it towards the exit and your bike will want to follow. The best way to stay safe on a bike is to ride smart and not rely on others to see or care for you. The time to make a plan is before you need it. Decide the night before or in the morning what you are going to eat for the whole day.
