In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined. Add the melted butter to a large bowl, then whisk in the sugar followed by the egg. Lightly grease a mini muffin tin. Roll out the pie crusts on a lightly floured surface. Use a round cookie cutter or drinking glass to cut out circles of dough that are slightly larger than the openings of the mini muffin tin. Press the dough circles into the mini muffin tin, shaping them to form mini pie crusts.
