Leek and Gorgonzola tatin is one of those pie that just brings you comfort and with the colder months hitting us itโ€™s much needed ! Here is the recipe: 1. cut the white partof your leeks(donโ€™t throw the rest you can use it in a broth ! ) into proportionate rings 2. Brown some butter and add your leeks all around your pan and cook them just like you would for onions until they start to caramelize. 3. Get a pie dough from your bakery of you can also make on from scratch 4. Put your leek fist in you oven safe dish add a generous amount of Gorgonzola and add the dough last, make sure it seals the leek well so it does leak while it bakes goes to the oven for 25 minutes or until the surface is brown 5. My cheesy broccoli bake is creamy, comforting, and contains no cheese! Instead, itโ€™s made with a vegan-friendly cheese-like sauce thatโ€™s gooey, tangy, and just as delicious as the real thing. Recipe is below and on page 157 of my latest cookbook, Simple Feel Good Food! Ingredients 1 large sweet potato, peeled and diced (2 heaping cups) 1 cup water 1โ„4 cup extra-virgin olive oil, plus more for drizzling 1 garlic clove 2 tablespoons nutritional yeast 2 tablespoons tomato paste 1 1โ„2 teaspoons sea salt, plus more for sprinkling 1โ„2 teaspoon onion powder 1โ„8 teaspoon smoked paprika 1 pound broccoli, small florets plus stems, finely chopped 3โ„4 cup orzo pastaโ€จ1โ„4 cup panko bread crumbs Freshly ground black pepper Instructions Preheat the broiler and oil an 8ร—8-inch baking dish. Place the sweet potato in a large saucepan and cover with cold water by about 1 inch. Add a few pinches of salt. Bring to a boil, then reduce the heat and simmer, uncovered, for 8 to 12 minutes, or until fork-tender. Drain and transfer the sweet potatoes to a high-speed blender. Add the water, olive oil, garlic, nutritional yeast, tomato paste, salt, onion powder, smoked paprika, and several grinds of pepper. Blend until smooth. Fill the saucepan with more water and bring to a boil. Add the broccoli and boil, uncovered, for 2 minutes. Scoop out the broccoli and set aside.
