Also, sharing this as my entry to the contest #holiwithfoodybuddy hosted by @cooking_day_diaries and @foodybuddyapp . ================================ RECIPE : Ingredients (1 Cup = 240 ml) ▪️1 cup or 240 gms maida All purpose flour ▪️60 ml Refine oil ▪️1 tsp salt ▪️1/2 tsp ajwain carom seeds ▪️A pinch baking soda ▪️Water for kneading 1 part of dough ▪️Beetroot puree for red dough ▪️Spinach puree for green dough ▪️2 Cups Refine oil For frying Instructions ▪️In a bowl mix the flour,salt, carrom seeds and salt and mix it properly. ▪️Add the oil to the flour mix and incorporate it nicely with your fingertips till it resembles breadcrumbs. ▪️Divide the dough into 3 equal portions and knead one with only warm water, second with beetroot puree, third with spinach puree into tight, tough, smooth dough. Keep all the 3 portions covered for 10-15 mins. ▪️After 10 mins roll out all 3 doughs into 8" roundels, keep all the 3 roundels on top of each other ,alternately brushing each roundels with water before positioning it on top of the other according to the colors you want in your swirl and roll it out again together to a 10 inch roundel. ▪️Roll carefully into a cigar shaped roll brushing a little water at the end so that it sticks properly. ▪️Finally cut the roll into thin slices . No bake simple candy barks that kids love INGREDIENTS •1 pound Chocolate chopped into pieces •1 cup Pretzel twists 1 ½ cups Trail Mix •4 ounces White Chocolate, for melting INSTRUCTIONS 0.Prepare by lining a large baking sheet with wax paper or parchment paper. Measure out pretzels and Trail Mix and set them aside so that they are ready to use. 0.Place chocolate pieces into a large microwave safe bowl. Microwave on 50% power for 3-4 minutes, pausing the microwave to stir chocolate every 30 seconds. (The pausing and stirring will ensure that chocolate is melted evenly and does not get overcooked or scorched.) 0.Once the chocolate is completely smooth and melted, pour the hot chocolate onto the prepared baking sheet and spread evenly into a large rectangle with a knife. 0.Working quickly while the chocolate is still hot, stick the pretzels and sprinkle Trail Mix pieces onto the top of the chocolate (make sure everything is touching the chocolate). 0.Place White Chocolate in a small microwave safe bowl, and microwave for about 2 minutes or until completely smooth and melted, stirring every 30 seconds. ☀️This pasta salad included summery fresh vegetables: @intergrowgreenhouses tomatoes, corn, cukes and arugula plus some kalamata olives. For the dressing I used @dressitupdressing champagne vinaigrette (which you can see from the bottle in the background is running low due it’s versatility) and a squeeze of fresh lemon🍋! . . ☀️Such a great tasting natural product to have on hand to whip up last minute salads and marinades! “Chakka Vevichathu / Puzhuku” (Cooked Jackfruit) is my staple diet while in Kerala. Chakka Puzhukku is a mushy preparation with overcooked unripe chakka mixed with ground coconut spiced mixtures. The whole fruit may weigh upto 30 kgs. Things don’t get easier once you cut the fruit open. A milky, hard-to-remove sap is released with each cut, you need gloved hands or hands coated with oil, long sharp knife with food-safe oil, to protect against that stubborn latex sap. I am done with pitting and now chopped 2.5Kgs. Tired hands, blue veins, veins popping out, but will not give up until I am completely done with it. Beans paruppu usili or Beans lentil fry.. This is another south indian traditional side dish. Paruppu usili with mor kuzhambu ( spicy buttermilk sauce) or Vathal kuzhambu ( A spicy hot traditional sauce) forms a delicious combo ...this is more a process oriented dish #itsprocessoverproduct. Lentil mix with red chillies is soaked in water, ground with salt and asafetida, then steamed. This steamed mix is roasted with cooked beans to make this delicious dish. I usually run the steamed mix once through the mixer to get the wonderful texture of the usili. I like it when the lentils are dry, powdery and not clumpy 😊. But for Sagarika would not have tried Zucchini. Did not use water at all . Just added all the ingredients and mixed with wheat flour, spices and prepared the dough at night and kept refrigerated so that could prepare the #lunchbox for him ready by 5.30 am. ( later Gram). Am sure you will be interested to see the out come. PLEASE FLIP THE ALBUM. The Parathas with Pickle ( Avakkai), Cucumber and Curd got packed and sent with son. Balance Parathas were used up for lunch, with Capsicum ( Bellpeppers) and Mushroom Bhaji. ( recipe later) Notice the Badam halwa on my lunch plate. That’s for the 41st wedding Anniversary. We never even remembered the date. Since we don’t celebrate. One more year passed.
