Our junior chefs have been whipping up Spinach Basil Pesto With Whole Grain Pasta. Loads of fresh ingredients, (herbs like basil are especially dense in nutrients), quick, easy, affordable, familiar, and as always, and most importantly, very, very tasty! Thanks to our instructor Tracey Foster for supervising the kitchen magic. Here’s the recipe. Enjoy! ❤️💚 Pesto Sauce: 3 cups fresh spinach leaves, whole or coarsely chopped, lightly packed 1 ½ cups fresh basil leaves, whole, lightly packed 1 clove garlic, cut in half or fourths 1 tablespoon fresh lemon juice ⅓ cup parmesan cheese, shredded 1 teaspoon kosher salt ¼ teaspoon black ground pepper ⅓ cup olive oil Pasta: 8 ounces whole grain pasta - such as penne or rotini 2 teaspoon kosher salt Pesto Sauce: Shred the parmesan cheese. Combine spinach leaves, basil leaves, garlic, lemon juice, parmesan cheese, salt, and pepper in a food processor or blender. Pulse to combine roughly. Slowly drizzle in olive oil while the food processor or blender is running. Add more olive oil or basil (or spinach) as needed to achieve desired consistency. Be sure you can taste the basil! If the pesto is too thick, add one tablespoon of water. Set aside. Make the Pasta: Add the salt to a large pot of water and bring to a rolling boil. Add the pasta to the water, bring back to a boil and cook until al dente. Drain the pasta then return to the pot. Add the pesto and mix well with a large spoon. Taste and adjust seasoning with salt and pepper if needed. Our junior chefs had fun preparing and eating this delicious, nutritious, no-cook quick and easy caprese avocado toast, with mozzarella, accompanied with water flavored with cucumber and mint. Simple water can be a gourmet experience, simply by adding combos of your favorite fruits and herbs to a jug of water and letting them sit in the fridge or even outside in the sun for a few hours to intensify the flavors. Waaaaaaaaay better than sugary soda and fresher and healthier than flavored seltzer too. Avocado toast is popular these days for good reason. Here’s our kid-approved version. Enjoy! ❤️💚 Ingredients 2 ripe avocados 2 teaspoons fresh lemon juice Kosher salt and black pepper 4 slices whole grain bread, toasted 4 oz. fresh mozzarella cheese, sliced and cut into pieces to fit the toast 1 cup cherry tomatoes, halved ¼ cup fresh basil leaves, roughly chopped Balsamic glaze for drizzling Directions: Peel and pit avocados and put in a bowl. Add the lemon juice and season with the salt and pepper. Mash with a fork, leaving the texture somewhat chunky. (Optional rub a garlic clove over the toast). Spread the avocado mixture on each piece of toast. Layer on the mozzarella, tomatoes and basil. Season with more salt and pepper if desired and finish with a drizzle of balsamic glaze. 👟 Nice and easy jog at ~25 hours fasted. I’ll break fast at about 40 hours. In an alternate day fasting pattern, the goal is never an arbitrary number but simply a fast that spans two sleeps. I started my fast Sunday at 6:30pm after my OMAD and will break fast today at about 10:30am. There are a ton of health benefits within a longer fast. This might be a lot to read, but I feel like people need to understand the basics of insulin resistance and how to get checked in order to prevent becoming type 2 diabetics. If you have insulin resistance and you will not start doing something about it now, there is an extremely high chance of you becoming diabetic in the next 10-15 years. Your doctor might not be willing to test your fasting insulin as it is not the standard care. However, simply checking blood sugar as a screening test for insulin resistance will miss most cases of this disease. Here is a picture that shows what it takes to get about 100 g of protein per day. Personally, I am a vegetarian, so my typical protein choices are: Beans and Lentils Low-fat cottage cheese with pineapple Greek yogurt with some fruit Eggs Protein shake/Smoothie Protein bar Soy I encourage my women patients to aim for 120 g ( if generalizing ) of protein in a day to help: 1.
