It’s ok to take a step back to reset, refocus & restart but giving up is never an option! This fitness journey definitely has its ups and downs…but when it’s down, you must remember WHY you started your journey. Always keep your why & your goals in front of you at all times. I remember when I made an attempt to lose weight one time and I was able to lose 6lbs. That’s something to celebrate right? My mindset wasn’t where it needed to be because I didn’t even realize that I was making progress! I thought that 6lbs wasn’t enough. I wanted that rapid weight loss. I didn’t factor in how many inches I lost or anything and because of this, I gave up and went back to my old ways. I said all of that to say, don’t you dare give up! Got a few uncommon tips for you today that’ll help you save time and money… AND not let food go to waste! 🥬 1. Freeze your greens for smoothies: ✔️ Wash and dry your greens ✔️ Spread on a baking sheet and freezer for a couple of hours ✔️ Transfer to freezer bags (remove air from the bag) ✔️ Pop them in the freezer until it’s time for your smoothie! 🫒 2. Store herbs in olive oil: ✔️Wash them, chop them, put them in an ice cube tray, and cover them with oil ✔️ Freeze. After it’s frozen through, place “cubes” in a labelled freezer bag ✔️ Next time you need a flavour boost while you’re cooking, just drop in a cube! 🍚 3. Batch cook grains: ✔️As soon as you get home from grocery shopping, cook up a pot of quinoa, farro, or other healthy carb. ✔️ Store in the fridge for easy, quick additions to meals during the week. FOOD 🥘 PREPPING to be ready for a nutritious week! All kinds of veggies took turn in the crockpot. I currently don’t have lots of time to chop veggies, so I buy frozen veggies 🥦, mostly organic veggies as much as I can, and toss them in the crockpot with seasoning. They cook slowly while I work on something else and I keep transferring new ingredients in the pot as they cook. 💁‍♀️ I also save some frozen peppers 🫑 and spinach in the freezer which cook fast on the stove for my eggs in the morning 😁 . Anything I can do to prevent me from eating unhealthy foods is to have it all ready to go in the fridge. . Also…don’t know about you but I do digest cooked food a lot better, so precooking a ton of veggies 🥕 helps a lot. Sometimes I eat them cold, depending on what they are, they can make a delicious salad 🥗 . . Still need to cook my ground turkey 🤗, and I’ll be all set. This took an afternoon while I was home studying , working out , doing home chores and walking the dog. I feel like I’m living my dream life these days. The weather in Florida is idyllic at the moment and I’m spending 75% of my day outside with my plants. The seasons are transitioning down here from our winter annuals growing season to the summer tropical and perennial season. I’m doing a lot of seed saving at the moment, this one is from the cilantro plant. It is called Coriander in its dried, seed state and is commonly used in Mexican, Indian, and Asian cuisines. I’m currently having an internal debate about how much will be used for cooking and how much for planting 😂 Luckily I still have more to harvest. My plants transition from being food generators to being future food generators. Nature truly is abundant! I’m about two months in to my #JostArriba functional more than coffee beverage experiment and I’m convinced that my morning cup contributes to sustained energy throughout the day, deep and restful sleep, and clearer brain function. I think this is adding to my overall sense of deep satisfaction and contentment right now. I feel rested and refreshed and my brain is working better than it has in several years. Not a bad combination 😁 I used to be of the ilk that thought it was better to put others before myself. And then I spent several years dealing with adrenal exhaustion and lifestyle related health issues. Now I wake up grateful that I have learned to prioritize what makes me overflow so that I am able to give out of a sense of joy rather than a feeling of obligation. Saving seeds feels like an expression of my own fruitfulness and ability to share with those around me. Breakfast Berry Crumble✨ This super easy breakfast is great one to batch make to have over a few days, you can even have it as a snack! It’s packed with super nutritious ingredients and filling too. Ingredients: - Mixed berries (I used a frozen bag of mixed berries) - Chia Seeds - Flaxseeds - Pumpkin seeds - Mixed nuts (I used a bag of mixed nuts and also added extra walnuts as I LOVE them) - Organic oats - Organic peanut butter - Manuka honey (can use normal honey) - All purpose flour - Cinnamon How to make: - Preheat your oven to 180 degrees - Prepare the oat crumble topping. Mix the flour, oats, cinnamon, peanut butter and honey together. It‘s okay if there are large clumps together, or you can break it dow - Pour your frozen berries into a baking dish. Top with the seeds, and mix - Add your ’crumble’ on top of this and spread so its fairly even and place into the oven - Now chuck it into the oven and bake for about 45 minutes or until the ’crumble’ is golden and crispy. - Once baked, I like to have it with Alpro protein yogurt and enjoy! P.S.A. Not my most aesthetic food pics but we move… ☺️ . Easy Meatloaf Delight 🥩 Detailed Recipe & Step By Step Instruction Here 👇 📋 Ingredients: 🥩 1 1/2 pounds ground beef 🥚 1 egg 🍅 1 onion, chopped 🍞 1 cup milk 🥄 1 cup dried bread crumbs 🧄 salt and pepper to taste 🍅 2 tablespoons brown sugar 🥄 2 tablespoons prepared mustard 🥄 1/3 cup ketchup 📝Instructions: 1️⃣ Preheat oven to 350 degrees F (175 degrees C). 🌡️ 2️⃣ In a large bowl, combine the beef, egg, onion, milk, and bread crumbs. Happy weekend! Who is thinking they are going to blow their diet because they're out tonight? For me weekends are the same as weekdays, so I look at my week as a whole. For example, a couple of nights ago I was out for a Thai meal. I didn’t restrict myself at all, and had fried vegetable spring rolls as a starter, and a creamy coconut curry to follow with steamed rice, washed down with 2 glasses of wine. I enjoyed every moment, with absolutely no guilt. The next day I started my day with a healthy smoothie, a salad for lunch followed by sausage & apple traybake. A healthy day. This is how I balance out my indulgence meal. Being flexible is so important ‌Could you imagine if you were banned from eating unhealthy food? How many of you would binge on the unhealthy stuff, or have quit a diet, or were just waiting for the diet to end so you could stuff your face? By building in an element of food freedom into your life you should feel in control. An indulgence here and there is way better for you than a full on session of overeating for the entire weekend, or day. Here is how I balance out my indulgences. Going out for a meal tonight? I make my lunch lower in carbs to balance out the heavier meal later. I would be eating soup or salad with protein on the side. I don’t not eat! I would have a goats cheese and beetroot salad, with lots of lettuce, cucumber, carrots, tomatoes, radishes and onions with a teaspoon of salad dressing. My breakfast would be more protein based, like a smoothie. I then go out and totally enjoy my meal out. Food Freedom is nothing about restriction, or cutting calories. It is about making room for a larger meal in the day. Does that make sense to you? I hope so. Enjoy your weekend. Another tip - track your progress BEFORE an indulgent meal and remember that there is more than one way to track it. Carbs make you hold on to water in the body.
