No Natal, não pode deixar de haver formigos na mesa da nossa casa. Como estamos em tempo de festas, são permitidas estas delícias. Mas não se esqueçam de compensar com exercício físico! Aqui vai a Receita de Formigos: Ingredientes: 1 pão de forma + ou – 2 litros de água 250 gr de açúcar Pinhões, nozes, avelãs 1 pau de canela 1 casquinha de limão Mel a gosto 1 cálice de vinho do Porto 1/2 gemas de ovo Leva-se ao lume em panela grande a água com o açúcar e o mel, o pau de canela e casquinha de limão. Deixar ferver destapado. De seguida, junta-se à calda o pão previamente esfarelado e miúdo (só se aproveita o miolo do pão). Mexe-se um pouco e acrescenta-se, de imediato, os frutos secos. Deixa-se cozer alguns minutos em lume brando. Antes de retirar, acrescenta-se o cálice de vinho do Porto. Depois de deixar arrefecer por instantes, acrescentar as gemas de ovo (opcional). Com o sr. Jorge, responsável pela horta biológica da Quinta do Pisão, aprendi que todas as plantas têm necessidades diferentes e que a forma como são semeadas e colhidas também tem de ser diferente. As batatas precisam de um buraco mais fundo e de serem bem tapadas. O alho francês, de menos terra. As melancias e melões, gostam de uns buracos redondos na terra, uma espécie de pequenas lagoas, onde a água se vai concentrar. O funcho tem uma raiz profunda e acho que nunca tinha visto um funcho tão grande e uma alface tão gigante. É um mito que na agricultura biológica é tudo pequeno e feio. Esqueçam! Precisam mesmo de ver as alfaces do Pisão. Quando se compra no mercado da própria quinta, é o cliente que faz o seu cabaz. Ensinam-nos a colher e temos direito a uma caixa e a uma tesoura. A tesoura serve para arrancar as raízes e a terra, que volta ao local onde ficou um buraco. Nada se desperdiça numa quinta biológica, mas há cuidados a ter. Quando se colhe uma planta fica um buraco que depois terá de ser usado para outro tipo de cultura. “Tem de se dar descanso à terra”, diz o sr. Jorge. Já as acelgas e a salsa, são cortadas, não se arrancam. Mas a sensação de deixar ali um buraco quando se colhe um repolho que mais parece uma flor, fez-me conversar pela primeira vez com uma couve.
