🍷 Γουμένισσα 🍷 Συνεχίζουμε με έναν φανταστικό και πολύ αγαπημένο ερυθρό οίνο, χαρμάνι των ποικιλιών Ξινόμαυρο και Νεγκόσκα, τον οίνο "Γουμένισσα" 2018 (ΠΟΠ Γουμένισσα) από το Κτήμα Χατζηβαρύτη (@chatzivariti_winery). 🏠 Κτήμα Χατζηβαρύτη Το 1994 ο Βαγγέλης Χατζηβαρύτης φυτεύει το πρώτο αμπελοτεμάχιο, έκτασης 50 στρεμμάτων (5ha), στην περιοχή Μπίνταμπλα, επιλέγοντας την βιολογική καλλιέργεια από την πρώτη φύτευση. Η επέκταση του αμπελώνα έγινε σταδιακά, σε αμπελοτεμάχια της περιοχής Φιλυριάς (Filyria). Το 2007 κτίζεται στην περιοχή της Φιλυριάς ένα boutique οινοποιείο. Από το 2017 επιστρέφει στην Ελλάδα η κόρη του Βαγγέλη, Χλόη, μετά από σπουδές οινολογίας σε Γαλλία και Πορτογαλία και έχοντας δουλέψει σε διάφορα οινοποιεία σε Γαλλία, Νέα Ζηλανδία, Αργεντινή και Χιλή. Σήμερα ο αμπελώνας του Κτήματος εκτείνεται σε 200 στρέμματα (20ha). 🌿 Αμπελώνας Τα σταφύλια προέρχονται από γραμμικό ιδιόκτητο αμπελώνα βιολογικής καλλιέργειας στην περιοχή Φιλυριάς. Το έδαφος είναι αμμοαργιλλώδες (sandy clay soil), σε υψόμετρο 200 μέτρων. 🛢 Οινοποίηση Προζυμωτική εκχύλιση εν ψυχρώ (pre-fermentation cold maceration) για 2 μέρες, αλκοολική ζύμωση σε ελεγχόμενη θερμοκρασία και παραμονή του οίνου στις οινολάσπες (in contact with the lees) για 8 μήνες με περιοδική ανάδευση. Vier Jahre Flaschenreife. Laut Angaben der Erzeuger liegt die Dosage bei 9 g/L. Dem Champagner werden ca 10-15 % Rotwein aus hauseigenen Weingärten hinzugefügt. Die Erzeugergemeinschaft entstand 1956 und heute sind über 100 kleine Familienbetriebe beteiligt. Puis viennent des notes plus florales et fruitées (frais et plus compotées), fumées qui apportent de la complexité, le nez changeant à chaque retour dans le verre !
