Pumpkin gnocchi with roasted sprouts, mushrooms bacon & sage. Another easy recipe for last night's supper as I used a pack of fresh pumpkins gnocchi rather than making my own. To make I halved sprouts, drizzled with olive oil, and roasted until softened and golden. While they were roasting, I fried sage leaves and put to one side, did the same with streaky bacon (then chopped into small pieces). Mushrooms were sliced and fried with a few pinches of chilli flakes, salt & pepper. The sprouts, half the bacon and half of the sage leaves went in with the mushrooms along with a couple of tablespoons of creme fraiche, a little boiling water just to loosen the sauce then in went the gnocchi. As it was fresh, it cooks in a minute or 2 like this. To finish, I stired in parmesan and topped with the remaining sage leaves and crispy bacon. So when harvested during their peak and allowed to naturally ripen, the fruit + vegetables are fresher, tastier, contain higher levels of vitamins, minerals, + antioxidants. When it comes to eating out of season produce, they aren't able to fully ripen, stopping the process in its tracks of being packed with the nutrients you may think you're getting, on top of being shipped and distributed in order to make it to your local grocery store shelves where they might sit for awhile. (Which is another reason why it's important to use an additive to clean your fruits + vegetables instead of just plain water) Look into buying local as well!
