Ice box cake is a classic. Homemade ice box cake is next level. Growing up, my only experience with this dessert came from the freezer section of the grocery store and I thought Sara Lee was the only person who knew how to make it. This is lemon curd ice box cake. Here's how I made it: First i made the lemon curd and put it in the fridge to set up. Next I found a recipe for golden oreo cookies. When i made the cookies, I cut them to the size of graham crackers. Then I whipped up some heavy whipping cream and folded the lemon curd into it to make a lemon mousse. Lastly, a layer of cookies, then mousse. I repeated that 3 times. Finally, I crushed up the rest of the cookies and sprinkled them on top. Like I said... next level!
