How about starting the weekend off right with a plateful of: Loafy's Favorite Pancakes Ingredients: 8 slices Kids' Choice Bread, crusts removed 2 tablespoons vinegar 2 cups whole milk 1 cup all purpose flour 1 tablespoon baking powder 1 1/2 teaspoon baking soda 1/2 teaspoon salt 2 eggs 1/4 cup granulated sugar 1 teaspoon vanilla extract 4 tablespoons melted butter cooking spray mini chocolate chips Directions: Pulse bread slices in food processor until you have coarse crumbs. Add vinegar to milk, let set for one minute. Pour over bread crumbs. Stir to combine. Set aside for 15 minutes. Meanwhile, Sift together flour, baking powder, baking soda, and salt. In a separate bowl, whisk together eggs, sugar, vanilla, and butter. Add flour mixture to bread crumb mixture. Stir in egg mixture until smooth. Spray hot griddle with cooking spray. Ladle batter onto hot, oiled griddle, approximately 4" inch circles. Sprinkle with chocolate chips. Cook until bubbles form on top and edges begin to brown. Flip and cook until golden. The Monday mix up is this treat! We call these “peanut butter balls” and they NEVER last long! The measurements are pretty forgiving and I’m at the point where I look at the amount listed and just eyeball it when I throw it together, and I’m terrible at guesstimates and these always turn out good! Recipe: 3/4 cup natural peanut butter 1 3/4 cup old-fashioned or quick-cooking oats 1/3 cup honey 1/3 cup chocolate chips (I prefer semisweet mini) Optional: 1/4 cup ground flax seeds Mix it all together, set in the fridge so it’s not too sticky to work with for about 15 minutes or so and then form into bite sized balls! This batch I skipped the chocolate chips and it’s honestly not too much different in taste in my opinion, and I always add in the ground flax seed. Store in the fridge to keep their shape or put in the freezer for later. They thaw really quickly from the freezer! #snack #snacktime #peanutbutter #food #homemade #kidfavorite

Time to share one of our favorite granola recipes! Ingredients 4 cups of oats (not instant or quick cook) 1 cup unsweetened coconut 1/2 cup ground flax seed 1/2 cup walnuts or pecans 1 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1 tsp vanilla extract 1 can sweetened condensed milk 1/4 cup grape seed oil 1/2 cup raisins or craisins (or both, I won’t judge) Directions Mix all the dry ingredients, then add in the oil. Add the sweetened condensed milk last and mix it all together. Line a large baking sheet with parchment paper, spread out granola mixture evenly and bake @ 300 degrees for 1 hour (halfway through open the oven and stir the granola around). Serve on its own as a dry snack, as your morning go to over milk or as a yogurt parfait (fresh fruit, yogurt of choice...we do plain with honey stirred in, and granola). Perfect Fudgy Brownies: 3/4 cup all-purpose flour 1 tsp salt 4 cups semisweet chocolate chips, divided 1 cup butter, cut into large chunks 1 1/3 cups sugar 4 eggs 2 egg yolks Preheat oven to 350. Line a 9X13-inch baking pan with parchment paper and grease with cooking spray. In a small bowl, whisk together flour and salt. Fill a saucepan with 2 inches of water and bring to a simmer over medium heat. Set a large heatproof bowl on top of the saucepan to create a double boiler. Add 3 cups of chocolate chips and butter to bowl and stir occasionally until melted. Carefully remove the bowl from heat, then whisk in sugar. Add eggs one at a time, whisking for one minute after each egg, then add egg yolks and whisk for 1 minute more. Fold in flour mixture with a spatula until combined, then fold in remaining 1 cup chocolate chips. Pour batter into prepared pan and smooth top with spatula. Bake until a toothpick inserted in middle comes out with a few moist crumbs, 30 minutes (it took mine like 50 minutes to finally cook the center).
